    As soon as you said "don't French the chops" and "I like my lamb medium" I was hooked. I'm Italian (my parents were born in Italy), and this is how we cook our lamb. I've liked and subscribed, thank you!

    Great tips on rendering the fat from the lamb chops: fat side first, medium-low heat. Worth the price of admission.

      That truly was a good idea. Thank you for that tip.
      However, it's not all about food.
      Here is an important message for your souls.
      What category are you in? Do you speak the language of Grace through FAITH Ephesians 2:8-9 KJB? Are you saved in Jesus Christ or are you lost in the cares of this fallen, forsaken, vile, evil, wicked world? If you do not speak the language of GRACE, you are following another Jesus and are lost!!
      The bottom line is that, is your soul saved in Jesus Christ?
      During the tribulation period, those lost souls who are left behind, can get saved but will go through sever persecution and they will have to die for their faith by refusing the mark of the beast 666 and being a martyr for Christ Jesus and getting your head cut off.
      We are still in the dispensation of the Church Age of Grace, Christ has paid the price for all our sins on the cross of Calvary and He said, it is FINISHED!! Jesus Christ purchased us all, have you accepted His free gift of Salvation?
      Here's how a lost soul can get saved!!
      Remember the THIEF on the cross who told Jesus Christ - Please read and understand what I am trying to say.
      Luke 23:42 KJB - And he said unto Jesus, Lord, remember me when thou comest into thy kingdom.
      Luke 23:43 KJB - And Jesus said unto him, Verily I say unto thee, To day shalt thou be with me in paradise.
      The thief on the cross, BELIEVED truly from his heart that Jesus Christ is God and he got saved IMMEDIATELY.
      Jesus Christ did not tell the thief on the cross, go get baptized in water or go do Christian Science, go to a priest and confess your sins like the Roman Catholics do or Scientology or any other CULT!!
      On the contrary, Jesus Christ saved the thief right on the cross when he truly BELIEVED from his heart!!!!
      Salvation is easy to receive but 'RELIGION' complicates it!! Jesus Christ set us free from religion. RELIGION = SATAN
      Today is the day of your Salvation, NOW is the accepted time because tomorrow is not promised.
      Salvation is a gift offered to the world by our Lord and Saviour Jesus Christ, yet people complicate it with religion.
      Here is a message for lost souls - Jesus Christ is God, manifest in the flesh and He came on earth to die for our sins. He bore our sins on the cross of Calvary. Have you accepted His free gift of Salvation? Have you accepted Jesus Christ as your Lord and Saviour? Have you truly BELIEVED from your heart that Jesus Christ is LORD? Have you BELIEVED in the death, burial and resurrection found in 1 Corinthians 15:1-4 KING JAMES Bible? That's how a lost soul can get saved.
      Remember that it's NOT what we do that gets us saved, it's what Jesus Christ DID on the cross of Calvary, that's what SAVES a lost soul.
      All you have to do to be saved, and on your way to heaven is place your TRUST in the shed Blood of Jesus Christ and nothing else, as sufficient for your salvation, (Romans 3:25 KJB - "Whom God hath set forth to be a PROPITIATION through FAITH IN HIS BLOOD, to declare his righteousness for the remission of sins that are past, through the forbearance of God;")
      (Propitiation means the act of appeasing wrath, Jesus took your place on the cross.)
      Will you accept Jesus Christ as your Saviour by simple faith by simply trusting in his shed Blood which is sufficient to save your soul from hell?
      The last sentence is all you must do to be saved, and that is FAITH, not works, TRUSTING and BELIEVING in what Jesus Christ did for you, is the only thing that is not a work.
      Ephesians 2:8-9 KJB - 8 For by grace are ye saved through faith; and that not of yourselves: it is the gift of God: 9 Not of works, lest any man should boast.
      2 Corinthians 5:7 KJB - (For we walk by faith, not by sight:)
      Ephesians 1:13 KJB - SAVED and SEALED until the day of redemption.
      Take this opportunity NOW and please get saved before it's too late for your soul!!
      Heaven and Hell are real, literal places. There's ONLY 1 Eternity to choose from, Heaven or Hell, choose wisely for your soul!!

    Finally a Lamb Chop video that makes a lot of sense. I also agree about not using a rich buttery sauce. The roasted grapes are a nice addition at first I thought they were mushroom caps. Also the garnish sets everything off. Your presentation is 5 star!

Look forward to some more of your cooking tips, Had my Lamb loin chops earlier, cooked them exactly from step one of your video, yes i get why to start with them in the pan upright with fat of the chop cooked first.     Those lamb chops are looking great and I love both them and the roasted grapes you made to eat with those fine looking chops. You know how to cook up the best food and I love eating it and miss being in the Air Force since they provided me with plenty of it when I was stationed in Southern California and worked for the contractor part time at the local air base.

    I've looked at a lot of lamb vids and THIS ONE is the absolute best! I've made lamb your way so many times, with excellent results each time, that I almost forgot that you taught me, lmao. I've even shown other folks how to do it and they think i'm a pro, lololol. I'm gonna make them again tonight and film it because my friends want me to.       Thank you so much ! The key to lamb is getting quality lamb. The spring time is perfect for fresh lamb. And I always prefer the smaller chops that are more tender.

      I don’t have iron. It’s alright to do in a heavy bottom pan. That’s all I have. It worked well.

    i made some over a bed of leek whites. It was really good! I quit eating lamb at restaurants because it's usually pretty subpar, but if you pay the full market price for fresh lamb, it is way better than beef. I think the market price went up this year, and the stuff I was getting at the local Lebanese place really took a dive. I recently got an lb of chops for 40$ locally and it's just the best.

    Exactly! It seems that the flavor gets better as the meat cooks. Medium cooked lamb has better flavor than medium rare! We love lamb!

    Rib chops are called Cutlets. In Greece, lamb is well done and juicy because they keep basting it in olive oil as well as fat. Use Oregano or Majoram rub in some countries. Cut the fat with fresh lemon. Get it right!

    Any chance of telling us how long you cooked the chops per side.

      I am just estimating here , so approx, 5 minutes on first side than 4 minutes on the other, but then you have to factor in the fat rendering on the sides off the top. Again I prefer my chops medium so if you want them bit less cooked, you can adjust that. There are so many variables though . Thanks for watching and hope you try it.

      But we love it all.

      The grapes were roasted and I just added some olive oil to pan to keep them from sticking. They were muscat grapes with beautiful sweet depth. Thanks for watching and hope you try the roasted grapes.. They are really to die for.

      so the only purpose of doing that is eye candy? Thats dumb. I know aesthetics are a part of cooking and you eat with your eyes etc but i wouldnt sacrifice flavor for visual appeal.

    Hi great video! Any idea why my lamb chop is always tough even though it's cooked medium rare? I have been using lamb shoulder and grill them in a pan using medium heat. Any way to tenderize it?

      Hi thank you for watching. In general, the shoulder is best braised , as it has a lot of connective tissue and muscle that becomes tender when you cook it slowly with some moisture. How old the animal is also plays a role. The loin or rib chops are best for this type of method. It tough - sorry for the pun- to tenderize a shoulder chop with a quick cooking method. Marinades with some acidity like wine and lemon juice will help but you won't get the same texture. I hope this helps.

      I'm so glad you found my show on PBS. For this recipe , I did not use garlic only because they are pan seared and I want to avoid burning the garlic. If I made them in the oven , I would add some garlic. I hope that helps.

    Thank you so much, I looked at several recipes that took over and hour, kept searching I was hungry, it was late I saw cast iron, I stopped right there! I have cooked lamb shanks, and Boneless leg of lamb, but never tried chops. This was just outstanding!!!! Thank you, came out perfectly, paired it with fresh asparagus and radishes from my garden, and mash potatoes. Again Thank you!

      Happy 4th. it's hard to give you advice on how long because there are so many factors. It will be roughly3- 4 minutes per side.

    I love you, Christine! 😘 I've been telling chefs for years to stop French trimming lamb chops; they are removing all the best flavour and making it look like a long-dead carcass! I love whole lamb chops; pick them up and suck them. "The nearer the bone, the sweeter the meat; pick it up with your fingers, and enjoy the full treat."

    When you were about to tell the flavour of this delicious,, I thought you would say Heaven 😊 put then phenomenal gets the best of it ,, well done here ,, but watch it for the fats in the steaks and add to the decorations olive oil,, it helps the body to replace colistrol with non obsorbing plant fats from the olive oil.       Now, this is interesting - ',, but watch it for the fats in the steaks and add to the decorations olive oil,, non-obsorbing plant fats from the olive oil' sic., sic., sic., --- if what you are saying is 'be careful of the cholesterol (from the meat(s) fat,) using olive oil will help replace bad cholesterol (LDL from meat,) with non-absorbing plant fat in olive oil.' It is always a concern. I use statins to fight off the cholesterol and Doc says my numbers are good. I do keep olive oil close by - it replaces butter in all our recipes. The woman insists! And thank you for the advice and reminder! I should drill this home. B=]

      Thanks for your question. Since it's all being seared in the pan over direct heat, I would suggest crushing a whole clove of garlic and putting in the pan and basting that fat over chops with the garlic oils in it. Chopping the garlic would increase chances of burning it and tasting bitter. I hope this helps !

    I think its each to there own. Top chefs say high heat 3 mins on each side. Dont turn. I like well done. Not still alive. I dont use oil with bacon.

      High heat if you have restaurant hood system. If you are in an apartment low heat doesnt set off your smoke alarm

      Mister Duman I would say don’t remove fat when putting them on grill , although it can be challenging because the fat causes flare ups , so I keep the temperature moderate again to reduce the flames / smoke. I hope that helps.

I'm not sure whether the last fire I used was hot enough to be categorized as moderate, but even though the internal temperature admittedly exceeded the desired temperature quite a bit - which is my fault, one I will try not to repeat - the outside still didn't have this desirable crust. I assume a bit more coals could solve the problem, although the danger could be that the outside gets at the desired spot whereas the internal temperature is still too low! This "crust" on grilled meat; does it fall in the category of "Maillard reaction" or are we speaking of "caramelization"? Thanks for your time and thanks for the well made, educational video.

      Well they don’t generally last long enough for that to be a problem. But to retain heat a porcelain or stoneware plate , pre- heated would be ideal. Thank you

    Americans pronounce everything differently from Europe. First time I have ever heard oregano pronounced in the American way. Different from Italy, UK, French, Greek etc. Sorry when it comes to food stick to your European roots/ pronunciations :)
