That looks delicious and I noticed that you said it was 'very SIMILAR' to pho. Because you only used 2(star anise, cinnamon, not roasted) instead of the full blown 7 roasted pho spices, so the aroma would be on the much lighter side. Furthermore, you did a good job prepping the rice noodles because you either soaked them in hot water(not boiling water) or did a quick blanch. The result was that the noodles retained their shape instead of being mushy and in small pieces. Overall, this looks like a very tasty recipe and I am happy to give you a thumb-up. I just have one suggestion for improvement - use only the white part of the scallion in the both and save the green part to when you serve the dish. Thank you!
