    I made it today. Next time i will omit the lemon rind and cut the sugar to 3/4 cup and make 1 tsp of good almond essence. I like the marzipan taste for this cookies. Thank you for this awesome cookies.

    I am so amazed by seeing this cookies and to found out that these are Italian cookies. They are very popular in the Moroccan baking kitchen especially during our big Islamic celebrations. How cool.

    Love from Dubai. Great recipe. I used orange blossom essence from Lebanon instead of almond essence. Turned out amazing!!

    This is just like my mom taught me! The only extra things are that we drizzle just a little honey in the mix and lightly beat the egg whites. Either way, yours look beautiful!

    Kindly clarify is it 3 cups of almond flour equalling 300 grams? As well the sugar used is 1 cup equal to 200 grams i am totally confused. I would like to make these for the festive season. Kindly respond. Happy holidays and thank you for sharing the recipe recipe.

      She wrong 300gm of almond flour is 2/1/2 cup
      The sugar is correct 200gm is one cup

      You can use a tablespoon of water that you cook chickpeas in for each egg. As the chickpeas cook, protein seeps out into the water. Or, you can soak some flax seeds in water for a few minutes and use a tablespoon of that too. And, you can use mashed bananas instead of eggs, or applesauce.

    Your biscuits look beautiful. I am a bit confused, your recipe says 1 cup = 200g and 3 cups = 300g, is this American measurements? as in Australian measurements are different.

      Still a little on the wet side inside... When they cool they will harden a little.

      @@CookwithManuela Ok, I made them everyone seemed to enjoy them quite nicely. I suppose, I was expecting a smoother texture almost like a cake Ball but not quite. Thank you for this recipe. All I had was Almond flour in my pantry. So, I didn't know what to make. And this truly helped.😁

    Just tried these but mine is super sticky and isn’t moldable, any suggestions what I could do to help? Im trying to roll them into a ball to put in baking sheet

      Sorry if my answer is too late now. The dough should be sticky, if too much you can add a little more almond flour

      Hi! I love these without lemon zest too! Almond flavor only. You could add orange zest alternatively if you’d like to try it.

      Hi Andrew! I do whisk the egg whites when I make other almond cake (like my almond tart 👉🏻 th-cam.com/video/NwRra26mbE0/w-d-xo.html) when I want the almond part to somewhat soft.These pasticcini are meant to be dense and moist. So no need to beat the eggs!... it saves some time too 🤣

      We normally do a light manual “beating” of the egg whites. We still get the soft and chewy center.

    Your recipe calls for 3 egg whites but it sure looked like egg yolks to me. Egg whites are white not yellow. Can you clarify, please?

    What is the actual measurement of your “pinch” of salt? 1/4 tsp? 1/8 tsp? In your video, It look A LOT bigger than what I consider a pinch which is when you grab a small amount of salt between you thumb and index finger.

      No. They're not. Italians have been eating almond pastries since the Arabs and Greeks introduced almond trees to Sicily more than 1,000 years ago. The almond is native to the Mediterranean region.
