What type of table do you recommend to sit the red box on? I understand it has to be sturdy and strong enough to support the red box plus the max weight for a full load. And I would not want plastic because of the fire/coals
I have seen some use one from Harbor Freight that’s red on wheels. Or I use my normal plastic folding table but I put a raised cookie sheet under it. Bit my personal one I have now is a plastic one (seen in the start of my video) under each leg I use a piece of kitchen tile I got on the cheap for insulation.

Trick is don't over-load the firebox with charcoal. Other than that it's fantastic.

like mine but ! wish the water pan was a little less deep, can't get all the charcoal in it that i like for longer cooks Mark.

How big of a turkey can you cook in this?
If you left it unspachcocked maybe a medium one. A large chicken spatchcocked fits with no bone touching which can cause burns
How is it for cooking ribs and will a rack fit?
I’ve seen my friend Eric win $1000 with it. You do have to comp trim the ribs though.
