3 cups whole almonds
1 cup all-purpose unbleached flour
1 cup sugar
1 cup powdered sugar
1 teaspoon baking powder
¼ teaspoon salt
Zest of one lemon
3 large egg whites
1 teaspoon almond extract
1 teaspoon vanilla extract
1-2 cups powdered sugar for coating cookies

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

It is so hard to express in words the impact that Gina’s videos have on me. As an Italian immigrant to Canada, 68 years ago, I lived many of my years trying to blend in with Canadian society and trying to minimize my Italian roots. Years later, I regret not embracing and celebrating my heritage more fully when I was around my English friends. It has taken the death of my beloved parents and grandmother to realize how blessed I am to have been brought up in the Italian tradition. So now, I celebrate it every chance I get. Although I watched my mother make her dishes and sometimes helped her, I never really paid close enough attention to the exact measurements and directions needed for recipes. Thanks to Grandma Gina, I feel like I am in the kitchen with my mother once again. I shed a few tears each time I watch. I can see my mom in Grandma Gina’s mannerisms and hear my mother’s voice in her words and it fills my heart with such love and gratitude. Tu scendi dalle stelle was a song that was sung every Christmas in our home. Grandma Gina’s voice and angelic smile singing that song have been a most precious Christmas gift this season. Thinking warmly of you, Gina, and wishing your family an extra measure of comfort, joy, and hope this Christmas. My mother was born in Afragola. She taught me how to cook. She passed away a year ago. Watching Gina, is like seeing my mother again. She would sing Neapolitan songs as she cooked. I cry when I watch these but it makes me so happy at the same time.

Yes I agree seeng Gina made me miss my amazing GREEK Grandmother Irini who in her life time never learned to read or write. She came from a small village in Crete and made to marry her cousin at 16 he was 30. She had 13 children 11 survived. She was my greatest gift in life! A truly amazing woman much like Gina! These are the famous Christmas cookies called here in Italy the ricciarelli, that appear in late November in all of the bakery shops all around Italy. You can buy them for several months each Christmas season. Every zone has its own recipe and they are all very good! Thank you Gina for showing everyone how to make them. Buon Natale a tutti!
Actually say here crying watching this. I never had a grandmother or parent who would take the time to cook with us and make it fun. We have no family recipes that have been passed on and that makes me so sad, there's not even a childhood dish I remember. I have changed that, started a tradition with my son. Our secret Bolognese, white chocolate cheesecake and chocolate mud cake. I won't give anyone the recipe because its for is and to be passed down to grandchildren. Thank you for these video's. People forget food isn't just fuel for the body, it's about bringing people together,. conversation, learning from each other, past and present. ❤️

Thank you Grandma Gina! I worked at Tringali’s Bakery 45 years ago with the owner, wife and daughters! I’m Italian (my Mom is) and I learned to speak it working with them. I interpreted customers because owner didn’t speak much English. I loved those almond cookies and could never find the right recipe, until yours! It’s perfect! He made them but his recipes are in Italian and I couldn’t read it! Your book is great! I have had it and my eldest son (50) saw your videos and he got your book! Bless on you!

More from Gina!! I'm so excited. I didn't make the Zeppole yet..I just yesterday re-watch to make sure I had everything. Thank you Gina!! You explain things that are like the "tricks" to get it just right. In recipes I find...they may leave out something..a technique...that makes it better. So I appreciate that and I watch how you prepare it. Like stirring...sometimes you have to be careful not to stir too much...so I watch you. Carissima Senora Gina, what a wonderful treat! I am sure your subscribers love your food but we love YOU even more! You preserve a part of our heritage that is slowly diluting. Even in Italy. The traditions fade but your videos are with us now! I also want to say that whoever films and edits your videos does a fantastic job! We cannot ignore the camera person! And your singing reminds me of a kind of Italian Gospel Singing! One thing I would love to see is Gina talk about the Italian sayings that people used to teach life lessons. For example: Meglio uovo oggi che la gallina domani. These sayings were infallible as teaching elements. Especially when there were no schools for everyone! "Life according to Gina" would be a smash hit! Her memory is amazing to remember the recipes and the songs and the moments attached to her family's cooking! She is a treasure!
