with regards to weight if it's 600lb hanging carcass weight then general rule of thumb is you loose half it's weight when skinning and gutting and half again when boning out and cutting into steaks so 600lbs hanging means around 1200lb in the field and 300lb in the freezer

Fun fact: if you can't use all of it, you can use all of it. If you don't think you can make the meat last, or eat it in time, you can make pemmican. Cut the meat into VERY thin strips. Bake it in your oven at the lowest temperature it can go for until the meat is BLACK, not because it is burnt, but because it is so completely dehydrated. You do NOT want to burn it. If you want to take the time, and have the sun to do it, you can bake it out in the sun on jerky racks. Once it is completely dehydrated, you can pummel it into meat crumbs and mix it in with melted fat. Add berries or seasonings to it and wrap it tight in a bag or pack it tight into a container. Voila. Ultimate survival protein.
Amerigin, THANKS! We dried our moose jerky over the woodstove until potato chip dry. Used Cavenders all purpose Greek seasoning liberally sprinkled on the thinly sliced strips & dried it til crunchy dry. Had NO grease or fat thou. Sealed in Gallon jars it lasts forever. Dogs got the gristle, tendons & fat streaks. HAD to be supertrimmed to ONLY lean meat or it would go rancid in the jars. Wife would grind it to powder, add equal volume of corn meal & just a tad of bacon grease to make food bars. Shed press the mix out on a cookie sheet 1/4 inch thick & oven bake it VERY LOW just to warm & liquify the bacon grease into the meat/ corn. Meat was dried with spiced salt & that was plenty. Lil chili powder or powdered cayanne for the " spicy" batches. Shed cut the flat cakes into 1 inch squares & 2-3 was a meal.
bison tacos : 1 to 2# of meat choice of taco seasoning, dash to taste of cajun , cavenders , lawerys ss , garlic powder , chili powder , paprika italian seasonings on medium high heat till browned and cooked trough set aside in separate 10 " skillet lightly coat with oil of choice at medium hi heat place soft corn tortilla in the the oil about 30 seconds to a minute flip gently repeat till disired quantity is met place in paper Towell covered plate to absorb excess grease in a gently lay over 1/2 over it self to give it shape apply shredded cheese , salsa and other fix'ns to taste plate, serve and enjoy.

Best to figure all the expenses then you can estimate the $ per lb. Locally here in SW WI, we can buy bison for between $10 and $14/lb. Today. With bidenflation, it might be $20 to $30/lb or more tomorrow 😡

Heat skillet to medium heat. Place them in the skillet, sear for 5 minutes, then smash each one with the spatula and sear 2 minutes more, flip, add smoked cheddar cheese and try 4 minutes on the other side. If it's browned good, and cheese is melted (whoops, add lid after cheese)rest 3 minutes, add your favorite bacon and BBQ sauce and enjoy
I got an old 30-06 and 12 gauge I got off my grandfather both in great condition for their age. And they put a lot of meat in our freezer over the years. Congratulations on your great hunt. You should come up here to Canada we have lots of big game.

I’ve been told when hunters have deer processed it’s normal to loose more then half the weight but when I field dress them myself I only loose 1/3 or the weight that just shows how much the butcher gets in there cut

I shoting a zeroed in marlin 22mag with a older bushnel scope in cold weather ( the temperature was about 23 degrees Fahrenheit) and missed a grouse and a snowshoe hare.i was wondering if you have had a experience where cold or damp weather had effect on your optics.I appreciate the great videos that always come from your channel thank you for sharing your knowledge.

This hunting season , my group harvested 2 bull moose. 1 rack was 42 inch the other was 56. The 4 families involved got approximately 300lbs of meat each. We do our own butchering and remove all the bones, leaving clean meat.

I eat bison burgers all the time bought at my local co-op, raised in Minn. and / or Wisconsin. I was just also out in Colorado but not for anything like you were doing. I was on the front range from Ft. Collins then down to Colorado Springs. Also, I did see some pronghorns on my way to Ft. Collins.

In going across the state of South Dakota to vist my brothers-always stopped at Al's Oasis in Chamberlain,SD for a Buffalo burger and their Cinnamin Ice Cream!!Was a real treat!!
An easy "thumb rule" to keep in mind is that regardless of the size of the animal, the amount of meat available to be harvested is going to be in the vicinity of 60% of total animal weight. 100# animal? Expect somewhere in the vicinity of 60# harvested. Granted, this can vary a bit, but as a thumb rule, that's good for an estimate (this is for "hanging weight") which includes the bones and tallow.
Next time you have a big animal butchered. Have the butcher cut some of the tougher leg cuts (muscle groups) into less than 1/2 inch cuts. Smack those with a meat mallet, and turn them into schnitzels. I do this with my koedoe, gemsbuck and Eland.
I have read that the average white tailed deer produces about 60 pounds of boneless meat so that one bison yielded roughly the same amount as 5 to 6 deer. I know I just paid the most I ever have for a whitetail this year at $100 for a straight cut with no extra snacks and jerky. Was the processing cost done by the pound or one set price? If you don't mind telling. I am curious if it was way less than it would be for that much venison to be done at a processor. I hope my question makes sense to you. In other words was it under $500 to $600 for the processing?

Regular chain saw works fine, just put wesson oil in the chain oiler tank. Weve butchered moose/ bear for decades w the same saw. Being Alaska we just leave it outside & bring it in just long enough thaw out the oil before butchering & then hang it back outside to refreeze. Only need to clean it in the springtime thaw before the meat/ grease rots.

I'd be eating bison every day with chicken torpedoes for breakfast and maybe a vegetable one other meal for sure. Then I'd have to get another one for a refill.
Makes one wonder how much jerky the indians got w/o refrigeration. We got 50 lbs of moose meat (fresh) into a 1 gallon jar cut thin, spice salted & dried potato chip dry. Made the HUGE mistake of 4 of us eating the jar in 1 night like chips while watching an exciting movie. We all looked pregnant & couldnt eat at all for 3 days afterwards as it slowly processed through our systems. . Was NOT fun!!! Lesson learned, 1 handful is PLENTY!! Made fabulous trapline food when out for days on the snowshoes. 1 guart baggie flattened to an inch thick to fit into a snowsuit pocket would last 5-7 days.

I kind of feel sorry for the bullet. I mean here is a tiny piece of lead, traveling through the air, minding its own business when all of the sudden it slams into a giant immovable object. For a brief moment it's discombobulated with its world turned upside down. I really can't blame the bullet for getting so bent out of shape. R.I.P. little buddy.

At some point when times get hard enough with the economic suicide our governments are perpetuating there will definitely be people selling wild game meat to friends and family.

bison is a dense meat, denser then beef, on steaks and roasts a smaller amount will fill you up fast.
In my experience it should keep the family in good eats for a good minute. I am happy for you and wish I could have been there. Videos don't quite convey the same excitement and thrill. Great job and best wishes.

Bought an electric chainsaw ,no oil! to split them after skinning.easiest way to quarter a Buffalo I know of!
Regular chain saw works fine, just put wesson oil in the chain oiler tank. Weve butchered moose/ bear for decades w the same saw. Being Alaska we just leave it outside & bring it in just long enough thaw out the oil before butchering & then hang it back outside to refreeze. Only need to clean it in the springtime thaw before the meat/ grease rots.
Cook it all, even the burgers, no more than medium. Anything more and it's drier than a popcorn fart!!

Makes one wonder how much jerky the indians got w/o refrigeration. We got 50 lbs of moose meat (fresh) into a 1 gallon jar cut thin, spice salted & dried potato chip dry. Made the HUGE mistake of 4 of us eating the jar in 1 night like chips while watching an exciting movie. We all looked pregnant & couldnt eat at all for 3 days afterwards as it slowly processed through our systems. . Was NOT fun!!! Lesson learned, 1 handful is PLENTY!! Made fabulous trapline food when out for days on the snowshoes. 1 guart baggie flattened to an inch thick to fit into a snowsuit pocket would last 5-7 days.

I kind of feel sorry for the bullet. I mean here is a tiny piece of lead, traveling through the air, minding its own business when all of the sudden it slams into a giant immovable object. For a brief moment it's discombobulated with its world turned upside down. I really can't blame the bullet for getting so bent out of shape. R.I.P. little buddy.
