I made this cake today for by brother-in-laws birthday and everyone loved it! I highly recommend it. The only thing that I had issues with was the frosting not setting. It remained soft and started to slide down the cake (despite being chilled for 2 hours) w/in 30 minutes of completing. My handheld mixer only has the beater attachments, not a whisk so I think that was the problem. Either way, I loved that the pineapple filling added the perfect bite of brightness and the entire cake itself wasn't overly sweet at all, which I really appreciated bc I don't like super rich cakes. I'm placing this recipe in my favorites folder! 😋

They all thought it was phenomenal, especially since it was a no bake cheesecake. They couldn’t believe it, I had no leftover cheesecake! Cant wait to make this soon for me for the syrup can i skip rum as i dont use alcohol at home and frosting can i use vegan cream cheese / coconut milk and cream i never had the best pineapple coconut pina colada cake before pefect for my after office snacks
Yes, you can make the syrup non-alcoholic. I have more details up on my website. The began cream cheese should work for the frosting, but I haven't tried using coconut cream for it. I'm not sure if the texture would be the same.

I have relatives in Cape Brenton Nova Scotia. The family still lives in the house my great great grandmother was born in. She also died in the same room she was born in on her 100th birthday. Peggy's Cove is a beautiful Oceanside place. Great place to get in touch with nature with the Atlantic crashing against the rocks. Back to the Pina Colada 🍍🥥. No, I just used the pineapple in its juices. I personally don't like my cakes too sweet! If you wanted to, you could add about 1/4 to 1/2 cup sugar. Enjoy!
There's a Cuban Bakery near me, and they do their piña colada cake similar to your recipe, but they add a layer of Mille-feuille along with dulce de leche. So good! 🤤

You can do either one. The frosting will start to get soft after 1 1/2 to 2 hours. Hope you love it!
