I sure wish the zucchini fairy would leave some on my doorstep! Funny story about growing zucchini. When I was 21 and first married, my new husband and I wanted to take part of my mother-in-laws garden for our little garden area. She was 40 years older than I was and had gardened for years. This would be my first garden. I told her I wanted to plant a row of zucchini. She kindly shared that maybe that would be too many. Of course I knew it all and said, "Oh, no. I want a whole row." Our garden thrived!! 🤣 Needless to say, I listened to her wise counsel from that year on. 😂
A friend of mine has a similar story. An entire row of zucchini!!!! It was starting to produce, when they went on a 10 day camping trip!! They could have fed all of Frankfort KY!!!

I make a spice cake using 3 cups of zucchini and less eggs. I think the difference between the bread and the cake is the pan you bake it in. I like it as it uses up more of all this zucchini. My daughter keeps bringing me more and more. Thumbs up. Grandma Sue in central Indiana
I always put 1grated zucchini plus grated carrot and finely chopped bell pepper and onion in meatloaf and spaghetti sauce. With a family of 11 two pounds of ground beef didn’t go far enough. Plus it was a good way to get more veggies into my kids. 🙂

This is what I did with zucchini: 1 or 2 good zucchini. Wash and split from end to end. Then chop into chunks. Place in 2 qt or 3 qt pan. Pour 1 jar of PREGO, FARMERS MARKET MARINARA over zucchini. About 1 tsp garlic powder (optional) in. Cook until about half tender. 1 pkg Hillshire sausage, polish or kielbasa. Cook for about 30 minutes. I eat it with garlic bread. OR ....... pour over spaghetti. Just however your mind gets creative according to your tummy! 😊😊😊
I did make this bread this morning, I added a few chopped walnuts and sprinkled cinnamon sugar on top. It's baking now and smells wonderful. I can't wait to taste it.
I take a zucchini cut in half slice of the halves into about four pieces lengthwise and toss them with salt, pepper, granulated garlic, and granulated onion and a little oil. Shake them in a plastic bag, empty them inti the air fryer at 270 for about 14 minutes last couple minutes sprinkle with Parmesan cheese. My husband loves them.

My mom and I used to make zuchini relish and she's in a nursing home no with alzheimers so I make it alone but am so glad I have the memory of us making it together.

I made this bread and it is delicious! I did add a cup of chopped walnuts which makes it more delicious! Also, my pans are smaller and I had about two cups of batter left over! This morning got out my waffle maker and made a waffle and it was so tasty!

One of my fav zucchini recipes is a zuc-cheese omelet. Take a zucchini your size and grate it onto a cotton kitchen towel and wring as much liquid out as possible. Put it into a mod sized bowl and add three eggs and about 2 oz of grated cheddar cheese, or cheese of your choice. Add salt, pepper to taste, and I like to add a pinch or so of cayenne and a sprinkle of nutmeg. Pour into a small omelet pan with hot melted butter and cover. I use a see through lid, so I have never timed it, but when the omelet puffs up and the top stops looking so wet, I take a large spatula and turn it over. That’s the most challenging part. I cook the other side about 2-3 minutes longer and then slide it into a plate. I eat the whole thing myself, but you and Melissa could probably split it. Serve with bacon, ham, sausage, fruit, or whatever you like. Try it. It’s delicious. I make it a lot.

That my mom always did when she baked she didn’t have parchment paper when we were kids what she did Jews was grease it with your butter or margarine and then you take a little bit of flour and put it in there and flowers at that and then it comes out, just as easily as per Cooper because you got it better than flowered

Oh, you are making me want zucchini bread. I guess I'll have to make some. Have you ever tried substituting applesauce for the oil, or half the oil? That step really cuts down on calories but doesnt seem to affect the bread. The oil is basically there to keep the bread moist and develop some body. The applesauce does the same thing. Works for me. Because (I know, never start a sentence with because ...but here I go...) you said you like to cook once and eat twice or more times im going to give you the recipe I use. We like this alot so I make a bunch. 4-5 8 or 9"zucchini 1-1½ small cans of tomato sauce (maybe 2 depending on your pan) Garlic powder Lawries Lemon Pepper Mozzarella cheese, shredded. Grated Parmesan cheese (I use Kraft) A quick note before I continue. No measurements are diven for the spices, the parm or the mozzarella. Those will depend on how much zucchini you have, how much you like garlic, lemon pepper and Parm. And how cheesy you like things. For us the answer is "A lot" to all of that. NOTE on tomato sauce and pan used: my pan is shaped like a flat bottom wok with high sides and narrower at the bottom. The reason this affects the tomato sauce is that as the zucchini releases its juice it will combine with the tomato auce and continue to raise the liquid level in the pan that helps cook the zucchini. If you are using a wide based skillet the released liquid will not rise high enough. Use the extra sauce as needed. Slice your zucchini into coins between ¼"-⅜" thick. Use a large skillet. Spray the skillet with non-stick spray. Scantily spread about 3 TBSP of tomato sauce on the bottom of the skillet. Add 1 layer of zucchini slices, not overlapping, or as little as possible. Season with salt, pepper, garlic powder and Parmesan cheese. Layer on more zucchini. Season as before. Pour on a few drizzles of tomato sauce. Repeat layers until you use up the zucchini. Pour over any remaining tomato sauce.¹ Cover and cook over medium or medium low. After zucchini has begun to soften and release its water THEN you may stir it. Cook to your desired doneness. Ours is soft but not squishy or falling apart. When that stage is reached pull half the zucchini to one side of the skillet. Top the uncovered portion with mozzarella chesse. Return moved zucchini placing it on top of cheese. Repeat for other side of the skillet. Now cover the surface of the zucchini generously with mozzarella cheese. Cover skillet again just until cheese melts. DO NOT BE AFRAID of using too much garlid powder, lemon pepper or parmesan. Each layer should be generously seasoned. This combination is fantastic. I hope you enjoy this as much as we enjoy ssome of your recipes we've tried.
Tom and Melissa, I would make: (You could tweak the recipe for 1 cup of zucchini instead of 2) Zucchini Fritters: 1 t Salt 2 Large Zucchini (Grated) 2 Large Eggs Chopped Green Onions 1 t Baking Powder 1/2 t Salt and Pepper 1 Cup Flour Pour salt on grated zucchini and set aside for 10 minutes so salt will draw out water. Squeeze out water from Zucchini and put in bowl. Add eggs, baking powder, salt, pepper, onions and flour. Put olive oil in pan and scoop out zucchini into balls. Flatten ball out and put in pan to sauté. Cook until brown on each side.
I just found your channel and you both seem like the sweetest most genuine people. Zucchini bread is one of my favorites of all time. I'd make zucchini fries with the other one. 2 medium zucchini 1/2 c. all-purpose flour 2 large eggs 1 c. panko bread crumbs 1 1/2 oz. finely grated Parmesan (about 1/2 c.) 1 tsp. garlic powder 1 tsp. kosher salt 1/4 tsp. freshly ground black pepper Step 1: Preheat oven to 425°. Line a large baking sheet with parchment. Step 2: Slice zucchini into matchsticks 1/2" wide and 3" long. Arrange zucchini on a paper towel-lined plate and pat dry. Step 3: Into a shallow bowl, pour flour. In another shallow bowl, beat eggs to blend. In a third shallow bowl, combine panko, Parmesan, garlic powder, salt, and pepper. Step 4: Working in batches, toss zucchini in flour until coated, then dip into eggs. Dredge in panko mixture, then arrange on prepared sheet. Step 5: Bake fries, flipping halfway through, until golden and crispy, 25 to 30 minutes. Step 6 : Transfer fries to a platter. Serve with desired sauce alongside. Zucchini Rice and Cheese Gratin I make this many times each summer and everyone loves it. INGREDIENTS * Butter for dish * 2 1/2 pounds (about 1 1/8 kg) zucchini (yes, weigh it!) * 2 1/2 teaspoons kosher salt (I use Diamond brand, use 1 1/2 of other brands) * 1/2 cup (90 grams) plain, uncooked white rice (when I used Basmati it took longer for the rice to cook but the texture was very nice) * 1 medium onion, minced (about 1 cup) * 5 tablespoons (75 ml) olive oil, divided * 2 large cloves garlic, mashed or finely minceds * 2 tablespoons (15 grams) all-purpose flour (optional) * 1/2 cup milk, as needed, although water or broth of your choice would work just fine (I used half and half) * 2/3 cup (55 grams) grated Parmesan cheese, divided * Salt and pepper DIRECTIONS: Heat oven to 325 degrees F. Oil or butter a 2-quart baking dish, or 2 smaller 1-quart dishes. Prepare zucchini: Wash zucchini and trim ends. Halve lengthwise, and if seeds are particularly large, core them out. Coarsely grate and place in a large bowl. Prepare remaining ingredients: In a large frying pan, cook the onions slowly in 3 tablespoons oil for 8 to 10 minutes until tender and translucent. Raise heat slightly and stir several minutes until very lightly browned. Stir in garlic and cook another minute. Add uncooked rice and sauté for another two minutes. Season generously with salt and pepper. (I deglazed the pan with a splash of stock) Assemble gratin: Transfer to bowl with zucchini and stir together with 1/2 cup liquid of your choice and all but 2 tablespoons cheese. Taste and adjust seasoning if needed. Transfer to prepared baking dish. Bake gratin: Cover tightly with foil and bake for 50 to 60 minutes, until rice within is cooked but not mush. Increase oven temperature to 450 degrees. Remove foil, drizzle top with remaining olive oil (or dot with butter), sprinkle on remaining cheese and bake uncovered until browned and crisp on top, about another 10 to 15 minutes. For extra color, you can run it under the broiler for one minute at the end.

Slice smoke sausage, onion, bell peppers, zucchini, cabbage, any vegetables you want. Fry the smoked sausage in a large skillet, set aside. Fry cabbage in bacon grease, set aside. Fry onions, bell peppers till almost done then add zucchini. When done add the smoked sausage & cabbage to skillet. Add seasonings such as basil, onion powder, garlic powder, red pepper flakes, etc. It's really good and can be made several different ways. My husband loves for me to make extra so he can take to work the next day.

Yummy! Ok, what to make with your leftover zucchini. Idea 1 - Cut it in half and scrape out the inside using a tablespoon and put in a mixing bowl- add stove top stuffing that you prepared per box instruction . Combine with zuchini well, then stuff back into your 2 zuchini halves - top with shredded cheese of your choice, I use cheddar. Bake and enjoy ! Idea 2- fried zuchini like your green tomatoes

I make a triple batch for six loaves. Two loaves fit in a gallon freezer bag. I would fill my freezer with different flavors plus chocolate zucchini cake. During the winter and spring if my family wanted dessert they would grab a loaf slice nuke butter and eat. I also add nuts
It is so nice to have goodies stashed away in the freezer! We love doing that with bread and cookie dough balls especially. We think it's really smart to cook and freeze ahead. Tom loves to say "Cook Once, Eat Twice."

I made this bread and it is delicious! I did add a cup of chopped walnuts which makes it more delicious! Also, my pans are smaller and I had about two cups of batter left over! This morning got out my waffle maker and made a waffle and it was so tasty!

One of my fav zucchini recipes is a zuc-cheese omelet. Take a zucchini your size and grate it onto a cotton kitchen towel and wring as much liquid out as possible. Put it into a mod sized bowl and add three eggs and about 2 oz of grated cheddar cheese, or cheese of your choice. Add salt, pepper to taste, and I like to add a pinch or so of cayenne and a sprinkle of nutmeg. Pour into a small omelet pan with hot melted butter and cover. I use a see through lid, so I have never timed it, but when the omelet puffs up and the top stops looking so wet, I take a large spatula and turn it over. That’s the most challenging part. I cook the other side about 2-3 minutes longer and then slide it into a plate. I eat the whole thing myself, but you and Melissa could probably split it. Serve with bacon, ham, sausage, fruit, or whatever you like. Try it. It’s delicious. I make it a lot.

That my mom always did when she baked she didn’t have parchment paper when we were kids what she did Jews was grease it with your butter or margarine and then you take a little bit of flour and put it in there and flowers at that and then it comes out, just as easily as per Cooper because you got it better than flowered

Oh, you are making me want zucchini bread. I guess I'll have to make some. Have you ever tried substituting applesauce for the oil, or half the oil? That step really cuts down on calories but doesnt seem to affect the bread. The oil is basically there to keep the bread moist and develop some body. The applesauce does the same thing. Works for me.
Because (I know, never start a sentence with because ...but here I go...) you said you like to cook once and eat twice or more times im going to give you the recipe I use. We like this alot so I make a bunch.
4-5 8 or 9"zucchini
1-1½ small cans of tomato sauce
(maybe 2 depending on your pan)
Garlic powder
Lawries Lemon Pepper
Mozzarella cheese, shredded.
Grated Parmesan cheese (I use Kraft)
A quick note before I continue. No measurements are diven for the spices, the parm or the mozzarella. Those will depend on how much zucchini you have, how much you like garlic, lemon pepper and Parm. And how cheesy you like things. For us the answer is "A lot" to all of that.
NOTE on tomato sauce and pan used: my pan is shaped like a flat bottom wok with high sides and narrower at the bottom. The reason this affects the tomato sauce is that as the zucchini releases its juice it will combine with the tomato auce and continue to raise the liquid level in the pan that helps cook the zucchini. If you are using a wide based skillet the released liquid will not rise high enough. Use the extra sauce as needed.
Slice your zucchini into coins between
¼"-⅜" thick. Use a large skillet. Spray the skillet with non-stick spray. Scantily spread about 3 TBSP of tomato sauce on the bottom of the skillet. Add 1 layer of zucchini slices, not overlapping, or as little as possible. Season with salt, pepper, garlic powder and Parmesan cheese. Layer on more zucchini. Season as before. Pour on a few drizzles of tomato sauce. Repeat layers until you use up the zucchini. Pour over any remaining tomato sauce.¹ Cover and cook over medium or medium low. After zucchini has begun to soften and release its water THEN you may stir it. Cook to your desired doneness. Ours is soft but not squishy or falling apart. When that stage is reached pull half the zucchini to one side of the skillet. Top the uncovered portion with mozzarella chesse. Return moved zucchini placing it on top of cheese. Repeat for other side of the skillet. Now cover the surface of the zucchini generously with mozzarella cheese. Cover skillet again just until cheese melts.
DO NOT BE AFRAID of using too much garlid powder, lemon pepper or parmesan. Each layer should be generously seasoned. This combination is fantastic.

Tom and Melissa, I would make:
(You could tweak the recipe for 1 cup of zucchini instead of 2)
Zucchini Fritters:
1 t Salt
2 Large Zucchini (Grated)
2 Large Eggs
Chopped Green Onions
1 t Baking Powder
1/2 t Salt and Pepper
1 Cup Flour
Pour salt on grated zucchini and set aside for 10 minutes so salt will draw out water.
Squeeze out water from Zucchini and put in bowl. Add eggs, baking powder, salt, pepper, onions and flour.
Put olive oil in pan and scoop out zucchini into balls. Flatten ball out and put in pan to sauté. Cook until brown on each side.
I also make this yummy bread and add walnuts 😮

I just found your channel and you both seem like the sweetest most genuine people. Zucchini bread is one of my favorites of all time.
I'd make zucchini fries with the other one.
2 medium zucchini
1/2 c. all-purpose flour
2 large eggs
1 c. panko bread crumbs
1 1/2 oz. finely grated Parmesan (about 1/2 c.)
1 tsp. garlic powder
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
Step 1: Preheat oven to 425°. Line a large baking sheet with parchment.
Step 2: Slice zucchini into matchsticks 1/2" wide and 3" long. Arrange zucchini on a paper towel-lined plate and pat dry.
Step 3: Into a shallow bowl, pour flour. In another shallow bowl, beat eggs to blend. In a third shallow bowl, combine panko, Parmesan, garlic powder, salt, and pepper.
Step 4: Working in batches, toss zucchini in flour until coated, then dip into eggs. Dredge in panko mixture, then arrange on prepared sheet.
Step 5: Bake fries, flipping halfway through, until golden and crispy, 25 to 30 minutes.
Step 6 : Transfer fries to a platter. Serve with desired sauce alongside.

Zucchini Rice and Cheese Gratin
I make this many times each summer and everyone loves it.
INGREDIENTS
* Butter for dish
* 2 1/2 pounds (about 1 1/8 kg) zucchini (yes, weigh it!)
* 2 1/2 teaspoons kosher salt (I use Diamond brand, use 1 1/2 of other brands)
* 1/2 cup (90 grams) plain, uncooked white rice (when I used Basmati it took longer for the rice to cook but the texture was very nice)
* 1 medium onion, minced (about 1 cup)
* 5 tablespoons (75 ml) olive oil, divided
* 2 large cloves garlic, mashed or finely minceds
* 2 tablespoons (15 grams) all-purpose flour (optional)
* 1/2 cup milk, as needed, although water or broth of your choice would work just fine (I used half and half)
* 2/3 cup (55 grams) grated Parmesan cheese, divided
* Salt and pepper
DIRECTIONS:
Heat oven to 325 degrees F. Oil or butter a 2-quart baking dish, or 2 smaller 1-quart dishes.
Prepare zucchini: Wash zucchini and trim ends. Halve lengthwise, and if seeds are particularly large, core them out. Coarsely grate and place in a large bowl.
Prepare remaining ingredients: In a large frying pan, cook the onions slowly in 3 tablespoons oil for 8 to 10 minutes until tender and translucent. Raise heat slightly and stir several minutes until very lightly browned. Stir in garlic and cook another minute. Add uncooked rice and sauté for another two minutes. Season generously with salt and pepper. (I deglazed the pan with a splash of stock)
Assemble gratin: Transfer to bowl with zucchini and stir together with 1/2 cup liquid of your choice and all but 2 tablespoons cheese. Taste and adjust seasoning if needed. Transfer to prepared baking dish.
Bake gratin: Cover tightly with foil and bake for 50 to 60 minutes, until rice within is cooked but not mush. Increase oven temperature to 450 degrees. Remove foil, drizzle top with remaining olive oil (or dot with butter), sprinkle on remaining cheese and bake uncovered until browned and crisp on top, about another 10 to 15 minutes. For extra color, you can run it under the broiler for one minute at the end.

Slice smoke sausage, onion, bell peppers, zucchini, cabbage, any vegetables you want. Fry the smoked sausage in a large skillet, set aside. Fry cabbage in bacon grease, set aside. Fry onions, bell peppers till almost done then add zucchini. When done add the smoked sausage & cabbage to skillet. Add seasonings such as basil, onion powder, garlic powder, red pepper flakes, etc. It's really good and can be made several different ways. My husband loves for me to make extra so he can take to work the next day.
Best way I can get my fruits and veggies down is to put them in a cake😊👍

Ok, what to make with your leftover zucchini.
Idea 1 - Cut it in half and scrape out the inside using a tablespoon and put in a mixing bowl- add stove top stuffing that you prepared per box instruction . Combine with zuchini well, then stuff back into your 2 zuchini halves - top with shredded cheese of your choice, I use cheddar. Bake and enjoy !
Idea 2- fried zuchini like your green tomatoes

I make a triple batch for six loaves. Two loaves fit in a gallon freezer bag. I would fill my freezer with different flavors plus chocolate zucchini cake. During the winter and spring if my family wanted dessert they would grab a loaf slice nuke butter and eat. I also add nuts
It is so nice to have goodies stashed away in the freezer! We love doing that with bread and cookie dough balls especially. We think it's really smart to cook and freeze ahead. Tom loves to say "Cook Once, Eat Twice."
Tom ... on your parchment paper hack.... Do you completely line the pan or just cover the flat bottom??
