All the Chinese dishes i learnt off Alex wilkie in lockdown all the indian dishes i learnt from the curry kid and als kitchen ,bread from foodgeek foraging from uk wildcrafts, growing from digwell green fingers. Made this last night Chef. Tasted outstanding and we even used a cheap slab of stewing steak. The trick is definitely bicarb for tenderising and steaming the veg. Thanks for the recipe on this outstanding flavourful dish. Great work.
We make this often using Chinese spices and sesame oil and served with rice. Southern food in the coastal USA uses rice like potatoes. We had rice plantations. You can still see the old fields if you drive north from Florida up to NC on the old coastal hwy.
Gotta say it Rik but this is top dish and explained with no fanfare. I do like mine with noodles though but both work. Your cooking methods have so many hidden tips all you uploads are worth watching twice and just for the detail.
I made this today, swapped out hoi sin for chilli flakes for some spice and it was very tasty. The corn flower gives it a nice edge and the sesame for the shine. Lush.
Rik, I just want to let you know that I used your baking soda trick on a ribeye steak yesterday, and I was thrilled with the results! I've never had any luck cooking steak because it always came out tough no matter what I did, until yesterday. I like my steak medium well, and it was so tender I couldn't believe it. ☺️

Another winner! Love ginger on many things, sweet or savoury; candied ginger makes a good snack as well in baking. Do you have a good recipe for M&S Jamaica Ginger Cake? A lady at work, from Wapping, had a wonderful recipe but her lips were sealed. It had several types of ginger, was rich and moist, lovely with butter.

WHERE do you find your beef??? It looks to have been aged a good twenty-eight days at least, and the best I can buy from my local butcher is fourteen days IF they have some in stock! Good quality meat is really hard to find where I live (not in the UK).
