    Wow, what a great way to get rid of 8lbs of strawberries with about a 2 day shelf life!!! It's really yummy I took hala white sugar to equal part of piloncillo and wow. If you don't speak Spanish Google the word piloncillo and add it to your compote. Thanks a bunch 4 the recipe😚

    Very nice recepie! I never tought you can do it without water, it is very syropy 😋
    In Bulgaria we make compotes of any fruit with water and store them in the basement for the winter. Tho' with water it becomes like a juice with fruits inside. Still good, love them, just drank and ate a jar of pear compote. I will try your recepie! :)

    I've made lots of your recipes and it all gave me 100% success 😊

      When I make a fruit sauce I don't cook the fruit, normally I just process it in my food processor with sugar. Whereas a compote (stewed fruit) is cooked.

    I use mine to flavor my homemade yogurt :) My grandmother always made strawberry compote . . . we all ate it for breakfast on toast . . . mmm nostalgia :D

    Hi Stephanie I love this strawberry compote and the ideas on how to use it. I was wondering, could I use granulated sugar substitute instead of white sugar or would it not work? Just curious

      I've never made Empire Biscuits. Just looked them up, and they sound delicious. Definitely something I will have to try making.

    Nice and easy, Thanks. I am going to let it go cold and then mix some through plain full fat yoghurt to make an almost healthy strawberry yoghurt. If that goes well I am going to make my own yoghurt too.

      Do you think this would work mixed through the yoghurt as a 1ltr batch that will then sit in the fridge for perhaps a week or would it likely split the yoghurt? Previously I have tried mixing through fresh banana but the next day the yoghurt had split and the banana went brown and pretty horrible. Otherwise, perhaps I should put the strawberry sauce in a jar possibly stored in the fridge and then mix some through the yoghurt through as I make individual bowls for immediate consumption.

    Thank you so much for so many amazing recipes. Joy of baking has been my most favorite baking channel for a long time. I was wondering have you ever tried the Starbucks' Very Berry coffee cake? It's a very delicious cake and somehow is airier than other coffee cakes I've tried. There are different recipes for it on the web. Maybe you could get a chance to bake that and share the recipe with us with your personal magic touch? :) Thanks a bunch!

    I try making this according to your recipe and it tastes great! But mine turn out cloudy.. Not as shiny and clear as yours.. 😔What might be the cause of that?

      Did you cut the strawberries by hand? Don't use a food processor to cut the strawberries. And don't over stir or mash (press down on) the strawberries as they're cooking.

      I haven’t tried canned strawberries but it should be okay. You may need to reduce the sugar if they are sweetened.

    Sounds like it would be a good recipe for less than delicious strawberries or when they are out of season.
    I can't see how anyone would want to cook berries in summer when, if the fruit is ripe, it is so delicious raw, as is--- and so much more healthful (with live enzymes-- that die during cooking) on its own, raw as grown in Nature!
