I like only arachuvitta sambar it gives good flavour and rich in taste. Sun dried - raw sambar powder it gives raw flavour while eating. Is it correct or not? In oil if we fry it gives good taste. According to you which one is preferable? These are my doubts about sambar powder.
Sun dried sambar powder will not have raw smell. We need to cook in tamarind juice for atleast 10 mins to get rid off the raw smell. If we want to make quick sambar we can use sun-dried raw sambar powder. But if we want more quantity with much more flavor then freshly ground sambar spice paste is the best choice.
Madam in Kalyan sambar you have not added pepper, In other sambars you have added pepper and zeera. Are pepper and zeera are necessary in any sambar recipe or not? How can I come to know about its usage and what is the difference between these sambars i.e. without and with pepper? Please clarify my doubt I'm a Telugu person. I'm having confusion about the usage of pepper in sambar recipes. You give answer through my mail id. I'm a Telugu Brahmin.
Pepper is not needed. But cumin we can add. We can add 1/2 tsp of cumin with the dal while pressure cooking that way it till help in proper digestion. Or we can grind it with other grinding ingredients.
