This was a really good presentation of the whole cooking process. No chit chat, no vlogging about some trip to Italy where you learned the recipe from an old grandma in a village, no weird ingredients, just straight up COOKING! Well done!
Beautiful! I made this for my anniversary dinner. Your're voice is so soothing and you are so chill it gives confidence to the novice cook making me think this was "no big deal" to do! Thank you for your generosity. You deserve your own cooking show!
it was absolutely delicious, and so easy to make. I served it with scalloped potatoes, brussel sprouts baked in a small amount of maple syrup. thank you, I'll make it again.
So simple and so very delicious! I may have put a little too much oil in the cast iron pan as they didn't brown quite as much as I like them - so will do it again one of these days.
Tried this for dinner tonight with the garlic crushed but peeled and a non-stick pan. It turned out beautifully but i'm sure the browning would have been better with cast iron. Very easy, very delicious. Thank you!
Natalie Summerfield Oh my yes!! It was so easy, I never knew! 😂 I had actually never had a desire to try lamb before, but it was absolutely delicious! How did yours turn out?
Hose are some very well maintained and seasoned cast iron skillets there my friend. We are only as good as the tools we use. Good job. I'm going to try this tonight. Got my garlic and rosemary yesterday and my cast iron skillet and lamb today. My cast iron skillet is in the oven seasoning as I type this. Cant wait !
Excellent! Trying your recipe tonight! Only constructive I'd suggest is to always state your cooking temp when doing these videos. I found it by scrolling through and seeing a previous comment though, and I'm super excited to make these
I got lamb-chops tonight fresh from HEB. This seems like a simple, straight-forward recipe and I'm going to use it in my cast-iron skillet! Thanks for the heads-up!
This recipe was great for me. I did modify it by soaking the lamb chops in lemon and subbed rosemary for thyme. My wife loved it and it was her first experience with lamb.
I just bought some really nice lamb shoulder chops.. came looking for a recipe and I found one.. Thank You.. althogh I don't have rosemary.. I do have Garlic.. I do have the wonderful cast iron skillet...

Oh god, my girlfriend is cooking something in olive oil downstairs right now, which made this video basically the most compelling piece of multimedia art I've ever experienced. Also, I'm definitely doing this in my new Lodge skillet!
Wow, I made this tonight and it was so easy and so good!! I got lucky, I was down to my last three cloves of garlic but I have a couple of rosemary bushes out front, it's so easy to just walk out and get some. The basting part is what I do when I make some other dishes. I made a nice rice dish to go with everything. I see another video on cleaning and seasoning my cast but my only problem these days is lifting it!!! Seems to be getting heavier every year!!
perfect I just got a nice lamb steak and was looking for ideas this is ideal I'm adding portabella mushrooms just cause that's what I'm working with thank you
+Cooking With Cast Iron Thank you! What temp is lamb & all meet generally safe to eat at? I know you didnt check the temp here but it wud make it more easy for newbies like me to know.
Hi, I have a question. I've recently got a grill pan (cast iron) but I have always seen that the best method of cooking a steak, or lamb in this case, is to use garlic, butter and rosemary (or thyme, I actually prefer this). The thing is, if I have a grill pan I can't apply this exact same method, and I've seen chefs doing exactly what you are doing but also recommending grill pans for "professional look". How do you apply the butter, garlic and rosemary if you are not using a normal pan?
Claudio Romero I assume you have this Lodge square pan goo.gl/IEf6sh ? I have not used one of these before, but I would imagine that you could tilt the pan to scoop the juices back on to the meat. If you put the butter, garlic and whatever herb in pan it should still cook off its flavor into the meat I would imagine. A few things I would try are: Do it the same way as a normal pan. Or put the garlic and herbs under the meat. Put in more butter to raise the level of cooking oil/juice. See if you can tilt the pan enough to get a few spoon fulls to baste the meat with. I would imagine that the grill pan would give some nice "grill marks" and you should be able to use it in almost the same manner. I have found that the best way is to try it; with some cheaper meat first of course =)Hope that helps, let me know how it comes out!
Cooking With Cast Iron Thanks for the reply. I have one like that and a long griddle. I'll try your advices. I have already made steaks and pork chops just like you, but using regular pans. I'm just starting with cast iron (and cooking, just left my parents house a few months ago XD)... I should have bought a regular cast iron pan =/. I will as soon as I can. 2 more questions: I can't find that cast iron conditioner where I live so I'll use linseed oil (or maybe vegetable oil). Is it good to put them over fire outside? Or is the oven better to season them? The other question is: Are you using black pepper? I always hear "add some pepper" but I've seen more than one type..
Claudio Romero Congratulations on moving out, I wish I had cast iron and the desire to cook when I first moved out =) All cast iron is good. I love my griddle. If you are just cooking for yourself, just get a smaller 8" skillet whenever you can and you wont regret it. goo.gl/FdCyzB For oils, I would use flaxseed oil (which is the cooking version of linseed), coconut oil, peanut oil, sunflower oil, or good old crisco. I seasoned mine upside down in an oven at 350f (175c) with a light coating of oil 3-5 times. They should be solid after that. I would stay away from vegetable oil for seasoning, I have had a bad experience with that. I do use black pepper exclusively from a grinder and light sea salt. Both coarse ground usually.
When i use medium heat on let's say Lamb Chops or Steak, they stay kinda grey and i don't get a fried crispy outer layer. Then when i try to achieve that i overcook the meat. Maybe for the fish it's alright but would you reccommend high temp on red meat & chicken?
Oliver Petrovitch it's really easy to grow rosemary, next time try getting yourself a stem and just stick it right into the soil. Use a mini pot if you don't have space. Ta-da! A rosemary garden.
I grew up on lamb chops - literally. Every week. I understand that lamb chops are not as popular as beef steaks in the USA. Here in Australia it was way cheaper back in the 70s when I was growing up to have lamb chops for dinner rather than steak or chicken or fish. That is no longer the case, these days chicken is the cheaper option. It used to be the other way around. I bought a lovely little lamb chop at the local butcher today for $3.60. Cooked it in the toast-r-oven for twenty minutes on 230° - it was delish 😎
My kitchen always ends up being oily after cooking lamb chops, especially the floor. Is this normal, or am I using too much heat? Because I don't see much oil splatter and steam coming out of yours.

Well done cooking video: clear, well-spoken and- blessedly- with no distracting music in the background.
that is the smoothest cast iron skillet I have ever seen . wish I could get mine that smooth .
Find some good vintage pans!
Field Skillet Company or Stargazer Skillet Company both just started making glass smooth cat iron in the U.S.
I thought the same thing, the sheen on that pan made me envious, but I’ve got my Lodge used and seasoned well enough that my fried eggs don’t stick.
Late comment, but I KNOW RIGHT???
does anyone else get a really strangely satisfying feeling when ever you baste?? :)

Great video. Best to add the rosemary late in the sautéing. By adding at the beginning, it’s likely to become bitter or worse, burn.

It would, but might not taste as good =)
Cooking With Cast Iron You're probably right. Thanks.
cast iron is the best. i used a regular frying pan. it was a pain in the ass lol
What cut of meat are you using?
Lamb chops, not sure if there is another name or cut description

Are you letting the pan come up to temp before putting the meat in?
Yup. I even waited more then 15 minutes once. I guess it's really about the meat. Because i got the lamb at my hometown and it just worked perfectly.
Ah yeah that could have an effect on how it browns. Good to know you got a nice result!
oh man that look's so good , I love lamb
