As a mostly plant-based vegetarian I like seeing you try these yummy recipes 🤤 Sometimes I see cool recipes and think to myself, well that could be done as a vegan recipe too! But often when people post vegetarian or vegan recipes there will be lots of people trolling and complaining.
As someone who was a vegetarian for over 15 years I would say the best vegetarian recipes are the ones that are just naturally vegetarian. Though if it's just a small tweak like switching out types of broth you use it doesn't change the flavor terribly but it is going to taste different. I still eat primarily vegetarian but I figured out what animal protein was making me ill so I have added back in, personally, a small amount of the stuff that I'm not allergic to.
The thing with vegetarian or vegan meals you see on the internet sometimes, especially by people who don't regularly follow a vegetarian or plant-based diet is that people often don't make their meals balanced enough. For plant-based meals for example there's something known as the "vegan plate method" which calls for ½ of fruits & veggies, ¼ starches or grains and ¼ proteins. And then you also want to make sure that you get fats e.g. from oil or avocado and to make sure you get all your nutrients e.g. supplement B12, make sure you got a source of omega 3, etc. If you follow this "vegan plate method" it usually helps with making you feel full and satisfied. Unfortunately often even restaurants don't manage to do this.
I feel like your portions of veg, starch and protein are what everyone should eat. No matter what you use to make up the protein portion. I think the more complicated part is making sure you get your vitamins that are primarily in animal protein and getting whole proteins at least within the day if not the meal.

That second recipe looked soooo good. But I would've left the crunchy cheese on top, not mixed it in. I think the cunchy cheese is probably the best part. Thank you for all the delicious ideas.
I have made a version of the dumplings myself for years, and my recipe regularly surprises non-vegetarians. You need to cook your filling much longer and get all that moisture out before you try to fill your wrappers.

I would put mashed firm tofu in the dumplings. It’s so good and it will also keep the shape of your dumplings well, along with an additional protein in your diet.

Buy yourself a covered casserole dish. It is a game changer. You don’t have to stress about covering a hot pot. You just use the lid. You did a great job explaining the dumpling wrapping. I’m vegetarian so I can probably make them way more flavorful. I always point out unseasoned meat has no flavor and everything that flavors meat is. So there is no reason vegetarian food can’t be flavorful.

honestly the easiest way to be vegetarian is to live in india. I eat chicken and seafood but when i was in college i basically ate veg food cause of my friends. The most common veg food is paneer(form of cottage cheese) and it's delicious!!other than that there are plenty of vegan foods as well like dosa,idli. honestly my staple food is dal rice and some vegetable this is also vegan and it's yummy. I think abroad ppl tend to enjoy vegetarian and vegan food less cause they don't really have variety. We dont even need to try to recreate meat cause there's so many other option and i'll never get bored
I despise the texture of carrots but i love the taste. So i only eat them in soups and stews when theyre really soft. But the carrot balls?? Those look delicious, id definitely add spices to the dough tho. 😂

Just a PSA: parmigiano reggiano, grana padano and gorgonzola are *NOT* vegetarian! They're made with animal rennet. In the case of parmigiano reggiano for example calf rennet is used. It is a byproduct of veal production, meaning when they kill calves they extract the rennet from the inner mucosa of one of the stomachs. Therefore it's not considered vegetarian as you need to kill the animal for it. There are alternative sources of enzymes available that can be used instead. Those are vegetable or microbial based for example. However the cheeses in question that are produced under the European "protected designation of origin (PDO)" *have to* be made using the traditional methods. In the EU parmigiano reggiano and parmesan both fall under this. Outside Europe parmesan can be used for cheeses made with the alternatives and only parmigiano reggiano will definitely be made with the rennet from calves. Anyway, if you want to serve food using similar cheeses to a vegetarian, definitely do not use the OG stuff as it isn't vegetarian. Unfortunately often even restaurants misdeclare their food like this.
To wring out anything with water, put it in a colinder and press down with another bowl. I would like to see food from Afghanistan or South African or Cambodia. I've been watching the young chef from Cambodia 'Chef Seyhak" and it gave me so much inspiration/motivation to cook again.

I actually made the carrot balls and it actually came out amazing... But you need a hella lot of constarch for that to look silky smooth.

In the dumplings recipe, you can cook the veggies more till the water evaporates completely. You can also shred tofu and add them with the veggies.
