    Cavaca Dough
    2 cups of flour
    1 cup of canola or vegetable oil
    1 tsp salt
    1/2 cup of whole milk
    8 eggs at room temp
    Sugar Glaze:
    2 cups of confectioner’s sugar
    zest of one lemon
    about 2 tablespoons of milk
    INSTRUCTIONS:
    Preheat oven and your muffin tin to 350 degrees
    Using an electric mixer all ingredients for 5 minutes. Fill the pre heated muffin tins no more than half way.
    Bake at 350 F for the first 20 minutes. Then lower the oven temperature to 325 and cook for an additional 20- 30 minutes. (Note: the oil content in the Cavacas batter makes them crunchy if you like them dryer and crunchy or cook them longer).
    GLAZE:
    Combine all of the glaze ingredients and stir until smooth.. Spoon the glaze over each one or just submerge each one in the glaze.

    No Caldas da Reina. The city is called Caldas da Raínha (pronunced kind of rRayeegnaa).

      Inside they are rather hollow. Similar to a cream puff dough or pop over dough.
