    classic Russian cookbook A Gift to Young Housewives gives the first known recipe for Govjadina po-strogonovski, s gorchitseju, "Beef à la Stroganov, with mustard", in its 1871 edition.[3][4][5] The recipe involves lightly floured beef cubes (not strips) sautéed, sauced with prepared mustard and bouillon, and finished with a small amount of sour cream: no onions, no mushrooms. A competition purported to have taken place in 1890 is sometimes mentioned in the dish's history, but both the recipe and the name existed before then. Another recipe, this one from 1909, adds onions and tomato sauce, and serves it with crisp potato straws, which are considered the traditional side dish for Beef Stroganoff in Russia.

    my favorite childhood dish, you can also use pork & chicken if you can't afford beef (like the steaks), and sometimes this is served with french fries (homemade) it's really really good i just love it you can also use any short pasta like rigatoni, penne, bowtie. ❤️

    Adding salt to those veggies makes them take forever to caramelize! They'll swim in their water content, and take twice as long to caramelize correctly. This is a waste of time and bad info.

    • @woogie6785
      @woogie6785 4 ปีที่แล้ว +2

      That's not necessarily true! That's a very wide pan with space for that water to evaporate. With that water will come sugar from the onions as well. I personally consider those "well browned onions" and not really the same as low and slow "caramelized" onions so I do agree with you there. Glad someone else has a knack for the science behind it! =D

    Separate key ingredients, cook separately, once done, mix all together at the end??? You would be thrown out of any professional kitchen in a second if you did this.

    Martha was just inconvenient here. The guest is trying to explain the recipe step by step. But the host keeps asking things out of time, interrupting and confusing everyone. It’s clear the guest lacks technical skills, like deglazing with stock instead of cognac or any other alcohol beverage.
    Another interesting fact I noticed is that the guest mentions the budget TWICE. Sounds like she is bothered with something. I don’t know... would it be possible that the cast gave miserable 20 dollars for the competition? I couldn’t tell.
    Then we see poor girl, speaking faster, like she notices this is not a good experience. So, she keeps talking to finish sooner.
    Then she mentions the chives she brought. And Martha, always flawless, has to mention “terragon”.
    To finish, Martha just puts the fork inside her mouth and CUT. It’s clear a lot of tension is in the air here, folks. I mean, Martha is my goddess. But, the more she ages, the more she forgets that hosting is not about impressing your guests... it’s also about teaching with humility... understanding their needs... it’s about empathy.
    Of course it is a competition. But, who cares? If you do things wrongly and do not have filet mignon and terragon, then you’re not worthful?
    Remember your mother, Martha.
    She always cooked with very little.
    You have the indulgence
    Many people don’t.
    So, if you want more viewers, chives is gonna have to do the job pretty well!
    Still a fan. Don’t judge me. Want my diva to know she’s human and not flawless afterall.
