How to Can Orange & Rhubarb Jam

  • While rhubarb may not be that sweet, this jam definitely is! The tart flavor of rhubarb is mellowed with the addition of sugar and is a great, spreadable texture!

    INGREDIENTS
    - 8 cups rhubarb, chopped
    - 4 cups sugar
    - 1 pound orange slice candy, chopped finely
    - red food coloring
    INSTRUCTIONS
    Place rhubarb and sugar in large heavy-bottomed stock pot or jam pan. Bring to a rolling boil: a boil that cannot be stirred down with a spoon. Boil for 5 minutes.
    Add prepared orange candy and boil for an addition 5-10 minutes until you have reached the desired consistency. This can depend on how hard you are boiling.
    Depending on the variety of rhubarb, the resulting color can be undesirable. So I like to add 3-5 drops of red food coloring to give a red tint.
    Test the consistency by placing a small amount of jam on a plate and put it in the freezer to cool quickly. After a minute or two, remove to see how firm and thick the jam is.
    Ladle hot jam into prepared jam jars. Clean rims with hot water and place on lids and rings. Put in boiling water bath for 10 minutes. Remove and let sit undisturbed for 24 hours. Soon after removing, you should hear the "ping" of the jars sealing.

    I have never canned anything Rhubarb. After watching your video and see how excited my hubby was about it. I did my first ever Rhubarb Jam. I wanted to share a pic but was not able to post it. Thanks so much for your easy and informative video. We have 5 plants of mixed red & green and I am sure I will be putting up more. I actually did a Rhubarb Orange Peach Jam. Thank you again.

    I was first introduced to rhubarb when we lived in Iowa for a few years, I fell in love with it. We had a huge patch of it and I would make rhubarb bars and can the rhubarb. Sadly after moving back down south I can’t get it to grow so I have to buy it when I see it and that’s once every few years. I enjoyed your video and the next time I get ahold of some rhubarb, I’m gonna try your grandma’s recipe. ❤️ Thanks for sharing.

    I had to transplant my rhubarb mid summer this year, much to my dismay, so its growing season was cut short. However, I do believe I have some in the freezer, chopped and ready to go.       I dug my little bags from the freezer and made a batch. Very, very good and easy - even with dicing those sticky little bits!! Can't wait for the weekend and a biscuit or English muffin (w/butter, of course). Yum!!

    My grandma made apple butter using red hot candies. It was delish.
    I wonder if I could use those orange candies with fresh cranberries to make a chutney for Christmas? Might have to try that.........

Hmmm, now I'm wondering if I could use the "green" slices instead of the orange. I love to experiment. Thanks again for a great video.

    do you think i can use orange juice instead of the candy for health reason? How about some raspberries or cherries to make the brown mixture red instead of using food colouring?

    I got some rhubarb, now I have to find some orange candy. I haven't seen them in the store. I am tempted to use ginger as I have seen them. Great video. Thank you for sharing.

      +wildchook (Mary) ginger would be a great addition but the candy also helps thicken and sweeten the jam, check online for the orange candy.

    Wow, I never knew how much you could do with rhubarb. My great Uncle Tom, who dairy farmed in Upstate New York, would make rhubarb with crushed pineapple in his crockpot. It was a great sauce for potatoes and meat, etc.

    Hi Kaleb!!! I just finished making rhubarb and blueberry jam!!! I couldn't find the orange candy like you suggested...but, I uses some very fresh sour peach candies instead!!!! The candies really picked up the flavor in the jam!!! I used red food coloring like you suggested and I got a deep burgundy color cause I used blueberries. The jam looks absolutely awesome and tastes great!!! It could used as a topping over ice cream or yogurt!!! Thanks for sharing how to make rhubarb jam so that I was inspired to make my very tasty jam!!!!

    Last year my Rhubarb produced prolifically! So I froze a bunch. I have 4 quart freezer bags left, how is the best was to defrost them? Thanks!

      +Taylor Brogan honestly just let them sit at room temperature for a while but they can still be partially frozen when you use them.

    Grandma used to sneak in a pack of strawberry jello powder to enhance color and add that sweet strawberry flavor. (Don’t tell anybody!)

    Ok, not knowing how much rhubarb and sugar to use I did 4 cups of rhubarb and 4 cups of sugar to 1lb of candy orange slices. It came out great. Still would like to know the exact ingredients.

    You harvest the rhubarb incorrectly. Rhubarb should be pulled, not cut.

    I was wondering Im watching your Video ( why would you touch the HOT Lid with your fingers ? ( ( * It must be Sterilized) This is why they have the Jam stick ( did you also no ) that if you dont take out the air right after you put in the jam it might have air pockets in it ( this could carry Bacteria & could get moldy ;o( you shouldnt use your fingers
