ned you can buy black truffle salt! it sells for about $17 a container but it's VERY well seasoned with black truffle flakes and can last for months! Put it on your mac and cheese, put it on your vegetables, you can really class up any meal!

Did you not watch the whole video? They started with a breast each (7:20), then had the soup (containing the thighs) and finished with a drumstick each (8:30-8:50).
You need to stuff the chicken (onions, bread cut into small pieces, sage, salt pepper) aka Stuffing. This adds flavour to the Chicken also the 'stuffing' is a Key element to Roast chicken Dinner. You also need Gravy (night in) and Bread sauce is good. Always try and buy 'free range'.
There really are no 'key' elements to roast, more individual preference. Brining (dry salt coat or salt bath) before hand, gives the bird a needed salt kick. Add in marinading, also beforehand. These will add in complex flavors to your bird that you'll want to slowly roast into. Personally, I'm more a fan of butterflying a chicken as opposed to cooking it whole and together. But each is to their own. Stuffing in chicken (or any whole bird) cooks unevenly and at a different temperature. This is a very traditional way to cook. I know older generation people (and just a few friends) who do enjoy it this way, however I have never enjoyed this and it's even gone so far as to put me off of stuffing. I'd actively abhor the texture of overly mushy wet stuffing. Stuffing should be cooked in a pan outside of the bird with broth made from the spine/organs/neck of the bird. This brings BACK that meaty flavor to the stuffing, tying it all together. Because Stuffing in and of itself can be considered a "casserole" dish, keeping it separate lets you cook till it's not a soggy mess, but a cohesive matter with crispy bits on top and soft insides. :) These are things I follow when making my roast dinners. So far, everything has been more than well received.
MissJinklebells I totally agree with cooking the stuffing outside of the bird to get crispy bits. I did a cooking class where the teacher put the stuffing in muffin tins so everyone gets their own perfect stuffing portion with crispy bits. Perfection!
MissJinklebells also, yes, butterflying the bird is a great idea. I also would like to try the idea of removing the Maryland (leg and thigh) from the carcass, and roasting the remainder or crown separately so both get their optimal cook times. More fiddly, but it has great results.

Just run your fingers under the skin till you can stuff it with onions and peppers and spices under and on top of the skin then roasting it makes incredibly tasty crispy skin and the chicken will atleast taste seasoned if you let it rest an hr with garlic under the skin and just salt and pepper don’t have to go all fancy like I usually would xD also can use the juices of the chicken to make a gravy out of the roasting pan

Stuffing can have salmonella because the juices soak into the bread and don't cook fully
The key to our home roast is air dry overnight the skin. I normal just dump half a lemon, herb and garlic inside of chicken.
