My grandmother made this when I was 4 years old. It's been my favorite ever since. She told me when she made it and was visiting that I got up in the middle of the night, climb on the counter and ate the whole pie. She said she was so thrilled that I liked it. LOL I was surprised to see how many different youtube videos there are making this pie. The ingredients vary some between them. I seen one were they only use 1 1/2 cups of milk, some use 1 1/2 cups of sugar, some 2 cups and I seen one that uses 2 1/2 cups. The one my grandmother made used: 3 tbl spoons cocoa 3 tbl spoons flour 2 cups of sugar. dash of salt 1 tsp vanilla 3 egg yolks 1 stick of butter The way she made it was she put all the dry ingredients in with the milk and stirred until it came to a boil. Then she would use that to temper the egg yolks then add it to the mix. It always took a LONG time for the pudding to get thick. About 20 to 30 minutes of constant stirring. Then one day I decided to add 1 whole egg with the 3 egg yolks and 3 tbl spoons of corn starch and mix it into a paste. Then temper that with the hot milk mixture and add it to the pan. It would almost instantly get thick. No more stirring for 20 to 30 minutes. Usually about 3 to 5 minutes and it was really thick. I use at least 5 egg whites to piled on a thick layer of meringue.

Momma was from Texas. Daddy had German roots, in Wisconsin, where his relatives had settled in the 1800’s. It was hard to know which family some ethnic foods came from, as they were more often mixed to wind up with a tasty outcome! Ham hocks were used in both.

This is same recipe as my Mama's and, Folks, this is sooooooo good. My nephew's wife tried to make and didn't turn out as good as Mama's. My nephew told her it was good, but just not like Grandma's, guess she just didn't stir it like Grandma did!!!!!!! Let's just face it, if Mama was a good cook, nothing compares!!!!! This is almost like a creamy fudge pie. Think y'all will really like it. I like a spoonful of hot pudding over crust of cornbread. I saw y'alls eyes rolling, but try it. Of course I'm old, so may be a generation thing!!!!
