You can actually set the drones to target a specific plort like mosaic and they won’t sell the gold only the specified plort

I don’t know if you’ve figured this out yet, but you can set drones to pick up specific food or plorts, so for your gold not to be sold, set the drone to collect your most popular non-gold plort. This means it would only pick up those, however the gold will stay.
