I make spinach pesto all the time, I use spinach to bulk out the basil leaves and always use almonds as my nut. I'd never bother to cook the spinach though, just bung it into the food processor and they blitz perfectly. I like the idea of adding some lemon though to make it fresher.
Odette T Same here. I just wash the spinach beforehand and dry it before putting it in my food processor. Same with almonds, but for the most part I use lightly toasted pine nuts or pistachios. Macadamia nuts are good too.
Real parmesan is NOT SUITABLE FOR VEGETARIANS! The 'so called' vegetarian friendly parmesan is not the real thing as parmesan is known for the calf rennet that is used to make the damn cheese! Smh!

I added an avocado into the pesto for creamy-ness and tossed in some sauteed chicken thighs at the end for heartiness. Also added a bit more parmesian that suggested because my family loves cheese. But it is a wonderful base dish thats easy to personalize and is a light, impressive side dish to most meals. I will make this again next time i have company!

I am so glad to see someone else pairing fresh tomatoes with pesto. It is a phenomenal combination. I have to have mine with basil though. I just love basil based pesto. But spinach mixed in is good too. Pesto is also great drizzled over mashed potatoes, and also pairs well with roasted sweet potatoes. I love pistachios in my pesto too! 😀
"that pasta is too much for one person" ? what? how much do you eat =)))) I eat that much to only taste the food to see if I have added enough salt or not =)))))

If anyone is curious, I marinated 3 boneless chicken thighs with skin on (I don't like white meat lol) overnight in 2 tbs Extra Virgine Olive oil 2 tbs Balsamic Vinegar 3 smashed cloves of garlic Some italian seasoning, pepper, salt While the pasta was cooking, I seared the chicken skin side down for 6 min over medium high, flipped over and 4 minutes on the other side. Removed the chicken then followed Laura's recipe for the garlic and tomatoes in the same pan, scraping up the delicious fond

I have seen pesto recipes that use sunflower seeds before. Pumpkin seeds are another option.
