I am using chicken breast along with pork and alligator sausage - a novelty we don’t usually see in grocery stores in NW Georgia, but since the pandemic some unusual selections have been showing up there. Andouille would also be great in this soup.
I make something very similar I cook the ham bone to make a stock then add everything you just did, (no chicken), extra ham, I like the bean mix, even better the next day. I do not can it though, but that looks good. You are just the canning queen, that canner is a work horse.

Ham is not on the list of meats approved by the USDA. Because it has been cured, it is denser than raw meat. Ham can be added when the soup is heated before serving.
I'm curious if the lemon juice would be something I would want to leave out. I'm not fond of strong lemon flavor specially in a soup. what are your thoughts?

This sounds like a short cut cassoulet. But whatever it sounds good and healthy.
Similar yes, but cassoulet isn’t a soup. 😊 I wouldn’t consider it a shortcut by any stretch.
