    Depending where your sour cream recipe was from, our vinegar is 4% acetic acid in NZ, in America it is mostly at 6%. So ours is not as strong, therefore needing more.
    Citric acid is definitely better straight from the fruit, but is still weaker than vinegar.

    I always use cream thats past its best before date in scones or baking (to replace milk) if l ever need sour cream for a recipe l use cream and vinegar rather than buying it. Your Eton Mess and potato bake looked absolutely delish. Thanks for sharing 👍

    I, too, have a used oven I found on Craiglist for $35---very low for even an average used oven. This one had a smooth top and convection baking, an upgrade from my own, but I did wonder if it would even work! It has lasted 3 years so far. This last hurricane we had a power surge and we couldn't turn it off when baking, but hubby turned the power off and on at the electrical box. For about 5 seconds, I had a light show on the display and then it settled back to normal. Works perfectly. I really appreciate you leaving all the mishaps in your videos. Makes me feel human when things don't work out just right and I learn how to fix the mistakes. Thanks again, Stacey!

    I have made sour cream with 18% cream and yogurt. The commercially made sour cream here in Canada is 14% and has thickening agents, so my homemade version is a bit richer, but way better without the additives. As for your opinion of potatoes Stacy, I am totally with you. As long as they are cooked, I'll eat them!😊

    For those of us who do not have a machine for to slice the potatoes by myself slice the potatoes and pre-boil them. This cuts down the time in the oven and does just as good a job tell😊

    Have never tried Eton Mess - it looks easy enough for me to do! I buy cream too rather than milk and I often go past the use by date and it is fine. Not a big fan of sour cream but that was a great way to use up excess cream if need it. Potato bake yum must give that a go as love it.

    Morena Stacey. Thanks for this. I haven't made sour cream but I have made condensed milk a lot but not for many years. You might like to try it if you haven't already. I use whole milk powder made up. My recipe is 2 1/2 cups milk and 1 cup of sugar. Put milk in saucepan and heat through until there are bubbles around outside but don't boil. Add sugar and stir until dissolved. Bring to a light simmer and stir every 15 minutes or so. It takes about 30 - 35 mins. You know its ready when it sticks to the side of the saucepan and looks like the canned stuff. I always put through a sieve. You should have a cup. It might be a bit of a fiddle but it's definitely cheaper. Take care.

I was surprised at the cost of your dairy products in NZ 😱I thought it was expensive here (in SA) but it's way more there! Actually, I am going to try and make all three of these.       I used to make piped meringue shells for a few local shops. If they broke, which they sometimes did😢, I'd pack the bits in cellophane bags, and sell them as 'Eton Mess Meringue ' 🤣🤣🤣

    I always put a teaspoon of vanilla in my bowl & add the cream & beat. That way I never turn it into butter by accident which I did a few times when first cooking as a young wife until someone told me about this trick. Besides it makes the whipped cream taste nicer.
    I will have to try that Eton Mess Dessert this christmas instead of trifle as I think my family will love it. I wonder if the sour cream should be made using the scales to do the amounts by as our cups & spoons are all different measurements than the northern hemisphere. I have a couple of sets of measuring spoons & containers & neither measure the same, so I am planning to buy a set of scales to sit the container on as my little scales would be too fiddly to use which is why they sit in the drawer unused.
    I have some sour cream in the fridge that is unopened & three weeks old but I intend to use it in my next casserole which will make it four weeks old but I am sure that it will be fine as it is going to be slow cooked, I just don't have any french onion soup packs so I shall thicken it with gluten free powdered onion gravy & I did buy another container of stock powder. I love how easy it is to make from the cream which gives a better alternative when you don't have any sour cream in the fridge which I rarely have unless I think ahead & then Woolies fails to deliver my meat.
    p,s, Surprised by my daughter who popped into Coles & bought me a tray of beef casserole & a dozen eggs on her way home from her physio session & said that Coles had plenty whereas Woolies are out of them or you can only buy them in-store & I don't shop in-store anymore. She only bought me one tin of cannelloni beans though I had said that I wanted four if anyone was shopping online soon. Oh well!! One is better than none!! 😆

    I've never made Eton Mess...BUT... I used to make meringues and pavlovas for a few local shops. These were piped meringue shells. If they broke, which they sometimes did 😢, Id pack the bits in cellophane bags and sell it as 'Eton Mess Meringue ' 🤣🤣🤣

    I make Eton Mess with the leftover Pavlova, whipped cream and whatever fruit is left from fruit salad on Christmas Day. The keftover dessert, nom nom 😋

    The dessert you made is Eton Mess. It originated at the English private school named Eton where both Prince William & Harry attended. It’s served after a cricket match. And I saw when the School play against the Harrow school who call it Harrow Mess. (never knew that before I’m sticking with Eton)

    Ohhhh wow the sour cream experiment was sooo cool. I was wondering if you had followed a recipe from the USA, their cups = 240mls and ours as you know 250mls, that could account for the tad more liquid. It looked delish!

    For your sour cream, different varieties of lemons have different acidity so you may need to research which type of lemon you are using and adjust the amount of lemon juice you use.

    I think I'm going to try your sour cream with lemon. It's the perfect time for nachos. Avocados are cheap now for guacamole. And tomatoes cheap enough for pico de gallo. Add that extra daylight from this weekend on of an evening and sit outside again to eat.

    That's what we made when I lived in OZ in the eighties and called it Ambrosia, I can't remember if it had meringue in it though ...mmmm yummy !

    I have found cream lasts way past its use by, by several days and if it has gone a little sour I use it up in a white sauce have even used it making the base for seafood chowder. Because it has been pasteurised even very sour cream will not make you sick (I am 76 and 🤞never had food poisoning)😊

    Hi Stacey, Never hurd of Eaton Mess but it reminds me of a recipe my mum (now 95) made when I was a kid. It was called Ambrosia. It didn't have meringue but had coconut and crushed pineapple. (looked up her old cookbooks she gave me). Love your version though. Love all your recipe's and being Vegan I can easily convert. Will enjoy those potatos, and so will my hips.     I too love potatoes 🥔 ❤ potatoes bake is one of my favorites. I par boil my potatoes tho as I prefer them soft and don't have to use as much cream. My kids love Ambrosia (Eton mess). Always wondered how to make sour cream so was excited to see this.

      Yes, you can freeze your spinach. I do go over it in a video but I can't remember which one now lol.
      Bag the leftover spinach into a freezer bag. Make sure it has been washed and it is dry. No need to blanch it, or chop it. Once frozen and you are ready to use it just crush some in your hand/bag and pop it into your recipe. :)

    My recipes call for cultured buttermilk with the cream. No vinegar or lemon juice. That’s was a good experiment

    Hey Staci, good to see another great video🤗. Love potato bake and your thermomix is fantastic! I enjoy seeing all that it can do, just amazing. The pudding you made is pretty much the ambrosia I make usually at Christmas time. I just don’t use the meringues. In saying that, it is of course Eton Mess. A yummy dessert Staci 😋thankyou.

    I think American cups are slightly smaller than ours. So if you used more than one of our cups it could have been a fair bit more than the recipe.

      Let us know how long the sour cream lasts and if it maintains the same.
      My mum was telling me my grandma would make sour cream before it was something you could purchase but it was only something few did. She was quite amazing in the kitchen though 🙂
      Would be handy to not have to buy both products especially with always having vinegar available!

    Loved the sour cream recipes! If you buy the large cream why don't you portion freeze it so you can just grab out what you need?

      I like to have it on hand fresh so I don't have to think about thawing. If I don't make it into butter I do freeze it sometimes too :)

    It may be the lighting but your lemon juice (home one) looked orangey. Do you grow the meyer lemons, which are less acidic than say eureka or lisbon types. They have a much paler juice than the meyer, which i think is a lemon crossed with some sort of orange to make them less acidic.

      Just hot water and dish soap. I also give it a good salt scrub whenever I think about it :)

    When my daddy had a heart attack in the 70’s, the American Heart Association recipe was 1 cup cottage cheese to 1 teaspoon of vinegar. Plop it in a blender for a few and voila, there you have sour cream.

    Stacey, if the recipe is US it will be 8oz cups and that’s only about 226g so maybe using extra lemon or vinegar is the trick. 👍🌏

      Without looking into it I would imagine just simmering cream down until it is thickened. I will look into it more, Thanks for the idea :)

    Must be a day for dodgy ovens. Mine stopped while preheating, and right before I was going to pop in some bread 🥺
    Mother-in-laws oven to the rescue. I hope yours is an easy fix

    I'm eager to try making my own sour cream but, it looks like you're using non-pasturized cream and I can only find ultra pasteurized heavy/whipping cream in my grocery store. I'm assuming that will make a difference?

      That cream is pasteurized but not ultra pasteurized.

      The cream is pasteurized, you will be fine still using ultra :)

    Hi Stacey, just sitting looking after a friends dog so now I have something to do…watching you :) large bottles of cream are not available where ever have lived in Australia. Largest would be 600 mls. I live in a dairy farming community and still can’t buy any bulk cream. My son could buy 2 litres cream sometimes where he lives.

      It must depend on where you live because 2L bottles of cream are available in the Illawarra, my sister buys them to make her butter

      @@ByHerHand I do it mostly with anything that has a cheesy top. The cheese really sticks to the tinfoil.

      I also taste the aluminium if it touches my food - so I too like to line aluminium with baking paper first.

    Empty the water separated from the curds of sour cream before you mix them up.
