  • This video will show you how to prepare fresh bamboo shoot for cooking. Bamboo shoot has a natural toxin (cyanogenic glycoside). Only through cooking / boiling that this toxin is destroyed. Bamboo shoot should not be eaten raw.

    can you fry it in light oil and the toxin will leave as well or does it have to be boiled?

      Hi! I haven’t tried that way so I cannot give a suggestion for you. I might do some research if other country practice that kind of method then, I’ll get back to you here.

    I just watched your video, I have a store bought bamboo shoot julienned, and in plastic with liquid, how long do I cook this for salad

      I think the packed bamboo shoots that you bought is already pre-cooked. Please check the package, If yes, then just wash it and cut according to your recipe. You may add it at the end of your recipe since it does not require longer cooking time. Though I haven’t tried like that with salad. don’t worry about getting the toxins, bamboo shoots in pack are already preboiled.

    Is it normal to have a super pungent labong?

      Hi! Is it fresh? fermented? or canned bamboo shoot? Haven’t tried like that, as you described it as super pungent. When cooking bamboo shoot, it will release a pungent smell but I think it is still tolerable.

      Hi Bianca, 30 minutes or until tender. Thin slices tend to cook faster.

    I made this twice now, still cant get rid of the bitter taste, what should I do?

      I haven’t experienced that. Make sure you’re getting only the inner part of the shoot. Also as the bamboo shoot get older, they become more bitter, so choose the younger shoot.
      Other than boiling in salt and water, others use rice water (rice wash), or lime and water. Cooked them longer untill tender.
