I adore rhubarb! It's good to see that I'm not the only one with green rhubarb. I use to think mine was defective because it wasn't red! You didn't say how you thought it tasted. It looked terrific. I sometimes make strawberry rhubarb jam, but just plain rhubarb is my absolute favorite.

I was going to talk about the flavor profile when I use it to fill a lemon or orange cake. It's pretty good and I think the green rhubarb would be a better choice in this application over the sweeter red rhubarb.
Rhubarb must not grow too well way down here in South Louisiana? I have never heard of anyone around here growing it. I have never tasted it & in fact, I have never seen it in our stores? Does it need cold weather? Your Jam looks great!
The amount would vary depending on which type/how tart the rhubarb is and which type of pectin you use. I could have used much less sugar sine I used the no sugar pectin. If I make this again with the same pectin, I would definitely use a bit less depending on taste.
I get up early and really that is the only time I can really pay attention:)

It is good. Sweet and tart with citrus tones. As a cake filling, I think the green rhubarb is a better choice over the red for lemon cake.

You're right, it does need a cold period to produce well each year and be a perennial crop. You may grow it as a winter annual where you live.
