    Made this last night. Beautiful result. Bonus: pull the skin off the chicken thighs, season them a bit, lay onto a sheet pan, and roast until crisp. The best!

    Just cooked 16 chicken thighs for this curry. My wife and I love it and the kids are coming over tomorrow with their other halves . So a good meal will be enjoyed by all.

    As a general question, is there are reason not to put some vegetables in the curry? Any suggestions of what would go best? Capsicum comes to mind but not sure what else would go with it.

    This looks absolutely delicious.....I believe I'm going to give this a try....BUT....I think instead of searing the chicken in a frying pan, I may sear it on a BBQ and put some wood chips on the grill before I put the chicken on and give it a bit of smoke too.....I will also make a batch as shown in the video and compare.....should be interesting.

    I tried this and it was delicious, for me it was more like a home made Indian one and brings back memories of my many trips to India, particularly the restaurants between Delhi and Ludhiana. Great work Chetna, I will also try your Hyderabadi one.

    Question on anther one of your curry’s …… is fenugreek (fresh) a seasonal produce as im having difficulties locating it even from my Asian specialists ? You say you can use spinach,,,could you add ground fenugreek to it

    Question, does it sacrifice any flavor if I were to make this with the chicken skins on. Nine times out of 10 I take the skins off. But every so often I like to leave it on because it feels like a waste, and sometimes in certain recipes it can be an added treat. And for those of us who make curry’s the day before do you have any preferred method for reheating and how long? I ask because I am absolutely reluctant to use a microwave for this specific purpose.

    Make this all the time now mainly because all ingredients are easily available, and it's really delicious. I add more water as we prefer a bit more sauce.

    Yes, I also hate to clean that spitting grease off my stove after pan-frying. But that's the only way to get a nice colour on meat or fish

    I have a Patak Madras curry jar in the fridge at all time, lol. Speaking of Patak's, what are your 3 favourite Patak pickles in ranked order. And can you re-create at least 1 or 2 pickles on your channel?

      Same here, I'm too lazy to put together 15 ingredients. Patak sauces are delicious and my absolute favorites for when I am in a hurry. Last week my daughter showed up when I was about ready to eat, I just added a few ingredients and Korma sauce and had a delicious meal for two. Hate pickles but I have 4 different Patak sauces.

      But the best commercial sauces I've ever tasted are by the Curry Sauce Company, who used to exhibit on the county show circuit.
      Absolutely stunning. But VERY expensive.

      @@carmenortiz5294 I can definitely recommend Brinjal/Eggplant pickle as a starter. It's a dish improver so just add a little. Will even improve boring super noodles. It's amazing. I cannot eat instant noodles without adding a pickle now.
      Then if you like it, migrate to Mango, then Lime and finally chillies. I think Jamie Oliver likes their mango pickle.
      You can also make Indian-style pickles at home but the youtube recipes from India are very hit and miss. We need a British cook to sort this pickle mess out.

      @@Natasha26 Nice suggestion, if I actually liked pickles, but I don't. The closest to pickles that I get is kimchi that I make myself. I'm fine with Patak, actually decided to open a jar of their tikka masala sauce after you mentioned Patak.

    It does look delicious though in Madras (Chenai) they would not use cinnamon or cardamom, more commonly used in the north.

    So. You cooked it. Put it in a lovely bowl. Then added it to another lovely bowl to eat! You must love washing dishes 🤣. But the food looks gorgeous. Subscribed.

    Brown the chicken. Remove to a plate.
    Heat oil. Add cinnamon, cardamom and cumin seeds.
    When sizzling add onion and cook on medium heat till dark golden.
    Add ginger and garlic. Cook till rawness gone.
    Add tomato paste and cook a minute or so.
    Add spices. Cook a few seconds.
    Add water. Mix to make a sauce. When ready add chicken and stir to coat.
    Cook on low to medium heat till chicken is cooked through.

      Well, I've just made it with 1kg of small boneless chicken pieces. Seems like too much to me because I like quite a lot of sauce. Will try about 750g next time.
