One of the Easiest Turkish Street Food - Beef Tantuni Wraps

  • Tantuni is a traditional Turkish street food (specifically famous in and coming from the city of Mersin) with thinly diced beef and wrapped with a simple onion sumac salad in a thin lavash bread. The lavash is wrapped into a U shape so that the juice and the fat won't drip from the bottom and keeps the delicious sauce and juices inside.
    Tantuni was originally created as a poor man's dish and according to a story, the name of the dish refers to the sound (tan - tun) coming from the pan when the cook stirs and hits to its center while cooking the meat in large traditional pans.

    Ingredients:
    • 500 g beef round
    • 1 tbsp paprika powder
    • 2 tbsp vegetable oil (oils with high smoking point with a neutral taste; canola, grapeseed)
    • water
    • Salt to taste
    Garnish:
    • 1/2 onion
    • Parsley, chopped, ½ cup
    • 1 tomato
    • 2 tsp sumac
    • Juice of ½ lemon (optional)
    • Lavash bread to serve

    Mouth watering! I can't afford beef so will substitute soy bits and give them some umami treatment. I recall my first kebab in 1977. The tart and joyful taste of red onions and sumak on my tongue. I asked what the spice was and bought lunch every day when at work. Sometimes I would bring the kebab guys ice cream as a treat (I was only 16 and worked in an ice cream parlor)

      We Turkish can't efford to eat beef all the time as well so there is a chicken version too.😂 You can make this with chicken as well. Tastes good!

      Thank you! It's a low cost Japanese made knife, nothing fancy, standard steel, just like the looks. Normally I'm using Wusthof Icon classic chef knife for most of the tasks.

    As someone from Mersin, you NEED to use cottonseed oil. There really is no alternative. All tantuni shops worth their salt use it. Also pour water slowly, don't turn it into soup

    Next time you can use Cottonseed oil, because it is used to make real Tantuni where you can find in Türkiye. The reason it is used is that Cottonseed oil does not give a bitter and burned smell and taste with the meat after the cooking, also if you are not planning to consume it immediately Cottonseed oil won't solidify like the other alternatives.

      Actually, you don’t necessarily need to add paprika. It doesn’t affect the taste much; it’s mostly used to add color to Tantuni.
