I agree with you that the price is justified as it's the experience that counts, however no matter how posh the restaurant is, I still expect a decent sized meal, big enough to make me feel full and satisfied afterwards. The size of that meal would not. I don't care how well it's cooked or how "credible" the source is. You don't need the best of the best for it to taste good. And honestly, I'd much rather have a middle of the range 50/60$ meal that tastes good, is a decent size and in a really nice restaurant than eat at somewhere this posh and fancy. I just don't see the appeal. To me, it gets to a point where luxury and experience just isn't worth it. I personally wouldn't go to that restaurant even if the meal was 30$ instead of 120. That's just me.
Quality vs. quantity. And American sizes have quadrupled in the past 30 years, so the size they're getting as an entree is more suitable when you have a full meal: amuse bouche, appetizer, entree, pallet cleanser, and dessert.
I didn't read the thing, but I sat here wondering why that piece of fish was so big. I think farm-raised is gross, and has a more fatty taste than wild. Their fish, in my opinion, would be good if it was wild caught salmon.
That's because its like our normal meat like chicken and beef. Farm-raised animals are fed things intentially made to fatten them up and to make them taste "better."
