I understand why Sea of Stars didn't make the list. It is an amazing game with fairly simple mechanics (and ways to increase or decrease difficulty) but it's definitely for more experienced RPG players. The game is a homage to all the RPG's we played growing up. While a newcomer would definitely enjoy the game and story, a lot of the little easter eggs and tributes would fall on deaf ears. I am curious to hear your opinion on Legend of Dragoon for newcomers. It's one of my favourite games and I usually recommend it to friends who haven't played many RPGs. Have never had someone say they didn't like it. Its graphics definitely did not age well, so it lacks the flair of modern games. Still a great one to play, just maybe not as a first timer to the genre
I watched some gameplay of Legend of Dragoon and it looks really fun and I don't see anything wrong with recommending it to beginners. I just personally always go with more modern RPGs like Persona 5, Octopath Traveler, or Tales of Arise because of the quality of life features they'll have compared to old-school RPGs. And if they don't mind the Anime aesthetic, Honkai star rail or Genshin impact might be solid choices because their both free and pretty fun even if you don't spend any money. But yeah, Legend of Dragoon is a solid choice to recommend!

Great picks here. I remember playing Pokemon and FF7 as a kid. FE Engage is another solid beginners pick I think.
Yea, playing Pokemon as a kid is a HUGE reason I like RPGs today.
