'Banh Trang Tron' is a savory hand-mixed Vietnamese salad, but wait until you get the FULL picture of just HOW we are having this dish today. The afternoon energy is reaching its peak in Ho Chi Minh City as people come home from work, right as we are looking for some street food just JAM packed with flavor (and I think that this might be my new favorite dish!)
"Bunn Jaeng John" (sound it out) is a dish high on both texture and flavor - hand-shredded green mango, salty dried shrimp (or beef jerky?), quail eggs, shallots and garlic oil, roasted peanuts, and finally a double saucing both tangy tamarind and spicy chili jam.
I love the mixture of both fresh and preserved ingredients, I will never forget this dish BUT again let me re-affirm that its all about the beautiful situation in which we're having such a dish today. This husband and wife team is just so lovely and kind (and we meet their daughter later helping them the next day), although we could barely share any information through words we were all just smiling for our entire hangout. Life in South East Asia is fascinating, at the same time both rapid-paced but also slow and traditional, I love these travel situations and see them as the reason TO travel in the first place (food is often just the vehicle, its the entire meal experience that sticks with me).

2/ The 2nd dish called bánh tráng cuộn /cuốn (Rolled rice paper):
The color in this bánh tráng (rice paper) is from dry srimp
3/ The round ones with black sesame is called bánh đa (It made from rice and black sesame). Similar with rice paper but thicker and charcoal grilled before eat.

Bánh Tráng refers to the rice paper only... Bánh Đa has black sesame, you need to put this over fire to get it crispy, same with the one with the banana paper you had in your hand, you need to fire it

Joel, I highly recommend you should try "Bánh Canh" Either the pork or crab versions has its own uniqueness. Warn: for the pork version, you can include or exclude the bonus/extra part, the feet. To the locals, it's a delicacy for its chewy believe to be good for their skin.

“Bánh Tráng Trộn” translated to “bánh Tráng” = rice paper and trộn = mixed. “Bánh Tráng mè” = sesame rice paper. There are many version of rice paper and based on its thickness, you can use to make spring roll, or grill them over charcoal or in the microwave for 1-2 minutes to make them crunchy and cooked. You can also make egg roll with those same thin rice paper by frying them.
Do you plan on finding some Pho? I'd love to see authentic pho! maybe there is a nice neighborhood spot?
