How to Make Homemade Pesto | Jamie Oliver

  • Jamies takes us through the principals of making pesto and shares the wisdom passed onto him by Italian Nonnas he has met over the years. The traditional Genovese method uses garlic, basil, pine nut, olive oil and parmesan or pecorino but Jamie encourages us to do like the Italians and make it with what we have available. It's guaranteed delicious.

ther is always a lot of passion and easy explanation in your cooking shows, that brings your recipes on a higher emotional level! Thanks for that, and yes you are right, many ways for making a pesto to anyone`s gusto! My Mother was from Apulia (she died a few years ago), always sayed, "la strada per il cuore, passa attraverso il stomaco" 💖

I like the way you prepare food from your choice of ingredients, method of cooking, to presentation. I like the tools too. Some look very simple and easy to acquire. Cooking doesn't seem cumbersome to engage in whenever you are in the kitchen.
I love watching when your children are cooking with you. What a perfect family!!!

Been doing pesto with peanuts for a while, always knew we could use different kinds of nuts for the pesto. Yet, the usage of different herbs to create more diverse variants of pesto is new to me and I'm fully into it. Next time I do pesto, things gonna get crazier haha.

Nice one, Jamie. My go-to pesto is a mash up of the following: Sundried tomatoes, red chilli, garlic, EVOO, oregano, little touch of salt. My supermarket of choice has their sundried tomatoes marinated in EVOO & oregano, so I simply have to add the red chilli and garlic. Quick and easy. Got it from Gennaro. Use it with Jamie's dry fried salmon meal instead of the green pesto. So the meal is a combo of Jamie & Gennaro. No wonder I'm cooking so good!

    Thanks for this Jamie!
Made pesto for the first time and its delicious!! I toasted pine nuts with cashews and pumpkin seeds (good for your intestinal track). And into the blender I added all the ingredients, including a good measure of lemon and black pepper. (I made a honey jar’s worth)
I had my pesto in a croissant with cheese, tomato and rocket!
It was truly worth the effort, and more satisfying than shop bought. 🥰😋🥐🧀🍅🥬😋🥰

Jamieee!!!! I love it!!!! The real you 💕💕💕💕 Passionately educating all of us - thank you for providing such beautiful clarity that diversity of one dish or recipe exists - for every dish and recipe. That's the cultural history of our existence- that they're all allowed to exist simultaneously because they do - everyone will have endless versions of a recipe every time they cook it it will always be a little but different. And we should rejoice in that and share it !!! ❤💕💕💕💕💓💗💕💞💖 From somebody who loves that you use your passion to educate everyone and inspire them to try everything and every version of something they can ! To explore culture through food, and continually invent things for ourselves 💓💕💕💕💗 (and is sincerely sick of all the ridiculous gatekeeper comments from people who don't acknowledge your expertise as a chef or ever seem to be able to comprehend that you are introducing a version of a recipe to people who have never made or tried it before to encourage and educate everyone about different cultures approach to flavours, cooking methods and food 💕💕💕💕😻😘🥰😍💕💗💓

I made pesto before. Only then will you realise how expensive "pine nuts" are and that you may require all the leaves from 1½ basil plants.
No wonder nut substitutes are used in the commercial Pesto (read the label on your pesto jar). 😢

I've always believed that the pestle and mortar is way better than a mixer or blender or food processor when making sauces. To me, it feels like you are more in control of textures etc. Furthermore, it adds a more rustic approach to your marinade or creation. Last but not least, don't forget it's one of the oldest kitchen tools. I remember my grandmother, father's mother, using the pestle and mortar. It was made of bronze and she used it for anything be it savory or sweet recipes and well isn't that a beautiful memory? After all, food is all about memories, love and taste

The trick is to keep it over heat while you mix it, so you remove most of the moisture and the pesto will stick to the pasta. If the pesto has a lot of oil in it, or you add too much pasta water, the pesto will just end up at the bottom of your pan.
