Eggplant Dip - Mutabbal - متبل
It is very popular dish in many Arab counties.
Tahini paste and eggplant are two main ingredients of the dish.
There are few ways to cook eggplant for making mutabbal.
You can bake it in the oven or roast the eggplant on stove-top directly, or bbq the eggplant, this will bring a smoky flavor to the dish.
Ingredients
1 large eggplant
1 garlic clove
2-3 tbsp tahini paste
2 tbsp. laban (plain yogurt)
2-3 tbsp. lemon juice
salt to taste
2 tbsp olive oil
To garnish you can use parsley, mint, sumac and pomegranate seeds, nuts ect.
Bake the eggplant, let it rest for 10 mins and peel the skin easily.
If there is a seeds inside, remove it, because they will give bitterness. Put the eggplant in a bowl. Mash it or cut it. Add garlic, salt, tahini, lemon, and plain yogurt. Mix all ingredients together until well combined. Taste to adjust salt and lemon.
Spread the dip in serving plate, add the olive oil and garnish with parsley or mint, pinch of sumac. Serve warm or cold with flat arabic bread (pita) .
