    INGREDIENTS
    Canola oil
    1/2 large yellow onion, finely chopped
    4 garlic cloves, minced
    1/2 pound ground beef
    1 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    12 large eggs, beaten
    1 tablespoon Rufina patis (Filipino fish sauce; available at Asian markets and on Amazon)
    5 scallions, thinly sliced
    Sriracha or ketchup, for serving
    Steamed jasmine rice, for serving

    Is it just me or does everyone's Filipino dad use fish sauce as their "secret ingredient". When I heard Alvin say secret ingredient I said it at the same time as him.

    Even after cooking for so many years, I still haven't cooked with fish sauce. I've heard it really makes flavors pop though.

      It's wonderful! Smells and tastes totally different on its own vs. cooked in a dish. Sort of how anchovies taste totally different when cooked.

    ketchup is the best partner for the tortang giniling! you can add parsley and pepper. and yours is a bigger version of what we normally cook at home. hahaha

    Looks yummy (except the ketchup) - garlic burns so easily I thought it was best to add it at the end of sautéing the onions?

      Yes, garlic burns easily. But it can be avoided if you time it right. Us Filipinos generally like the pungency of the garlic and that's why it's sauteed first. You can do it other way around too though. Hope this helps :)

      Yes. Garlic turns bitter when overcooked. Add after onions are caramelized.
      And also yes, ketchup ruins the whole thing.

      Charred garlic seems to be a thing in Filipino food. Not burnt, but very browned to the point of almost crispness.

      @@outkhazted mine goes right from brown to burnt! Need to work on that. Love your profile picture BTW, I actually met him! He visited the Museum of Science and Industry in Chicago- I was working the main entrance- I about fell over!!

      @@vickimoseley7434 that's an awesome story. The Colonel is an American icon.
      My recommendation to avoid burning the garlic, is to start in a cold pan. Add the oil an minced garlic to the cold pan, and then turn the heat to medium or medium low. Then, you have to watch it like a hawk. When I make Filipino garlic fried rice, I use that method, and as soon as the garlic gets mahogany, throw in the cold rice. It cools the pan and keeps it from getting burnt.

    On a side note: Where do you get cast iron that’s as thin and light as carbon steel, because I’m 100% in the market for something like that!

    I think that's a carbon steel pan not cast iron. And suggesting "screwed up" re pan not hot enough isn't going to endear yourself as a cooking mentor.
    Otherwise interesting recipe...12 eggs tho???

      Two pans: the first, for beef, is cast iron; the second, for omelets, is nonstick-coated pan.
      12 eggs for 8 servings sounds entirely reasonable to me.

    He's really laboring around here. I'm wondering what his resting HR is along with his BP.
    12 eggs, I assume Large, so around 900 Cal. just in that. Add in the 80/20 Ground Beef.. then the Salt, Fish Sauce (super salty), here comes the Ketchup (Sugar/Salt). Talk about a Cal. Bomb!! He's definitely eating way more Calories than he's burning.
    I hope he can find ways to improve his health and cooking. He won't be around very much longer if he doesn't I feel.
