Hi Geoff, I do love a good zucchini cake! I usually make a chocolate zucchini cake, with a cream cheese icing to top it off. I use a 9 X 13 inch pan to bake that. Your recipe sounds delicious! I like the idea of including grated orange zest! 😋😊
@@geoffsbakingblog It has turned out beautifully Geoff.Moist and lovely flavours coming through,especially the orange zest`. I cooked and pureed bramley apples with no sugar added to put in the loaf.I think your addition of apple sauce reallymakes the cake extra moist❤
I was just looking for zucchini bread recipes without lemons or limes... and found this! - I don't have apple sauce (= puré???), but I think the same amount of carrot or pumpkin puré would make a good and combined tasty substitution, no? - And I do have some carrot pure frozen for making loafs.

Here is a mixed spice recipe I use.
2 tsp. ground cinnamon
2 tsp. ground nutmeg
2 tsp. ground allspice
2/3 tsp. ground cloves
2/3 tsp. ground ginger
2/3 tsp. ground coriander
1 1/2 tsp. ground mace

Hi JB. Yes you can swap out the apple puree/sauce for other things, more oil, yogurt and, as those that you suggest.

HI Spiderbirdie. I do eat courgettes as a veg. But they are really quite bland, so using them like this is a good thing.
