    Thank you Eater for posting this quality video.
    1)The fact that the small scale farmers are so meticulous from nutrition to proper weaning to pasture raising certainly contributes to their unique flavour. It also makes me more confident about ethical treatment of animals as a meat eater.
    2)The butchers waste nothing - nose to tail.
    3)The fact that the featured restaurant uses Jeju tangerines (extremely flavourful and native to the island) shows pride in their products.
    One way to tell a restaurant is selling authentic Jeju black pork (aside from the 5 layers as mentioned) is the diner will be able see very tiny specks of black hair that burn off/ are edible.

      How does seeing black hair confirm the breed? I just can't see how the diner could differentiate the black hair from a Jeju or Berkshire.

      I wish we would do that in the west as well.
      It would make eating this meat much more enjoyable for me. Nose to tail especially important to me.
      But no we're out here only producing for the mass 😢 we even purposely got rid of marbled pigs in Europe...marbled like Hanwoo and wagyu type of marbling. Really a shame.

      @@threvorpaul I read in a Giada De Laurentiis cookbook how people (in the west) are missing out on so many nutrients from organs and other parts because they only like the pretty parts like the breast or thighs. It's ironic how the so called ugliest parts are less expensive and have the most nutrients. People are paying an arm and a leg for collagen and bone broth. Those parts naturally come from many Korean soups like pork bone soup. Mom was right.

      @@threvorpaul May I ask which country you’re from? I know a lot of Eastern European countries do nose to tail. I thought France and Italy too. Why would anyone get rid of marbled meat when people in other parts of the world pay premiums for that. It has so much flavour that you don’t need to eat much vs a dry chicken breast that needs tons of sauce and oil to add flavour.

    super interesting to see not only the preparation and farming methods but also how it's then sold and cooked at restaurants! it's also great to see the section about how they attempt to minimize waste by using the fat for soap for example.

    Great way of showing that GMOs come in many forms and can co-exist with more 'natural' farming methods that don't harm the quality of the animal's life. It's not all 'weird chemicals', it's the same process we've been doing to livestock and crops for centuries, just accelerated with technology.

      It's a misnomer to think that everything that is genetically altered is bad. Scientists and seed growers are constantly producing vegetables or fruits that are less disease prone or more climate suitable. Putting hormones in meat is a different issue.

      Technically when you crossbreed plants, etc to get desired results you are doing genetic modification. A large majority of tomatoes, etc are from crossbreeding other tomato types.

      Agreed that gene alteration isn't in and of itself bad for the reasons mentioned. The problem however is when it is used as is most often the case today, that is to make crops withstand being constantly sprayed with horrible pesticides that kill pollinating insects and are detrimental to humans as well.

      It's aka Iberian pork. It's completely different. Iberian pork is exported internationally. Jeju black pork is only available on Jeju island and some exclusive restaurants in Korea.

      Britain/America both have black pigs as well. An native heirloom breed called the Large Black. Very close to wild pigs in appearance and meat quality.

      That is done by restaurants. There are high end restaurants in Korea that cure their Jeju black pork. It is apparently so good it practically melts in your mouth.

      its not exported widely, only consumed mainly domestically, so yes its rare on the world stage and not many know of it unlike the japanese brands
