    Chocolate Pie Recipe:
    1 DEEP DISH PIE CRUST
    Chocolate Filling Ingredients:
    1 cup SUGAR
    2½ cups MILK
    1 oz. UNSWEETENED CHOCOLATE (shaved)
    3 EGG yolks (reserve the egg whites for the meringue)
    ½ tsp SALT
    5 Tbsp CORNSTARCH
    ½ tsp VANILLA EXTRACT
    ½ tsp ALMOND EXTRACT
    Meringue Ingredients:
    2 Tbsp SUGAR
    1 Tbsp CORNSTARCH
    ½ cup WATER
    3 EGG WHITES
    ¼ tsp CREAM OF TARTAR
    then another 4 Tbsp SUGAR
    Make your own pie crust from scratch, or to make the recipe super easy, just bake up a pre-made frozen pie crust.
    Firstly, bake the crust and have it cooled and ready before beginning to make the chocolate pie filling.
    Chocolate Pie Filling:
    In a saucepan, add the sugar, cornstarch, salt, and shaved chocolate.
    On medium heat, gradually stir milk into the saucepan and continue stirring 15-20 minutes until the chocolate is melted and the mixture thickens and begins to bubble.
    Once bubbling, set a timer for 1 minute and stir as the chocolate mixture simmers.
    Remove the saucepan from the heat.
    Crack 3 eggs and separate the yolks from the whites into separate bowls (set the whites aside to use with the meringue topping).
    Temper the egg yolks by slowly spooning 4-5 Tbsp of the heated, thickened chocolate mixture in with the yolks, stirring constantly so as not to cook the eggs.
    Once the yolks are tempered stir the egg yolk/chocolate mixture back into the saucepan with the heated filling.
    Return the saucepan to the stove and bring the filling back to a simmer, and cook for 1 final minute, stirring all the while.
    Remove saucepan from the stove and stir in vanilla and almond extract.
    Now pour the chocolate filling into the pre-baked pie shell and set pie aside to cool.
    Meringue Topping:
    In a small saucepan add 1 Tbsp of cornstarch, 2 Tbsp sugar, and ½ cup water.
    Mix the three ingredients well and heat over medium heat, stirring until the mixture thickens and clears slightly from milky to opaque.
    Set sauce pan aside in a pan of water to cool.
    In a mixing bowl add the egg whites and cream of tartar.
    Beat 20-30 seconds until frothy.
    Add 2 Tbsp of sugar into the frothy mix and then beat for another 10 seconds.
    Add 2 more Tbsp of sugar and continue beating the mixture until it thickens and peaks begin to form.
    Now add the cooled, opaque mix of sugar and cornstarch into the meringue and continue to beat.
    Beat until nice, stiff peaks form.
    Take a spatula and spread the meringue evenly over the cooled chocolate pie filling. Cover the filling completely, overlapping slightly onto the edges of the pie crust.
    Lightly chop the top of the meringue to form peaks on top of the pie.
    Slide the pie into an oven preheated to 400 degrees F and bake meringue for 10-12 minutes, or until the top of the top of the meringue shows a nice color.
    Remove the pie from the oven and allow to cool completely before slicing. This will take several hours!
    When cooled, store pie in the refrigerator beneath a pie dome, do not wrap meringue in plastic wrap or foil.

      Hi Chef Buck,
      I tried to make this Chocolate Pie, yesterday, I was so looking forward to tasting it. Problem is, the chocolate filling had not set solid as it should. I am sure I had followed the video properly, but can't think what I did wrong? It does taste really good though. Can you help please?

    Now isn't she the cutest thing ever. I lost my mom in 1997 and I sure wished I had paid more attention to her cooking. Learn all you can from her while she's still you. You won't regret it years down the road.

      Watching this bring tears to my eyes. My mom passed in 2020 from cancer. I miss her everyday but I miss our phone calls with me asking her how to make a certain meal. Enjoy the time with family as much as you can.

      Right? I watched my grandma and great grandma make pie, and they were amazing. Both of them worked in my great grandfather's bakery, and they never measured. To make pie crust, both of them "measured" the flour by the fistful and the cornstarch by the spoonful and salt by the sprinkle. Perfect every time. The secret to great pie, my great grandma always said, was to use lard in the crust. Which is what I do. But I measure everything. LOL.

      I was thinking that same thing. My Mom passed away in '98 and boy could she cook and bake and sew. Her love of cooking rubbed off on me but not baking. Too many exact measurements for me and I don't have the patience but I sure do miss her desserts and cookies.

    My Aunt and Grandmother loved to bake and cook, unfortunately I lost them both at an early age.

    This lady knows what shes doing! And she is the cutest thing ever! I lost my grandmas recipe for this and this is the closest thing to it if not exact! Im so excited to make it again! It never lasts more than a day, its so so good! I have so much respect for older people.       I really miss my Mom and her awesome baking. My Mom made pies a little differently than most directions say today, she didn’t
      temper her eggs, she mixed the sugar and flour together then added in the egg yolks and added the milk and chocolate, and everything heated up
      together. The only pie I’ve ever flubbed up was when I tried tempering the eggs. After that, I have stuck with my Mom’s tried and true. This Momma’s meringue looked awesome, I’ve used a similar recipe using 4 egg whites, I’d say my meringue was 8-9 inches high in the center!
      It looked beautiful going into the oven, but it didn’t retain the height, and I felt it was grainy. One last thing, when I lived where there was a
      Marie Calendar’s restaurant, I always ordered the German Chocolate pie, I’d tried numerous times to duplicate it with no success....until
      one day I decided to use my Mom’s chocolate pie recipe and at the end add in 1 cup of coconut, and 3/4 cup of chopped pecans, and walla,I had a pie that tasted as good as Marie’s. 🤗

    My grandma always made us a chocolate pie when the family gathered at her house- usually Thanksgiving but occasionally Christmas... we ate our big meal and after a bit she would get back in the kitchen and make it fresh and we would always get into it before it completely cooled! 😁 love the memories and thanks for the recipe. 👍

    Absolutely loved this!! Love the Mama-son dynamic. Nice recipe with simple ingredients and perfect presentation! Love Mama's simple little kitchen. Love she uses a good old fashioned spoon to stir and remove lumps and the oven to brown the meringue (no highfalutin fancy tv cook whisk or torch for Mama lol)! More videos with Mama please! :)

      Did you know that the whisk was around before the 1840's not a highfalutin tool by any means. I make a lot of cream style pies the whisk is a great kitchen tool. Rock on mama

    OMG! I just LOVE you and your mama! This video had me smiling, practically the entire way through. Your mother is precious and you did a great job of adding very helpful cooking info. and tips, while she was preparing this pie.     I love watching this. I have been cooking since I was 11 years old and I had to learn through trial and error. I did not have a grandmother to help me learn how. I cooked for my sisters and brothers while my mother was at work. There were 6 kids in all.

      She is! Depending on the grandmother, if I hovered like that, I would have either been shooed out of the kitchen(my paternal grandmother hated people bothering her while she was cooking) or told to stop "being fresh" and go sit down for five minutes(my maternal grandmother). Women of that generation didn't stand for being pestered or fussed over. That being said, I loved them both.

    Oh my goodness. My grandmother always made these chocolate pies with the meringue. Of course none of us grandkids ever ate the meringue lol, but I have been wondering about her recipe since she died almost 5 years ago, and I believe your grandmother has nailed it. Thank you so much for this video I can't wait to make this recipe for Thanksgiving.

      For the past twenty years, it often crossed my mind that it was silly that the only thing people baked were lemon meringue pies. I KNEW chocolate meringue pies should exist - also coffee, banana, pina colada, apple, hazelnut and black cherry.

    Thank you for this video. My momma made a great chocolate pie. She passed on August 29, 2018 after years of Alzheimers disease. This brought back happy memories. I can see my momma in her kitchen baking.

      PS-I was looking for a recipe for a simple choc pie w/a fluffy meringue topping (not whipped cream). More work-sure, but that texture & browned peaks are lovely. 🤍🤎🥰🤎🤍

    I just made this. I didn’t have hard chocolate and used 3 T of powdered chocolate and it is probably the best chocolate pie filling I’ve ever had.
