Beth i finally tried this recipe last night and i must say it's deliciousssssss !! I might have under baked it just a tiny little bit tbh cause the texture was rather slightly liquidy, but it still tasted divine.

This is so beautiful. I am having some trouble with the chocolate, is there a specific kind of chocolate? The one I'm using doesn't have that nice liquid consistency, its too thick... any suggestions?
Ah OK the best way to fix that is to add some vegetable oil (or canola works too) 1 tsp at a time stirring with a fork until thinned. Be sure the chocolate is warm when you do this since it will incorporate easily that way. And it should thin right out and become more swirlable :) Also I find this brand is really great for this recipe. Ahh I would add ricotta and a bit of mascarpone cheese. Since ricotta alone may be too grainy and not stand up structurally without something heavier. A little mascarpone would help. I do 8 oz of each. Keep me posted on how that turns out! :)

Hi Beth I made this cake last night for the fall themed potluck today in our office. Boy, it was a great hit! Everyone was in Awwww and enjoyed the cake But I had trouble with my crust which was extremely fragile and every time I cut through the cake it made a huge mess. What I did wrong I can’t figure it out Can you help ? Any idea ? Thanks and love you lots
Ah yes the ol' crumbly crust issue! I know it well :) OK, easiest way to fix that is by adding more butter to the crust. This can vary depending upon the brand of cookies you use (since some have more butter/oil in them than others) The recipe currently calls for 5 tbsp but you could definitely increase this all the way up to 8 tbsp. The trade off tough is that the crust can become too hard if there's too much butter. So maybe try 6-7 tbsp next time and see if that's better! I also find these cookies are the best for a chocolate crumb. amzn.to/2lOAUt5
