    Hi There , I tried this mango 🥭 cake recipe yesterday I followed the exactly the same recipe! and it came out so so good . And I love the way you talk in all of your videos with smiles on your face !! !! Yesterday while making this cake I used to pause the video and then whenever I have to resume the video to see recipe further and I noticed that every time when I pause the video I resume on your smile!! You look so beautiful 😍! And thank you once agin for this yummy recipe. Now my next target is your rose cake on my hubby’s birthday on 12 th July! Love 💕 Ruchira.

    I tried this and try with Indian kesar or alphonso mango puree. You will feel the real mango taste and I made a small change in the cake. I beat the egg white and add it to rest of the ingredients. That made the cake a bit light. It tasted so good:)

    You are always so creative I like the idea of using a sponge cake with a layer of mango puree filling I can already taste the creamy mango absorbing in the sponge cake. This is one i will try. Thankyou for your recipe because i have 3 ripe mangos.

      The mango whipped cream frosting is very soft. I personally wouldn't apply fondant on this cake. If you have to have fondant, I would use the mango frosting on the inside only and use a buttercream frosting on the outside.

    Wow that was easy and soo delicious.i love mango andvso does my one friend shes a nut for the fruit.she said shes tasted many desserts that have mango in them but loves this by far its the best shes ever had she wants to know do you and any recipes for elderberries.

    Hello. Just finished making the mango cake. The cake turned out great..but my frosting was not holding its shape....when i made the frosting it was ok...but when i started to frost the cake...it was too runny...how could i have saved it...plz advice...

      Hi! I'm sorry to hear that! I would place the frosting into the refrigerator for 30 minutes to an hour to let it chill. If it gets too warm, it will become runny! Once it's chilled again, whisk it again and you should be good to go :)

    Heavy cream is not available in the UK. What can I use as a substitute - double or whipping cream?

      I think a double cream would be the closest to heavy cream. Whichever cream has more fat :)

    Hi! This looks so yummy! Can this sponge recipe be used for a 2-tier wedding cake? Is the frosting stable enough to hold about 2 hours before reception begins? Thank you in advance for your reply.

      Hi! This cake is very delicious but it is on the softer side. I don't recommend making a 2-tier version of this one. If you want to use a different frosting, I recommend by Italian or French buttercream. Once those have set in the refrigerator, they are very stable

    Hi Tatyana, This recipe is amazing but i have an issue that I cannot use cream cheese or mascarpone so is it possible if i just stabilize the whipped cream by adding corn flour to it or should i replace the cream cheese with greek yogurt. Please help me on this... Thanks!

      Hi! I'm so sorry, this recipe cannot be made without the eggs. Maybe you can use a different recipe for the cake layers and use my frosting and filling instead? It's about 2 cups of mango puree.

      Hi! I always use 8-inch cake pans for my recipes. For 10-inch pans, I do recommend doubling the recipe. Enjoy!

    Can I bake it in 9” pan? If yes, how much time and what temperature?

      Hi! Yes, you can use a 9-inch pan; the cake layers will be slightly shorter. Bake at the same temperature (350F) until the sponge cake is golden brown color on top, about 18 to 20 minutes

      I highly recommend using the heavy cream, you will have a stiffer frosting and it will be easier to work with

    If we make a buttercream frosting with butter, do we need to cook the mango purée to reduce it should we not do that?

      If you want to do a buttercream, I recommend adding something like mango jam at the very end. If you want to do the puree, you'll need to reduce it significantly and add only a little bit, as it will cause the cream to separate.

    This really looks delicious. I'm a bit worried if the icing can be stable with our regular temp of around 30-33 degrees Celcius

      You can add dissolved gelatin into the frosting to help make it more stable. Refrigerate the cake overnight to allow the frosting to set. Enjoy!

    Hello Tatyana, i did a 2nd attempt on your cream (did the sponge cake as well and while i wait for the cake to cool completely, i was making the frosting) - while i whipped the heavy cream and sugar, it reached still peak (or at least not runny to frost) but when i added the white choc-cream cheese mixture, it became soft and runny - 1st time was also like that
    Could you kindly advise where did i go wrong please?

      Hi! After adding the cheese mixture, make sure you aren't overmixing the frosting. I mix in for just a little bit. It won't be a super stiff frosting but it shouldn't be too soft. Did you try placing it into the refrigerator to chill it?

    Did you only apply a crumb coating?
    Can I use mango puree from a tin?

      All grease questions! I do not recommend greasing the pans for this sponge cake recipe. Any grease can cause the cake to go flat. Parchment paper is really the best option. I applied a crumb coat and then another light coat of frosting. And tinned mango puree will also work well. Enjoy! :)
