Hello! I came across your recipe because I’m looking for a video on how to remove a mousse cake from a silicone mould. I’m not familiar with baking at all, I just really want to surprise my mother and make her a birthday cake so I got a beautiful silicone mould for that but I’m not sure how to remove the mousse cake from it without ruining it. Can I ask, is mousse the first thing you put into your mould? How come it stays so stiff and firm when you remove the mould later and the cake doesn’t get squished? Any tips are appreciated, thank you so much!

I follow every step by step but it was failed when i put the creme Anglaise in to the cream, it became lump lump for the whole bowl! I dont know why? 😢
When I made the cream part it seized up when I added the creme anglaise. 😭😭😭😭 I don't know if it was too cold and the gelatin started to set as I folded it in or what. So sad!!
Oh I’m sorry about that! It could be the temperature as you said, you could try warming it slowly on a hot water bath untill the gelatin melts again, wait for it to cool to room temperature then try to fold in whipped cream again.
I have noticed that a few of the measurements are incorrect. Such as 1 1/2 sheets of gelatin converted to 1 tbsp powder. Way too much powder! Also, unless she is using extremely tiny strawberries, 11 strawberries do not equal 100g.

I followed the gelatine sheet quantities and it was ok. At first look I thought it was too much too but it wasn't.
