    I made this cake today for a party and OHMYGOD !!!! IT WAS DELICIOUS ! although I used half the buttercream cz alot of people dont like a lot .. it came out SO moist and fresh. It was amazing ! The only challenge was to find the pineapple essence and the juice extract.. I found the essence but couldn't find the extract so I used pina colada drink syrup in the curd instead..

    I have a question do I have to use butter milk?

      I do recommend using buttermilk since the acid in the milk will react with the baking soda and make the cake extra fluffy.
      If you don't have buttermilk, simply combine 1 cup milk with 1 tablespoon of white vinegar or lemon juice.

    That is so beautiful and the pineapple flowers are so elegant, it just doesn't need anything else - they are the perfect compliment to this cake. Just gorgeous, I love pineapple !!! Like you, I always add crushed pineapple to my carrot cake because it keeps it so moist.

      Hi! You could use a gluten free baking flour mix but the cake will not be the same, unfortunately.

    How long will the buttercream stay stable if left on the counter?

      2 to 3 hours until it gets really soft. Keep it refrigerated until you're ready to use. I recommend letting the cake chill overnight in the refrigerator. It will hold up better at room temp.

    How long can this cake stay out at room temperature ? I made some cake pops using this recipe with leftover batter and frosting.

      I recommend keeping the cake refrigerated, then remove it from the fridge for about 1 hour prior to serving. The cake pops should be fine at room temperature for 2 days .

    Hi , can I make the cake layers in a 9x12 pan? Do I need to adjust baking temperature? Also can I use coconut oil in place of vegetable oil? I want to make this for my baby’s first birthday party and need to make enough to serve 40 people.

      Hi! Yes, you can use a square pan for this recipe. I would recommend making two layers though, since the recipe makes quite a bit of batter. Keep the temperature at 350F. Have fun baking and enjoy!

      This would be perfect for cupcakes, too! You can use a small spoon to scoop out the centers and add the pineapple curd inside, then add the frosting on top. I would cut the recipe in half since the full recipe will make a lot of cupcakes!

    The dried pineapples looked great, but if you took a candied (or even a maraschino) cherry and made centers to the flower, it would look even nicer. You might do a video on transporting cakes.

    Okay came back to leave a review. I made this cake very tasty, not too sweet. The curd was a little difficult you have to be careful with the heat and buildup that could be mixed back into the curd because it will scramble if it sits still or boils. Buttercream was a fail I have a terrible mixer and I’ve never done anything like this. I read a lot of comments about how good it looks but I can confirm it also taste great. The pineapple flavor doesn’t come thru in the buttercream too much if at all. But it complements the cake well. One modification I made was I used the crushed pineapple juice that was left over and brushed some across the top of all the cake layers and kind of let it seep in (not too much so it doesn’t get soggy). Pineapple flowers didn’t go well.

      Hi! I'm glad you enjoyed the cake, even with the technical difficulties! The buttercream should work even with a slow mixer. It will just take longer to beat the butter. The pineapple flavor really depends on the brand of extract you use. Some are definitely stronger than others.

    Good Day Chef 🍍, do you completely squeeze the crushed pineapple to be as dry as possible or just drain it and press it with a spoon. Nice touch with the butter cream border for the curd, excellent tip. Those Pineapple flowers were a lovely garnish. If I don't have curd could I substitute pineapple jam or jelly?     Really, Tatyana? For the buttercream, 2 1/2 cups butter to 3 cups confectioner's sugar, almost equal amounts? That's not frosting, that's a non-alcoholic hard sauce! I used to make and scoop it out with a melon-ball size scooper to put on a piece of the pie. I've made the cake and buttercream but will not be making the curd. We have yet to taste it, but I'm sure it will be great!

      You can adjust the frosting to your liking. The confectioner's sugar is pretty standard amount. Your mixer should be doing the work and making the frosting light and fluffy
