How to Make Delicious Rhubarb Orange Marmalade from Scratch

    Rhubarb Orange Marmalade
    Ingredients
    6 cups fresh rhubarb , chopped
    6 cups sugar
    2 naval oranges (including peel), cut into chunks
    Instructions
    Place the chopped rhubarb and sugar into a large Dutch oven or soup pot.
    Place the orange chunks (yes, peel included!) into a food processor. Process the oranges until small pieces are left. Add the orange pieces to the rhubarb/sugar mixture in the Dutch oven. Stir well, to combine.
    Bring mixture to a full boil, then reduce heat to a simmer. Cook, uncovered for about 1 hour, stirring quite often (to prevent burning on bottom of pot). When done it should pass the ‘plate test’.
    While marmalade is cooking, prepare water bath canner, canning jars and lids, according to manufacturer and USDA canning instructions.
    Remove the marmalade and pan from the heat. Skim any foam off the top of the marmalade and discard. Ladle the hot marmalade into prepared and heated pint jars. Leave 1/4 inch headspace in each jar. Remove any air bubbles, and adjust the headspace by adding or removing marmalade. Wipe the lids of each jar well with a damp towel to ensure a good seal. Place the heated flat lid onto each jar, then screw on the jar band until it is fingertip-tight.
    Carefully place hot jars into simmering water in the canner. Make sure jars are completely covered with hot water by at least an inch. Bring water in canner to a full boil; process jars for 10 minutes.

    My mother grew rhubarb in Nebraska as a perennial, but it does not do well in Tennessee. I have seen recipes for strawberry and rhubarb, but orange is a first. God bless y'all and keep growing.

      Yeah, I've made rhubarb strawberry jam, but I'm surprised how much I like the rhubarb orange combination. I'm definitely going to make more of it.

    My Mamma was know for her pies and she baked the most delicious rhubarb pie which she added orange zest and juice to. It’s such a delicious combination and it’s the only rhubarb recipe that our family will eat.

    I just love watching the two of you- so fun! I did your dandelion jelly recipe and it did not set at first (my daughter and I are pretty sure either the calcium component in the pectin wasn’t enough OR not enough sugar). Soooo we did a round two, but added one pint of strawberries and a bit more sugar and pectin -YUMMMM! It tastes like strawberries and honey!

    Another great video. Can you please make a video on your Asparagus, Fetta and Egg casserole that you mentioned. It sounded so great I went searching for a recipe, I found plenty of frittata's which I'm guessing are close, but they require constant close supervision.

    Thankyou for the recipe and will definitely give it a go. I have a steam juicer and often make rhubarb juice, it's very mild in taste but very nice. I add sugar and a little lemon juice then can it.

    We dont grow rhubarb here in South Texas. I would love to try some. I have never had any. We grow oranges down here too. Seville oranges are the traditionakl fruits for marmalade, but they are hard to come by. I use valencias or navels mostly.

      I'm sorry you have never had the chance to try rhubarb. It's very tart, but is great combined with various things...strawberries, orange.....
