Stir Fried Bee Hoon Recipe
Ingredients
200g Bee Hoon (Rice Vermicelli)
10g Garlic cloves
10g Shallots
25g Olive oil
300g Water (see *Tips)
30g Light soy sauce, adjust to taste
10g Dark soy sauce, adjust to taste
5g Oyster sauce (optional)
1/2tsp White pepper powder
1/2tsp Salt, adjust to taste
25g Carrots, cut into strips (5cm)
100g Cabbage, cut into 5cm length
75g Boneless chicken breast, cut into thin slice
75g Fish cakes, cut into thin slice
Preparation
1. Place a large bowl on mixing bowl lid, weigh in bee hoon. Place large bowl with bee hoon under running tap water until bee hoon is fully covered with water. Immediately set a timer for 5 min (see *Tips) for soaking. Drain with Varoma dish and transfer back to large bowl. Set aside for approx. 5min until the texture of the bee hoon is slightly sticky.
2. Meanwhile, place garlic cloves and shallots in mixing bowl, chop 5 sec / speed 5. Scrape down sides of mixing bowl with spatula.
3. Add oil, sauté 4 min / 120°C / speed 1.
4. Add water, light soy sauce, dark soy sauce, oyster sauce, white pepper powder and salt, cook 5 min / 100°C / spped 1. Pour approx. 1/2 portion of boiled sauce into bowl with bee hoon, mix with aid of chopsticks until all bee hoon are evenly coated with sauce. Set aside. Place mixing bowl with remaining sauce back to base unit.
5. Place carrots and cabbage, cook 1 min 30 sec / Varoma / Reverse / speed 1 (see *Tips).
6. Add chicken slices, reserved bee hoon (see *Tips) and fish cakes, cook 4 min 30 sec / Varoma / Reverse / speed spoon. Scrape bottom of mixing bowl with aid of spatula until all bee hoon are evenly coated with sauce. Let bee hoon stand in mixing bowl for 1-2 min before serving.
*Tips
💡Different brand of bee hoon may require slightly different soaking time. Soak bee hoon approx. 5 min until texture is loose and thoroughly wet.
💡The ratio of bee hoon to water is always 100g additional to the quantity of bee hoon. For example, if you use 400g bee hoon for the recipe, increase the water to 500g and double the rest of the ingredients while preparation steps and settings remain.
💡The setting of temperature at Varoma in step 5, 6, and 7, is to heat up the bowl at maximum as soon as possible, the actual temperature may not reach Varoma.
💡In step 6, bee hoon must be added immediately before temperature drops below 85°C.
