I actually met Mr. Pham without knowing who he was! I stopped by the warehouse and happened to run into him while coming through the front door. I initially thought he was a warehouse worker based on his apparel and watching him wheel a cart of supplies into the building. It took a formal introduction from one of the employees there that I then learned who he was. VERY humble, kind and quiet man. Great product, even greater founder. Also my preferred fish sauce.
The most lovely thing i take away from this is how respectful Cuong Pham is. The little things you take for granted or dont think about. Like we can see he speaks perfect english but when with his production manager, he speaks Vietnamese because she doesnt speak english so that when talking about her she understands and that its more important she understands than the camera.
Base on his accent and the way he talk I can tell he's a very kind person (I understand both viet and eng). He doesn't sound like a boss in an industry but a gentle grandpa talking to his children

I had a friend once who couldn't understand that just cause one can speak Vietnamese dose not mean they speak Thailand or Cambodian or Malaysia 🇲🇾 that's like saying I live in France and therefore speak Greek cause the countries are like states over there and they are so c,owe together one is the same as another one they do share a core culture in many European countries like Ukraine Russia Poland share Slavic bonds some where once part of Russia or like many things other than the language can be apriciated in other area but for gods sakes speaking Vietnamese dose not mean you can make it a day on the ground speaking khemer in Cambodia you would have to take a completely different language course not Vietnamese lol random thoughts

Red Boat brands is quite premium and expensive compare to other common local brands in Vietnam, like x2 x3 normal price. because they have the highest quality and all kind of certified procedures, the cost is high. So obviously they target for exporting to the point that they represent vietnamese Nuoc mam. I cannot say the same about other common local brands due to questionable cleaness, they are sured add others chemical and/or msg... And this dude don't even understand basic economy that exporting bringing good USD to the country.
Phú Quốc born here! I grew up in America but every time I returned to the island, my family always makes sure I have the best fish sauce bc they know that’s the only thing I crave for😀. I can understand how Mr. Cường feels bc I feel the same way. RB is the only fish sauce brand I pay for the high price tag because it’s the best compared with other brands which usually leave the weird after taste when used as a straight dipping sauce. I hate it so much when these brands called theirs Phu Quoc fish sauce. I have several friends whose families have been producing fish sauce for generations in Phu Quoc and 1 of them gifted me 10 bottles of fish sauce last year and let me tell you, they’re like liquid gold in my family. Yep, it's a massive difference. It's slightly viscous, it's not as salty as the average fish sauce, it has so much umami, and it has a sweet aftertaste. And weirdly enough, it actually doesn't smell funky like most fish sauce, it smells fragrant!

when i worked in seafood resturant i experimented with what we had, we did make a wing sauce with franks red hot, brown sugar, and sambal chili sauce. i added sesame seed oil and fish sauce to that combination and it made it even better.
When you work to make sure that everything is great,you have to have the ability to have heart love and understanding and support from your family to keep the history alive for the next generation to take over.

I am glad they make this available in Trader Joe's and Costco. That significantly helps with introducing fish sauce to broader appeal. Interestingly, they only have the baby bottles for TJ. I guess that's like a sampler pack for the noob.
I have discovered this Fish Sauce and now it's the only brand I use. I have an unopened bottle in my pantry waiting for my next asian recipe. I use it my soups and sauces for pasta too!

@bnng.1989 so look up the Recipe for Garam that the Roman's used. It's very similar to fish sauce except they would add hebs and spices to the salted fish for mor flavor. So it's really just an Italian thing to use fish sauce as well. Now I wonder who invented it? The Roman's or the Far East????
I LOVE fish sauce. (I'm Irish) My Vietnamese wife has tuned me into 'the good stuff' from Vietnam. I will buy a bottle of Red Boat just because I like this guy.
I have no connection to Vietnam, I'm not a particular fan of their cuisine. But once I had Vietnamese fish sauce given by an actual Vietnamese. He said it may seem pungent and I might not like it, but he had to have it sent by his family, because they don't sell good quality fish sauce here. I had it and I had no idea what he was talking about. Pungent? That's savoury! I really liked it, as well as dishes served with it. Later I tried to find fish sauce at Asian grocery store, but all they had (and all shops still have) is Thai fish sauce, which takes lots of it's color from caramel, has less fish and has often added not only sugar, but other stuff as well, making it not as savoury or tasty as the Vietnamese stuff. I recently bought a bottle from a guy who smuggled it from Vietnam. It's crazy how hard it's to get it here especially since Vietnamese is the third biggest group of immigrants in Poland (after Ukrainian and Belarussian). And it's not even caused by any legal food issues. It's just not imported by bigger brands or shops because it's more expensive, I guess.
Whenever I feel no appetite or feel the food is too bland, I just add fish sauce in. I feel it makes the food alive, can’t live without it. Red Boat is what I always get if available in shops.

Hello from small island in Washington state (Anacortes). I am American but went to VN nine times. Was an English teacher. Yep, fish sauce is great when Pho is not strong enough.
The best fish sauce out of all i tried. I even use it in tomato sauce made from san marzano tomatoes. Such a deep umami flavour. My 2nd favorite is Megachef. Squid brand i have too tho, its ok, but not nearly as deep and complex as red boat. When i want added sweetness i use megachef or squid sometimes, as they contain sugar. Red boat is pure tho and has the highest fish content.
Red Boat Fish Sauce I always have a bottle on hand, it is my go to for many things like when I have eggs in morning a splash of Red Boat happens with pepper it is so darn good.
FYI, the type of red boat fish sauce is called Mắm nhĩ (Barreled fish sauce) which is pretty expensive in Vietnamese domestic market lol. If u have a chance to visit Vietnam, you must try to get this type of fish sauce made in Tam Quan - Binh Dinh province. Am sure yall will be mindblowed 🤯
My household would use the squid brand fish sauce for cooking but Red Boat goes into all dipping sauces and be featured on the table raw as condiment. Great episode with founder Cuong Pham providing a moving narration.
Perhaps when mentioning Vietnam, we are mentioning fish sauce. Fish sauce is available in many countries around the world, but fish sauce is definitely closely associated with our culture. Since childhood, every Vietnamese person has tasted the salty and sweet taste of the ocean. Every meal cannot be without fish sauce. Even if you go far away abroad, fish sauce is an indispensable spice of the Vietnamese people.
To people comparing this and other 100% fish sauce to 3 or 5 Crabs from Hong Kong, understand a major difference: The 3/5 Crab sauce is made by mixing 25-33% fish sauce imported from Vietnam, with water, salt, sugar, msg, and some chemicals to enhance the flavor/smell. It is mostly artificial, and those chemicals cannot be good for your health long term. Always buy the real 100% fish sauce, nothing but fish + salt + time to ferment.
Vietnamese here, fish sauce is our main spice. Our country produces more than 200 litters of fish sauce a year and most of it is consumed in Vietnam. But the thing is, traditional fish sauces like in the video are very expensive, that's why we usually use the industrial sauce

as a vietnamese chef , it hurt me when more and more both vietnamese and foreigner don't know what is fish sauce . They use all fake fish sauce from big company with cheap price .
Remember how much work goes into making fish sauce. The guys on the boat have to wake up early and smell fish. And move quick. I love fish sauce. I make a spice mix with soy and chilli flakes and garlic and cilantro. It is amazing. I use it for dipping. There are a lot of uses for fish sauce. I'm going to try red boat next
Well, you Italian guys tend to do the same, by adding 3 or 4 anchovies at the start, and in case you did not know, 2000 yrs ago, the Romans used to manufacture 'Garam', to enhance the flavour in food, which basically was a fish sauce, made in an almost identical way.

Nhưng thú thật, tôi hơi thất vọng vì nước mắm Red Boat bán tại Siêu Thị Lucky, Hongkong 88 giá lúc thoat đầu cách đây 1 tháng là 15 đô cho mỗi chai chỉ có 0,5 lít. Tính ra thì quá đắt nhưng tò mò nên mua thử và vô cùng thất vọng sau khi dùng thử. Hiện nay là gần cuối tháng 9, 3024 nghĩa là sau 30 ngày giá tụt suống chỉ còn 7 đô / 1 chai 0,5 lit nhưng it ai mua nữa vì hương vị không xứng với giá. Tôi là dân Nhatrang nên rất thích nước mắm nhưng xin góp ý là mùi vì mặn chát và mùi thơm không đạt, màu đỏ thì là đỏ đậm đen như bỏ màu. Tôi nghỉ đã có nhiều người phàn nàn gọi điện thoai rỉ tai cho nhau rồi nên siêu thị hạ 50% giá mà trên kệ vẫn còn nguyên. Có khi nào bọn tài phiệt Tàu tung hỏa mù làm hàng giả đẻ phá chủ nhân Red Boat không nhỉ? cá nục mới đậm mà cánh Dán nhưng nếu là cá Cơm Than thì màu nước mắm phải nhạt hơn .
Tôi không phải bà con thân thuộc hoặc bạn bè của Red Boat. Red Boat là nước mắm nhỉ nên chỉ có cá cơm và muối. I have discovered this Fish Sauce and now it's the only brand I use. I have an unopened bottle in my pantry waiting for my next asian recipe. I use it my soups and sauces for pasta too!

@bnng.1989 so look up the Recipe for Garam that the Roman's used. It's very similar to fish sauce except they would add hebs and spices to the salted fish for mor flavor. So it's really just an Italian thing to use fish sauce as well. Now I wonder who invented it? The Roman's or the Far East????

I highly recommend incorporating fish sauce to your Bolognese sauce for pasta. Add it while frying the garlic and onions.

I keep several types for various dishes, but Red Boat is beyond comparison.
I have no connection to Vietnam, I'm not a particular fan of their cuisine. But once I had Vietnamese fish sauce given by an actual Vietnamese. He said it may seem pungent and I might not like it, but he had to have it sent by his family, because they don't sell good quality fish sauce here. I had it and I had no idea what he was talking about. Pungent? That's savoury! I really liked it, as well as dishes served with it. Later I tried to find fish sauce at Asian grocery store, but all they had (and all shops still have) is Thai fish sauce, which takes lots of it's color from caramel, has less fish and has often added not only sugar, but other stuff as well, making it not as savoury or tasty as the Vietnamese stuff. I recently bought a bottle from a guy who smuggled it from Vietnam. It's crazy how hard it's to get it here especially since Vietnamese is the third biggest group of immigrants in Poland (after Ukrainian and Belarussian). And it's not even caused by any legal food issues. It's just not imported by bigger brands or shops because it's more expensive, I guess.

Whenever I feel no appetite or feel the food is too bland, I just add fish sauce in. I feel it makes the food alive, can’t live without it. Red Boat is what I always get if available in shops.

Hello from small island in Washington state (Anacortes). I am American but went to VN nine times. Was an English teacher. Yep, fish sauce is great when Pho is not strong enough.
The best fish sauce out of all i tried. I even use it in tomato sauce made from san marzano tomatoes. Such a deep umami flavour. My 2nd favorite is Megachef. Squid brand i have too tho, its ok, but not nearly as deep and complex as red boat. When i want added sweetness i use megachef or squid sometimes, as they contain sugar. Red boat is pure tho and has the highest fish content.

Red Boat Fish Sauce I always have a bottle on hand, it is my go to for many things like when I have eggs in morning a splash of Red Boat happens with pepper it is so darn good.

FYI, the type of red boat fish sauce is called Mắm nhĩ (Barreled fish sauce) which is pretty expensive in Vietnamese domestic market lol. If u have a chance to visit Vietnam, you must try to get this type of fish sauce made in Tam Quan - Binh Dinh province. Am sure yall will be mindblowed 🤯

My household would use the squid brand fish sauce for cooking but Red Boat goes into all dipping sauces and be featured on the table raw as condiment. Great episode with founder Cuong Pham providing a moving narration.

Perhaps when mentioning Vietnam, we are mentioning fish sauce. Fish sauce is available in many countries around the world, but fish sauce is definitely closely associated with our culture. Since childhood, every Vietnamese person has tasted the salty and sweet taste of the ocean. Every meal cannot be without fish sauce. Even if you go far away abroad, fish sauce is an indispensable spice of the Vietnamese people.

To people comparing this and other 100% fish sauce to 3 or 5 Crabs from Hong Kong, understand a major difference: The 3/5 Crab sauce is made by mixing 25-33% fish sauce imported from Vietnam, with water, salt, sugar, msg, and some chemicals to enhance the flavor/smell. It is mostly artificial, and those chemicals cannot be good for your health long term. Always buy the real 100% fish sauce, nothing but fish + salt + time to ferment.

Vietnamese here, fish sauce is our main spice. Our country produces more than 200 litters of fish sauce a year and most of it is consumed in Vietnam. But the thing is, traditional fish sauces like in the video are very expensive, that's why we usually use the industrial sauce

If u can't handle fish sauce straight outta the bottle, you can use it for marinade, it's great for BBQ, no joke

Italian - when I don't have Colatura di Alici, I use this one for my pasta and I am very happy.
I use this brand because of an online chef, and I always guessed the 40 on the label was latitude. I learned a lot here.

Remember how much work goes into making fish sauce. The guys on the boat have to wake up early and smell fish. And move quick. I love fish sauce. I make a spice mix with soy and chilli flakes and garlic and cilantro. It is amazing. I use it for dipping. There are a lot of uses for fish sauce. I'm going to try red boat next

Well, you Italian guys tend to do the same, by adding 3 or 4 anchovies at the start, and in case you did not know, 2000 yrs ago, the Romans used to manufacture 'Garam', to enhance the flavour in food, which basically was a fish sauce, made in an almost identical way.

Tôi có mua một chai nước mắm Red Boat , loại hàng mới được bầy bán ở chợ Việt tai Calgary, Canada mà tôi đã về ăn thử rồi. Đang xem video này thì tôi chạy xuống bếp mở chai nước măm Red Boat ngữi lại cái mùi đăc sản quê hương. Rất vui khi biết VN có hàng bán cạnh tranh với hàng Thái và Hồng Kong.
Nhưng thú thật, tôi hơi thất vọng vì nước mắm Red Boat bán tại Siêu Thị Lucky, Hongkong 88 giá lúc thoat đầu cách đây 1 tháng là 15 đô cho mỗi chai chỉ có 0,5 lít. Tính ra thì quá đắt nhưng tò mò nên mua thử và vô cùng thất vọng sau khi dùng thử. Hiện nay là gần cuối tháng 9, 3024 nghĩa là sau 30 ngày giá tụt suống chỉ còn 7 đô / 1 chai 0,5 lit nhưng it ai mua nữa vì hương vị không xứng với giá. Tôi là dân Nhatrang nên rất thích nước mắm nhưng xin góp ý là mùi vì mặn chát và mùi thơm không đạt, màu đỏ thì là đỏ đậm đen như bỏ màu. Tôi nghỉ đã có nhiều người phàn nàn gọi điện thoai rỉ tai cho nhau rồi nên siêu thị hạ 50% giá mà trên kệ vẫn còn nguyên. Có khi nào bọn tài phiệt Tàu tung hỏa mù làm hàng giả đẻ phá chủ nhân Red Boat không nhỉ?

Tôi không phải bà con thân thuộc hoặc bạn bè của Red Boat. Red Boat là nước mắm nhỉ nên chỉ có cá cơm và muối. Chị đã ăn quen với những nước mắm khác, nếu đọc kỹ thì họ pha nước, bột ngọt, đường và những hóa chất khác. Nên dùng nước mắm nhỉ nguyên chất thì chị chê mắn. Tôi rất thất vọng vì Tết vừa rồi Costco không có bán nước mắm Red Boat vì tôi thường mua vài thùng để biếu bạn bè một cặp. Người mua nước mắm cho Costco không có học hỏi, không có kiến thức về nước mắm và không hiểu chữ “nhi” là gì. Họ đã mua loại rẻ tiền, pha rộn những thứ không cần thiết mà dám gọi là nước mắm nhỉ. Thật buồn!
Fish sauce, for the "average" US consumer, is quite puzzling. However, with a little experimentation and practice it can add a very nice mystery ingredient component to many common dishes. Nice video!
