Part of me wants to feel bad for these people getting publicly humiliated like this but then I remember that they were actively serving food that could cause serious bodily harm to someone and even if it didn’t, is at least absolutely disgusting. Then I don’t feel so bad anymore.
I think the number one delay in them correcting their inspection failures and code violations is money: remember, most of these are family owned restaurants. They appear to be operating successfully, but most like the costs after salaries and the like doesn't leave much room to make improvements such as periodical pest control, asbestos, etc. I'm not saying it's right, but it's something to factor in. Where I live, the county actually offers restaurants that have failed inspections services to remedy mostly every singly problem at costs lower than what they would normal pay.
if it makes you feel any better. sometimes there is legit nothing the owner can do. some cities dont really take care of their infrastructure allowing for problems to arise that impact local businesses and homes. I used to live in an area where roaches infested the sewers and would just come up through them to any place with a drain.

I worked at Old country buffet and we ran a really tight ship we definitely didn't fail a health inspections we cleaned regularly although it was kind of tight to fit that time in but we did.
I actually looked at many places I eat at and one place (Chinese of course) was recently shut down temporarily due to roach infestation, mice droppings in the kitchen, poorly stored food, etc. Never again. Same with a place near my job that's in a more affluent neighborhood. These places need to be shut down without the ability to reopen.
I used to work at Texas DSHS in the Manufactured Foods and Drug Division. It also housed the retail foods division. I’ve seen horrible things, but not all restaurants are bad. I’ve even seen one restaurant with a proud 98 health score since I stopped working for DSHS in Texas. Your comment is false
I worked for Sheetz (which is a gas station with a kitchen for those who have not heard of them) and our kitchen was always clean. Sheetz runs a very tight ship and has their own inspection team who randomly visit once every 6 weeks. This is in addition to the state inspectors.

Spent 20+ years in Pest control as a QA auditor/manager and absolutely correct. Fast food restaurants and chains usually get inspected by corporate. Raises and bonuses rely heavily on sanitation. Seen Zagut star restaurants dirty as hell while local MCDs was spotless.
You have to go beyond the perimeter of the building to look for the rat burrows and start from there.the bait boxes need to be placed at the edge of the property and checked and refilled often otherwise you don't have control,you need the pest service every 2 weeks as a minimum for any kind of infestation especially rats and you need to check your structure for entry points and seal them once you find them.if you have rats present in the building you really need to close for about 2 weeks to properly clean and repair things but nobody ever does that

I grew up in a successful restaurant family and have a good idea of what it takes to keep the food prepping areas and equipment Clean and Free of infestations. My dad and I spent a good deal of time after hours cleaning up and on weekends he would go up and do deep cleaning behind all the equipment. Years later as a truck driver delivering food to restaurants, I was appalled to see the conditions present in almost every restaurant I delivered to, including the very best restaurants and high-end fine-dining establishments. It all comes down to who's in the kitchen doing the work and today it's mostly young people who don't know what they're doing, or people from different cultures who have third world standards. Thank God for food inspectors!

In both of these restaurant cases, after the violations are found they are usually given XX amount of time to fix them before a surprise inspection is done. And if there are still too many violations then they shut the place down for XX amount of time.

In both of these restaurant cases, after the violations are found they are usually given XX amount of time to fix them before a surprise inspection is done. And if there are still too many violations then they shut the place down for XX amount of time.
