    Fresh bamboo shoot
    Mika (rice bran)
    Takanotsume (hawk claw pepper-optional)
    Bamboo Shoot Rice
    2 cups Uncooked Japanese rice
    Water (follow your rice cooker’s direction)
    1 sheet aburaage (deep fried tofu pouch)
    2 tbsp soy sauce
    1 tbsp mirin
    2 tbsp sake
    1 pack instant dashi powder
    3/4 cup cooked bamboo shoots
    Steamed Bamboo Shoots
    Bamboo shoots
    1 tbsp soy sauce
    1 tbsp mirin
    2 tbsp butter

    I love bamboo shoots! My mom used to stew them in a mixture of fresh ginger, fresh garlic, soy sauce, vinegar, a bit of brown sugar and whole peppercorns! So delicious with rice...thanks for sharing and bringing back some good memories, Shinichi and Satoshi! Loved seeing Justin in the beginning of the video! 😊❤

    Great lesson. I always wondered how to cure bamboo shoots. So much growing where I live on .big Island of Hawaii. My mom is almost 100. She said they used to cook it outside when she was growing up in Kona. Loved this. So calming. Satoshi gives off very positive feels.

    Cheesy as at the end made me smile..so fun to watch. I have never seen bamboo shoot in its original form, only ate the canned which are already cut up.

    omg, i miss my mom’s bamboo patch. she actually just cooked her young shoots plain. they had a more veggie flavor, which i loved. since we were bamboo fiends, she never had any left to preserve. your bamboo shoots look delicious!

    In ky hometown, takenoko always finely chopped then cooked with mixing shrimps and scrambled eggs for fillings of spring rolls

    I love your cooking episodes.
    I once bought what I thought was a red bamboo shoot - It wasn't until I got home and did some googling, that I discovered that there are no red bamboo shoots, and that I had bought a banana flower, not a bamboo shoot. I made banana flour dhal curry with it instead.

    We cook fermented as well as fresh bamboo shoots as a curry with any meat, mostly chicken, pork and beef.... We cook it in many ways... Boiled with lentils or fried and many more... BTW from North East India.

    The banboo shoot looks so wonderful! I could eat the whole shoot! I don't have access to fresh bamboo, can I use canned bamboo for bamboo rice? I know it won't taste as delicious, but I would like to try making it at home. Thank you Satoshi for showing us how to prepare and cook bamboo. It is one of my favorite things to eat.

    when someone says “shoot” I think like maybe an inch in diameter at most... that thing must be like 8”-10” wide at the base!
    So interesting... I’d love to try it sometime.

    if i use FUZU MODE on the rice cooker , the rice is too sweet, so i tried different mode Takenoki gohan mode and it was perfect, with MY BAMBOO...
    from my garden !so good i learn from your video too a lot

    I bought a large, fresh bamboo shoot at the local Asian market a few months ago. I was clueless as to how to cook it, and I never thought about TH-cam. Alas, it returned to its component molecules in the fridge while undergoing an ugly decomposition, and I never got to cook the thing. SO, what was the purpose of the rice bran in the boiling pot?
