I first started getting inspired to cook after binging dooby's videos... fast forward 1 year kater and ive just got my first chefs knofe to help me along the way!!!
It has a very unique texture! It's not for everyone definitely. If you do buy some, freeze it and then press it with a tea towel and something heavy on top for a while. It'll firm it up nicely
I love mapo tofu! I’ve been making it for my partner and I at least once a week. For mine I sauté 1 bulb of roasted garlic (mashed up), a small spoon of minced ginger, 8-10 dried chillies, 3 tablespoons of chilli bean paste, 1/4 tsp of Chinese 5 spice in 1/2 a tbsp of canola oil. After a few minutes I deglaze the pan with 2 tsp of shaoxing wine. Then I add 1 cup of (vegan) chicken broth with 1 tsp of cornstarch and 1 tbsp of soy sauce. Once that is combined I add in 1 cut up block of medium firm tofu. I let that cook/thicken while I thinly slice 3-4 stocks of green onion which I add in and let cook at the end. Once I’ve portioned the mapo tofu I add 1 tsp of homemade chilli oil on top!
This is what i crave when I have a cold (like right now, sadly lol)! It's so nice on a sore throat & settles my queasy tummy. You made it look so simple & easy! I might just make some of my own now! 😊

Clears up sinus congestion like a dream too (although you may or may not find a runny nose to a totally plugged up one preferable haha).
i recently learned you can make chili oil in the microwave, be careful but it works great and saves at least one dirty pot! haven’t tried it with chili crisp yet

Extra plus point for how you seem very calm and peaceful to me, I have a big problem seeing people like looking into their faces, even worse with looking them straight into the eye due to learned behaviour to fear humans, but It is okay for me to look at you, I am guessing something about your appearance and movement does for a change not make me think that you might be treacherous.
