Thank you for your recipe. I bake zucchini bread in the past. This time I try your recipe. I only used 1 cup of brown sugar and no vanilla. I used 1/3 of a cup of zucchini juice instead of throw it away. It came out so moist and delicious.

I like that you use basic tools like a whisk, etc. because some people do not have the fancy equipment and that way they can still relate to your cooking and feel like they can make those dishes too.
I just made this and it is absolutely out of this world! I used 1 teasp cinnamon, 1/4 teasp cardamom, 1/4 teasp nutmeg. I substituted 3/4 cup melted butter for the vegetable oil and I added 1/2 cup dried cranberries. I also surrounded the loaf pan with a soaked cake strip (from your previous video). I just can't believe how amazing this is!! My only tiny comment is that this is not quick. There are 15 ingredients, one of them grated, one of them toasted, so it is time consuming to assemble all of that, and then it bakes for an hour. So, it's not something you can whip up at the last minute. But its' SO WORTH the time investment. I love how substantial the loaf is as well. Thank you SO MUCH for sharing another one of your awesome recipes!!! :-)
Hello there, so I made this recipe and wow! The only thing I tweaked was using coconut oil, added 3 eggs because it was a little dry. I also added come chocolate chips as well for my kids and husband. This was an easy recipe and was able to made a loaf of 8 cuts and 6 muffins! This is now my fav to make especially with all this cold and rainy weather. Thanks for sharing ❤
Doubled the recipe, sans the apple sauce since I didn’t have any and substituted honey for the sugar. Added a TON of fresh zucchini from our garden and chocolate chips and oh my gosh, the best!!! It held its shape and everything! Thank you it’s my new go to recipe for zucchini bread!

I just pulled zucchini out of the garden and harvested honey the other day (7 quarts of Italian Bee Honey) and I did some substitution of some of the sugar with the honey but followed your recipe to the “ T”! Wow the greatest zucchini bread or any kind of fruit/veggie bread We’ve ever had. Thank you. My chickens give me two dozen eggs a day and the Crème Brûlée recipe you have is the greatest ever. My daughters boyfriend was wanting zucchini bread so I decided to try your recipe. I made the right choice, he loved it! I tested it at the one hour mark but it was still not done so I gave it another ten minutes. I did cover it loosely with a tent of foil, I was keeping my fingers crossed that it wouldn't come out dry. It did not! Thank you, it's a keeper!

This was delicious! I didn't have applesauce, so I added one grated, peeled apple and 1/3 cup melted butter. I also added a little extra granulated sugar and doubled the spices. This was the best that I have ever had. Thank you so much for sharing your recipe!

I made your zucchini bread for National Zucchini Bread Day and have done to the librarians at our local library for National Library Week. Very tasty! (I skipped the walnuts, because I can't do walnuts, but sprinkled chopped candied pecans on top and it was yummy.)

I just viewed a 'famous' personality who has another cookbook about to come out; she uses 1.5 cups of oil for a 9x9 loaf, which is large but seems way too much oil. You always have great tips when giving your recipes. Thanks so much...will be making this zucchini bread!!
This recipe was awesome. You can easily substitute for vegan ingredients. BTW, I used whole wheat flour and needed to add about 2/3 cup of oat-milk to make sure the dough was wet enough because I didn't have applesauce, but it worked out great! Also used agave instead of brown sugar and olive oil instead of vegetable oil. Will have to try with the *correct* ingredients next time hehe

John, Great to see you going strong during COVID. I discovered the zucchini cake in my childhood. I was amazed by the functionality of the vegetable to give moisture to my zucchini cake without adding a strange veggie taste to my sweet cake. Then I thought about it ... carrots are used in carrot cake. Then, I recognized there was a pattern of veggies used in cakes. Can you think of any other veggies that humans use in cake, and would you be willing to do a video about the beauty of veggies in cake? Cheers, MissTina

I made this exact recipe and followed all your baking instructions and it was AMAZING. I do want to ask for advice though, I cooked it at the temp and time you said and part of the middle didn’t fully cook and I don’t know why. Can I put it back in if this happens without burning it? It was literally like a slice that didn’t cook through
Same thing happened to me. I put it back in the oven for another 6 minutes. Removed from the oven, left it in the pan for 10 minutes, when I took it out, a small section got stuck to the bottom. The loaf did come out well.
All ovens do not cook the same, some people have gas, propane, electric so each oven temps are different. Some can run higher or lower temperatures depending the age of the oven. I always start at the set amount of time, but set the timer maybe 5-10 minutes sooner. If it appears I need more time than that, I adjust from there. Plus if you use too big of a pan, it will cook faster, too small and it may take longer to cook. Plus always preheat your oven for at least 20-30 minutes. Also don't keep opening the door up, that reduces your temperature and it will take a couple minutes to get back up to 350, which could result in taking longer to bake.

Excellent recipe! I didn’t have applesauce but I had some leftover pumpkin purée and it worked perfectly! So moist and delicious!
