It's very easy to look up the restaurant and see it listed as such. Non-restaurant publications do this all the time with fancy restaurants, they'll feature a single course that comes on a tasting menu and then say that individual course costs as much as the full tasting.

Does it matter? Before they were in the grocery store, they were in a crate on a truck that probably doesn't get cleaned thoroughly much. Before that it was in another truck driving through dusty farm fields. Before that it was on a plant of which some of them were likely touching the dirt. When they reach your kitchen, somewhere between eating it and taking it out of the bag, you will have washed them, and then cooked them with high amounts of heat, killing off all the bacteria that was present on the veggie.

Recipe for the homemade salmon
Ingredients (for potatoes):
1lb. of small potatoes (cleaned)
2 tbsp. of olive oil
1/2 tbsp. of salt and pepper
1 tbsp. of rosemary
1 tbsp. of minced garlic
1. Preheat oven to 350F/180C
2. Chop the small potatoes in half
3. Spread potatoes on a baking pan
4. Spread the olive oil, salt and pepper, rosemary, and minced garlic on top of the small potatoes
5. Put in the oven for 20 minutes
Ingredients (for sauce):
1 cup of soy sauce
1 tbsp. of ginger
2 tbsp. of minced garlic
2 tbsp. of honey
2 tbsp. of lemon juice
1/2 tsp. of pepper
1 tsp. of salt
1. Mix all ingredients together in a bowl
Complete set-up ingredients:
2 fillets of salmon
1/2 lbs. of green beans (cleaned)
Your cooked small potatoes
Your sauce
1. Preheat oven to 350F/180C
2. Separate small potatoes to each side of the baking pan
3. Add the two fillets of salmon in the middle of pan
4. Spread sauce on both sides of each fillet of salmon
5. Add green beans to the sides of the salmon
6. Put in oven for 12 minutes
7. After the 12 minutes take out of the oven and enjoy your homemade salmon :P

This recipe was awesome for everything except 2 things (or maybe i missed something)
1) 1 cup of soy sauce is overkill. You probably only need 1/2 cup. The salmon would be drenched and drowned in a bowl of sauce if you used it all.
2) The green beans needed more than just 12 minutes on 350 degrees to cook properly through. I would probably throw the green beans in with the potatoes in the beginning.

I made it and it was really yum, but when you make the sauce (unless you are going to use it again), make a smaller version because you hardly use any of it.
Thanks for the suggestion -- but I'm using most of it to marinate /glaze chicken, as my husband won't eat salmon. :)
The only thing that made this fancy resto dish expensive was the truffles in the sauce, this is ridiculous! Guys just come to europe you ll get pasta with truffles for like 14€!!

Any of the meatier fish varieties pair nicely with reds. It also has to do with what else is served on the dish, and autumn vegetables are suited to darker vintages. You can save the white Franzia for your fish sticks.
It's not about the color, it's about the boldness. You wouldn't pair the salmon with a cab generally but a soft light red even with some bubbles goes really well with fish! Pinot noir is a wine that goes with everything, for example.

I agree with you that the price is justified as it's the experience that counts, however no matter how posh the restaurant is, I still expect a decent sized meal, big enough to make me feel full and satisfied afterwards. The size of that meal would not. I don't care how well it's cooked or how "credible" the source is. You don't need the best of the best for it to taste good. And honestly, I'd much rather have a middle of the range 50/60$ meal that tastes good, is a decent size and in a really nice restaurant than eat at somewhere this posh and fancy. I just don't see the appeal. To me, it gets to a point where luxury and experience just isn't worth it. I personally wouldn't go to that restaurant even if the meal was 30$ instead of 120. That's just me.
Quality vs. quantity. And American sizes have quadrupled in the past 30 years, so the size they're getting as an entree is more suitable when you have a full meal: amuse bouche, appetizer, entree, pallet cleanser, and dessert.

I didn't read the thing, but I sat here wondering why that piece of fish was so big. I think farm-raised is gross, and has a more fatty taste than wild. Their fish, in my opinion, would be good if it was wild caught salmon.
That's because its like our normal meat like chicken and beef. Farm-raised animals are fed things intentially made to fatten them up and to make them taste "better."

The idea that there are "rules" for food and wine pairing is wrong. It's more of a suggestion. There are several red wines that pair well with salmon but there are many that wouldn't work all that well.

100% Not worth going out for expensive fish if you know Native Americans since the salmon is always great.
(Except of course certain ways of how you use your salmon are not as good.Baked is clearly best)
