    fun fact: in the anime's original japanese dialogue, spike and jet actually used the chinese phrase "qing jiao rou si" talking about the dish, so the third way with open flame it the way to go!

      That’s probably because even in Japanese we use the Chinese name for the dish. It even uses the same characters even though they aren’t ones commonly used in Japanese.

    Having been a fan of Chinese Cooking Demystified since they got started, I recognize a lot of the techniques in your grandfather's recipe, like passing the beef through oil. Finding out about that was a real game changer in my stir fry - it explained all the differences between my own cooking and what I remembered from the Cantonese restaurants I went to in high school.

    I love how this dish went completely full circle: the original Chinese dish (青椒肉絲) inspired the Japanese version of the same dish (チンジャオロース, made with thin strips of beef, a type of bell pepper called ピーマン, and bamboo shoots), which inspired the meatless version in the anime, which got translated into English as "bell peppers and beef" losing the connection to the Chinese dish, but despite that inspiring Alvin to make the original Chinese dish!

      Yea, you can see the bamboo shoots in the anime! And it's wild the original peppers are super spicy, there's almost nothing notable about ピーマン except a bit of bitterness. (I've only had the Japanese version, not the original Chinese 青椒肉絲)

      I've been a fan of Cowboy Bebop for decades and never made this connection.
      Just for some added Chinese context, 青椒肉丝 (qing jiao rou si) is pretty dang cheap. It's usually pork, not beef, and you can still get a decent dish of it for 18 RMB (around 2.50) even in Shanghai. I've found it for even cheaper but it tends to be not great for any lower price.
      The more flavorful version is 鱼香肉丝 (yu xiang rou si) and while still being fairly cheap is a lot tastier!
      This is gonna be a great series! Think about trying the Mapo Tofu from Cooking Master Boy (中华小当家)

      @@dask7428 that's the point though, it's meant to be super crispy and savory. The fact that it's flank steak and it's also so thinly sliced means it won't be tough but actually quite satisfyingly crunchy

    I love this! Very reminiscent of the earlier Binging with Babish. I love Cowboy Bebob, bell peppers, beef, mushrooms, and old family recipes. It's an absolute win. And this seems easy enough for me to try.

    Actually mushrooms and green peepers are a great combination anyway. I sometimes fry them up together just in a bit of sunflower oil with a bit of salt and it's delicious. Regular boring standard mushrooms.

    you know, as someone who has an induction stove, I always assumed that the water at the bottom of my pan when cooking meat was always due to meat that didn't fully thaw (we often buy meat in bulk and freeze any that's gonna go off later in the week or the next) but now I have another culprit

      wrong though- induction is the hottest, most powerful outside a restaurant gas flame
      it is a to cold pan and or to much produce in the pan...

      The water's from overcrowding the pan, not the lack of heat. The water can't evaporate because it's getting trapped under the meat. He should've cooked it in batches if he wanted caramelisation without overcooking.

      For what it’s worth, it’s not so much the induction as it is the wok. Woks are designed to move a lot which doesn’t do all that great when it needs to be in contact with a surface to get hot.
      Like you would be able to get an excellent sear on induction with something like a stainless skillet or cast iron pan. Woks are one of the few exceptions where I think gas (especially a high heat outdoor burner) outperforms induction.

    At some point, you have to do the bento box from Kimetsu no Yaiba: Mugen Train or the Rin Okumura special from the Blue Exorcist movie

      Blue Exorcist in general is a goldmine for food ideas. A little ways in, the manga volumes start showing off what individual characters like having for lunch on the back covers.

    I'm a little late to the party but I just wanted to say this is one of many videos you have posted that solidified my love for cooking. There's something special about taking simple recipes from tv shows or online and adding your own spin onto them, then using the upgraded dish to compare and contrast with traditional recipes so you can change them to your liking; And there's something even more special about sharing said food with your friends. As an 18 year old aspiring chef and culinary instructor it makes me happy to see so many people in this field with so many different methods and cooking techniques/ideas, especially when they use ingredients I've never even heard of before. I'll definitely be using longhorn peppers in my next stir fry, if I can even find them around here 😂

    Man, that last dish looks absolutely incredible!
    I'm the proud owner of several woks and an outdoor wok burner like a jet engine, and I've very much given up on cooking beef or any other protein to a specific doneness, because everything ends up very done no matter what. Now I lean on chemical tenderization: slicing meat thin and quick-marinading with just a touch of baking soda does a great job.

      A lot of American Chinese food is at least based on an authentic dish, for example dragon & phoenix. The westernized version typically uses chicken and shrimp, whereas the traditional preparation is actually duck and eel.
