Food addictions are really hard to overcome for some people. I feel for you because you want your wife to have a better quality of life. We have friends and family that we care about who could thrive on the carnivore diet but they won't let go of their poor food choices. We hope your wife gives is a try.

Are your steaks tender? I don’t know anything about a chuck roll and breaking it down but would love to buy one. I use a slow cooker for chuck roast because they’re tougher. We just bought a meat grinder to grind our ground beef from chuck (haven’t used it yet) can you do a more detailed video on how to cut the beef? 🙏🏼🙏🏼🙏🏼

You bought the whole chuck. Only the part that is the eye, is an extension of the ribeye. The ribeye and chuckeye are adjacent to each other on the body. The rest of what you have is just chuck. It may be tasty, but only the eye is like a ribeye.
You guys! I just bought an 83 LB. box of chuck roll at our Costco in N . Ca. For $4.29 LB. 🥩🥩🔥 I have called the supermarket when having a great sale on ground beef & ordered 100 LB &. they have no problem w/it. Set a time them for pickup & they grind it up. That way too it hasn’t been sitting in the meat trays😊 Thank you so much for sharing this tip with/us❣️
Good video I will definitely try this. If I could suggest, leave them in the processors packaging in a cold refrigerator for at least two weeks up to four weeks for wet aging then do your butchering and freeze. Day and night difference on the skirt steaks that I do this with. Just keep them in their process her package and leave them in the fridge for three weeks.

That's part of the process. Just keep getting back on the carnivore wagon. Don't give up no matter what. Every day you are carnivore, you are helping yourself. One fellow who was dealing with lots of cravings would say to himself, I can have "whatever I craved after bacon and eggs". So do some bacon and eggs first and then see if you still want the "whatever" you are craving. I thought that was a brilliant way to deal with cravings and a lot of times it works for me! When it doesn't, I just keep going and start a fresh the next day. Wishing you the best of healing and health! 🙏
I just stumbled across this video and when the butcher came out with the box of meat, I had a PTSD flashback. I use to deliver for US Foods. If you don't know, it's one of the handful of companies that distribute food to restaurants both big chains and local restaurants. I use to deliver a ton load of those exact boxes of beef from that exact brand "Swift". Those boxes are really heavy. They weigh between 50-80 lbs, sometimes more. If you decide to go this route and get meat from Costco and get multiple boxes, give the cart to the worker as long as it okay with them, so they're not walking back and forth carrying heavy boxes. The time I spent working for US Foods, i noticed a lot of restaurants share the same products from meats to produce and spices etc. Crazy to think the same exact brand of meat in this video can be an expensive steak at some fancy restaurant. Also, I believe and I'm not exactly sure, but if you have a us foods warehouse in your area, I believe you can also purchase bulk items without being a business owner of a restaurant. You just set up an account, place the order online and just pick it up. I would double check cause I could be wrong. I was just a truck driver but use to see a lot of people picking up stuff and loading it in their personal cars. Majority I'm sure are business owners picking up last minute stuff, there were so many of them, It had me thinking if they were opened to the public as well.
I spend roughly 150-200 per week for groceries (I'm including everything in this even toiletries, but most of this is food), so if 290 lasts you 3 weeks, that is good.
actually if they eat 3.5 lb/day that's only 34 days for 120 pounds and it's around $17 a day for the steak alone. I took calculus don't hate. Meanwhile my BEAN dinners are about 80 cents a week so tell that to the cattle association
@infringinator They bought 138lbs of chuck. They eat 3.25lbs a day at 2 meals each, 16oz per meal for him, 10oz per meal for her, so it'll last them exactly 43 days. At 581$ for both cases, it costs them 13.51$ a day.
Just FYI, brisket is normally around $3.49 per lb and often times it’s less than that as well. You can also find great deals at Aldi and Kroger. I’ve been able to find chuck at $1.99 recently. Around Christmas time I’ve been able to score rib roasts (ribeye) for $4 per lb. Then you can cut steaks or use them as roasts as well. I usually pick up two full rib roasts and then cut and vac seal as steaks and smaller roasts.
With prices the way they are I'll be going your way. I buy the case of 80/20 ground beef, whole rib eye in cryovac but never heard of chuck roll. Thanks for the awesome video.
We did a costco ribeye roll and the price was the exact same if we had purchased them already cut. The only benefit was we were able to cut them into the sizes that we wanted. We freeze it, so we like to cut some of them kind of thin so they don't take long to defrost or cook if we are in a hurry or really hungry.
Yes,it's not cheaper other than my dogs get scraps to eat too.i just go to the commissary at ft Jackson. And buy what I need for a couple weeks .80/20 ground beef is always cheap there.
Different faces, different house~ EXACT same everything else, literally you guys! Same shopping in bulk, same butchering w/Dan taking out trash & recycle & feeling a little bad that I'm doing all the cutting/wrapping~ but not really, since we both prefer that I do tbh, it's all good=). Same week's worth in fridge, rotating out from freezer, etc.. also 90~95% of what we eat every day too, though I'm not always eating twice, Dan usually does. It's taken me almost 3 yrs to get my appetite up to where it is now, which is about 10~14 oz per day of meat, plus eggs & fat bites, same same. Too many years of grazing, thinking that was best for my health, but it shrunk my stomach & appetite. *Plus, I was in menopause when we started, so that was part of it too~but no meds, no HRT, no wacky symptoms either btw. Sometimes we get sub primal whole NY or Ribeye & cut that up too, but chuck roll is where it's AT, in our opinion~so darn good! Hey, thx for sharing tip on sprinkling fat bits w/gelatin, will be trying that too. Believe it or not, I even have that exact same green canister of Vital Protein brand right now, but I bought it for $5 at our local discount store(Peoria Discount Grocery), so whatever brand is there. They buy pallets from Sprout's & other stores of expensive items they couldn't sell for ridiculous retail, so we swoop in & get lots of good stuff for super cheap~ I love that place! Anyhow, I'm going on too long as usual~ always so good checking in w/you two. I truly love knowing how many of us are out here eating proper food & absolutely thriving, feeling our very best, AND.... enjoying our amazing lives!! Oh, I like the way you operate!!! Thank you for taking the time and putting in the effort to create and share this video with us. I’m certain it has opened a lot of eyes to how they can save a great deal of money if they eat beef regularly. I am in Canada and just checked the Costco website. The price is $16.49 per kg which makes a 30kg (66lb) case of chuck roll $494.70 for Canadian AAA Grade chuck roll. Because everything else is more expensive, this still represents significant savings to break it down yourself. For people doing this on the regular, I would guess that a quality guided knife sharpening system would be a great benefit. I already have an EdgePro which will come in handy to buy beef this way.
I'm right with you this one only I sous vide my. I cut them up into big steaks and cook 20lb at a time. Cook them for 32 hours in the sous vide then I freeze some and save our what want to eat. You can sear them if you like or heat them up in the microwave even. I don't have to cook for like a week. I just take what I need out of the freezer when I need it. Chuck roll is the way to go. I only eat Chuck for beef can fish sardines, herring eggs and butter that's it. I've been doing this for over a year now and I'm not going back. Glad you found the Chuck rolls❤
You might want to check out to see if you have a Costco business in your area. You need a Costco business membership to get in though. The Costco business has a huge walk in fridge where these boxes are stacked for you to take. Not sure it might be cheaper there since its as direct as you can get to the whole box.
I was hoping you would show an easy way to cut up the roll into steaks as the other channels that show this are complicated and produce a lot of what they call "meat to grind into hamburger". They don't seem to get a lot of steaks out of their "rolls". Great channel!

I am on lion diet meat only...I eat costco organic 85% hamburger 3 meals a day. My total cost to eat is about $3 per meal. I do also eat organic ghee i make myself. Not doing this diet forever but it's helped a lot with chronic illness.
Hi Guys, I Love Costco and Sam’s. I live within a 10 mile radius of both and have the top tier membership for both. I love their chicken thighs and steak and salmon. That’s all I want and lots of salads and veggies. Sam’s here in Sarasota gets great strawberries and blueberries and broccoli florets and the salad in bulk is amazing. Great Air Fryer tricks!! Bone is small piece that was missed after Chuck was Separated from blade bone in processing plant. Get that on regular basis while cutting chucks in our market. 👍

Wow. I just pulled mine out of the garage to take to donation. Lol!! I used to use the heck out of it, but it's so big and cumbersome. I've tried desperately to get an air fryer (bought 4 of them) but I can't get past that plastic smell. It makes me sick. I've done all the tricks for the "burn off" but it's till there. I might have to give the nuwave another try because it doesn't smell for sure. Ugh!! It's so big though!!😩
Ive had several of them but they burn up too quick or something just seems to go haywire. I did love how they cooked though! Crispy all the way around. Get drip off at the bottom nice and juicy.
You said Prime but the label said Choice. Still pretty good. I highly recommend that you get a Victorinox actual “butcher” knife instead of that chef knife. It will make your processing way faster and easier!
i own a farm estate in the UK and we always eat our own produce and encourage people to buy from the farm shops... you get better value for your money... we do pork, beef, chicken, turkey, pheasant, duck and goat... then various dairy products, anyone wanting to stock up in bulk i advice to get a actual walk in freezer, cheaper than 3 to 4 chest freezers... even cheaper if you are on solar... also what i like to do is any tiny off cuts i quickly deep fry for snacking on... grand kids love it... we bought a ninja twin raw airfryer a few months ago we hardly use the main oven... how often do you have pork?

The last time I bought beef it was a big plastic bag like that from Smart and Final, but just ONE bag and it was also about $4.19 lb for sirloin which is round, i guess, from the other end of the cow and a bit leaner than what you've got. I carved it up for various types of meals and froze it. It was a lot of work! but worth it when for when I've got the beef craving. I eat a lot of chicken.

Great video hands down and I will be doing this at my local Costco from now on. Costco doesn't ONLY carry prime though, they carry choice and prime, your selection in this video is choice as you can see on the label. Nothing wrong with that by any means! Unless I am doing nice standalone steaks I prefer choice. Often the marbling is negligible compared to prime.

Do you just cut those rolls up by slicing the whole thing or do you separate out the chuck eye steak, the chuck roast, and save some to grind up etc.? I'm not a butcher so wasn't sure how to cut them up... I can however take a knife and start at one end and slice lol
I just bought a single chuck roll at the business Costco in Ontario for $4.39/lb. Case price was the same. Select grade, not choice or prime. That's what they had. Next time I'll try my local Costco. Tasted fine when I cooked it. A little chewy but not much. I saw you pre-salt your steaks before putting them in the air fryer. Are they room temp or refrigerated?
I would definitely buy the whole beef box and eat that for my meals, but my wife wouldn’t be onboard. She enjoys her salads and veggies at times, and wonders why her joints are inflamed at times. I see often how a wife and husband are on the same page when it comes to their eating lifestyle; however, for some reason, my wife doesn’t like to join me in certain healthy endeavors.
I've seen chuck steaks at my grocery store but they are not tender at all. Those need to be pressure cooked or put into a slow cooker in order to be tender. Is this different? I haven't heard of a chuck roll before.
I get ground beef for between $0.99/lb and $2.99/lb at a local Japanese market. I have to go early in the morning and I can't get all the quantity I'd like but what I do get feeds me and my wife a lot of meals most weeks.
How does the asking for primal cuts or big boxes work? Do you have to get there when they open? Do you just knock on the window and say "hey i want ___"?
If you are on a budget get the whole cut not the precut ones. Itll take a little extra time to process it once you get home, but youll save more money. If you can afford to do it its honestly better to find a local butcher and get half a cow at a time, but thats not usually budget friendly
As a former meat cutter who used to cut those all the time, be careful on the bottom section where there's a membrane that separated the meat from the bone. It should be cutoff and discarded. Also, I've gotten them before with actual piece of bone on top. The top should be cutoff too. You can use the side chunks for stew meat. If you had a grinder you could make your own hamburg meat.

I have bought a chuck roast at the grocery store and cute it in half and cooked it like a ribeye and it was not tender. I had heard it tastes like ribeye so we were disappointed. Yours looks really good.
Chuck roast is different. Chuck eye steaks is the part that tastes like ribeye and you can cook like a steak. Chuck roast is the tougher part that you need to slow cook. A chuck roll, contains all of the chuck cuts that you break down. Thats why it didnt taste good.
Oh wow! That's a tremendous deal!! I watched a video tutorial about breaking down a chuck roll a while ago - I might have to dig that up and try this myself. Definitely consider treating yourself to a 'breaking knife'. I picked up a Victorinox 10 in breaking knife off of ebay (brand new) at a great discount and it makes SHORT work of a whole ribeye or strip loin too! I bet it would do great with a chuck roll too. I’m almost ready to just go for it, although for some reason I can only find the same meat for around 7-8 dollars a pound. Sam’s, Cosco, local butchers too.. You can also get them individually. You don’t have to get the box. I think I paid around $60 for a 17 lb roll, last time. You also get different cuts in a roll, one being a Denver steak, which is a beautiful cut of meat❤

It was just too much, off the shelf at our Costco a chuck roll was $11-13 a lb. So definitely going to inquire on the cost. I'd love to go back to even half steak and half ground. The steak satisfies much more than ground.

We just paid $1800 for a half beef (210lb of meat and 50lb of organs/fat) from a local rancher who finishes on local grain for 90 days on his ranch (no CAFO). Expensive! Might try this chuck roll from Costco. Shouldn't have told us! :)

So if you buy a case of meat from Costco, would they slice it the way you want it? For example, Karns near me, I can buy a whole pork loin for a good price, then they will slice it the way I want it. No extra charge.

I use to deliver a ton load of those exact boxes of beef from that exact brand "Swift". Those boxes are really heavy. They weigh between 50-80 lbs, sometimes more. If you decide to go this route and get meat from Costco and get multiple boxes, give the cart to the worker as long as it okay with them, so they're not walking back and forth carrying heavy boxes. The time I spent working for US Foods, i noticed a lot of restaurants share the same products from meats to produce and spices etc. Crazy to think the same exact brand of meat in this video can be an expensive steak at some fancy restaurant. Also, I believe and I'm not exactly sure, but if you have a us foods warehouse in your area, I believe you can also purchase bulk items without being a business owner of a restaurant. You just set up an account, place the order online and just pick it up. I would double check cause I could be wrong. I was just a truck driver but use to see a lot of people picking up stuff and loading it in their personal cars. Majority I'm sure are business owners picking up last minute stuff, there were so many of them, It had me thinking if they were opened to the public as well.

actually if they eat 3.5 lb/day that's only 34 days for 120 pounds and it's around $17 a day for the steak alone. I took calculus don't hate. Meanwhile my BEAN dinners are about 80 cents a week so tell that to the cattle association

Just FYI, brisket is normally around $3.49 per lb and often times it’s less than that as well. You can also find great deals at Aldi and Kroger. I’ve been able to find chuck at $1.99 recently.
Around Christmas time I’ve been able to score rib roasts (ribeye) for $4 per lb. Then you can cut steaks or use them as roasts as well. I usually pick up two full rib roasts and then cut and vac seal as steaks and smaller roasts.

We did a costco ribeye roll and the price was the exact same if we had purchased them already cut. The only benefit was we were able to cut them into the sizes that we wanted. We freeze it, so we like to cut some of them kind of thin so they don't take long to defrost or cook if we are in a hurry or really hungry.
Plus, cutting it yourself reduces the chances of contamination.
Yes,it's not cheaper other than my dogs get scraps to eat too.i just go to the commissary at ft Jackson. And buy what I need for a couple weeks .80/20 ground beef is always cheap there.
Different faces, different house~ EXACT same everything else, literally you guys! Same shopping in bulk, same butchering w/Dan taking out trash & recycle & feeling a little bad that I'm doing all the cutting/wrapping~ but not really, since we both prefer that I do tbh, it's all good=). Same week's worth in fridge, rotating out from freezer, etc.. also 90~95% of what we eat every day too, though I'm not always eating twice, Dan usually does. It's taken me almost 3 yrs to get my appetite up to where it is now, which is about 10~14 oz per day of meat, plus eggs & fat bites, same same. Too many years of grazing, thinking that was best for my health, but it shrunk my stomach & appetite. *Plus, I was in menopause when we started, so that was part of it too~but no meds, no HRT, no wacky symptoms either btw.
Sometimes we get sub primal whole NY or Ribeye & cut that up too, but chuck roll is where it's AT, in our opinion~so darn good! Hey, thx for sharing tip on sprinkling fat bits w/gelatin, will be trying that too. Believe it or not, I even have that exact same green canister of Vital Protein brand right now, but I bought it for $5 at our local discount store(Peoria Discount Grocery), so whatever brand is there. They buy pallets from Sprout's & other stores of expensive items they couldn't sell for ridiculous retail, so we swoop in & get lots of good stuff for super cheap~ I love that place!
Anyhow, I'm going on too long as usual~ always so good checking in w/you two. I truly love knowing how many of us are out here eating proper food & absolutely thriving, feeling our very best, AND.... enjoying our amazing lives!!

Oh, I like the way you operate!!! Thank you for taking the time and putting in the effort to create and share this video with us. I’m certain it has opened a lot of eyes to how they can save a great deal of money if they eat beef regularly.
I am in Canada and just checked the Costco website. The price is $16.49 per kg which makes a 30kg (66lb) case of chuck roll $494.70 for Canadian AAA Grade chuck roll. Because everything else is more expensive, this still represents significant savings to break it down yourself.
For people doing this on the regular, I would guess that a quality guided knife sharpening system would be a great benefit. I already have an EdgePro which will come in handy to buy beef this way.

I'm right with you this one only I sous vide my. I cut them up into big steaks and cook 20lb at a time. Cook them for 32 hours in the sous vide then I freeze some and save our what want to eat. You can sear them if you like or heat them up in the microwave even. I don't have to cook for like a week. I just take what I need out of the freezer when I need it. Chuck roll is the way to go. I only eat Chuck for beef can fish sardines, herring eggs and butter that's it. I've been doing this for over a year now and I'm not going back. Glad you found the Chuck rolls❤

You might want to check out to see if you have a Costco business in your area. You need a Costco business membership to get in though. The Costco business has a huge walk in fridge where these boxes are stacked for you to take. Not sure it might be cheaper there since its as direct as you can get to the whole box.

I was hoping you would show an easy way to cut up the roll into steaks as the other channels that show this are complicated and produce a lot of what they call "meat to grind into hamburger". They don't seem to get a lot of steaks out of their "rolls". Great channel!

I am on lion diet meat only...I eat costco organic 85% hamburger 3 meals a day. My total cost to eat is about $3 per meal. I do also eat organic ghee i make myself. Not doing this diet forever but it's helped a lot with chronic illness.

Hi Guys, I Love Costco and Sam’s. I live within a 10 mile radius of both and have the top tier membership for both. I love their chicken thighs and steak and salmon. That’s all I want and lots of salads and veggies. Sam’s here in Sarasota gets great strawberries and blueberries and broccoli florets and the salad in bulk is amazing. Great Air Fryer tricks!! Bone is small piece that was missed after Chuck was Separated from blade bone in processing plant. Get that on regular basis while cutting chucks in our market. 👍

I've tried desperately to get an air fryer (bought 4 of them) but I can't get past that plastic smell. It makes me sick. I've done all the tricks for the "burn off" but it's till there. I might have to give the nuwave another try because it doesn't smell for sure. Ugh!! It's so big though!!😩
Ive had several of them but they burn up too quick or something just seems to go haywire. I did love how they cooked though! Crispy all the way around. Get drip off at the bottom nice and juicy.

i own a farm estate in the UK and we always eat our own produce and encourage people to buy from the farm shops... you get better value for your money...
we do pork, beef, chicken, turkey, pheasant, duck and goat... then various dairy products, anyone wanting to stock up in bulk i advice to get a actual walk in freezer, cheaper than 3 to 4 chest freezers... even cheaper if you are on solar... also what i like to do is any tiny off cuts i quickly deep fry for snacking on... grand kids love it...

The last time I bought beef it was a big plastic bag like that from Smart and Final, but just ONE bag and it was also about $4.19 lb for sirloin which is round, i guess, from the other end of the cow and a bit leaner than what you've got. I carved it up for various types of meals and froze it. It was a lot of work! but worth it when for when I've got the beef craving. I eat a lot of chicken.

Great video hands down and I will be doing this at my local Costco from now on. Costco doesn't ONLY carry prime though, they carry choice and prime, your selection in this video is choice as you can see on the label. Nothing wrong with that by any means! Unless I am doing nice standalone steaks I prefer choice. Often the marbling is negligible compared to prime.
I just started on carnivore and was just thinking I need to go to my butcher to buy in bulk then my wife asked if I want anything from Cosco, I found this video and said YES I do lol. Do you just cut those rolls up by slicing the whole thing or do you separate out the chuck eye steak, the chuck roast, and save some to grind up etc.? I'm not a butcher so wasn't sure how to cut them up... I can however take a knife and start at one end and slice lol
We cut the whole chuck roll into individual steaks. Easy and fast.

I just bought a single chuck roll at the business Costco in Ontario for $4.39/lb. Case price was the same. Select grade, not choice or prime. That's what they had. Next time I'll try my local Costco. Tasted fine when I cooked it. A little chewy but not much.

I would definitely buy the whole beef box and eat that for my meals, but my wife wouldn’t be onboard. She enjoys her salads and veggies at times, and wonders why her joints are inflamed at times. I see often how a wife and husband are on the same page when it comes to their eating lifestyle; however, for some reason, my wife doesn’t like to join me in certain healthy endeavors.

I've seen chuck steaks at my grocery store but they are not tender at all. Those need to be pressure cooked or put into a slow cooker in order to be tender. Is this different?

I get ground beef for between $0.99/lb and $2.99/lb at a local Japanese market. I have to go early in the morning and I can't get all the quantity I'd like but what I do get feeds me and my wife a lot of meals most weeks.

How does the asking for primal cuts or big boxes work? Do you have to get there when they open? Do you just knock on the window and say "hey i want ___"?
If you are on a budget get the whole cut not the precut ones. Itll take a little extra time to process it once you get home, but youll save more money. If you can afford to do it its honestly better to find a local butcher and get half a cow at a time, but thats not usually budget friendly
As a former meat cutter who used to cut those all the time, be careful on the bottom section where there's a membrane that separated the meat from the bone. It should be cutoff and discarded. Also, I've gotten them before with actual piece of bone on top. The top should be cutoff too. You can use the side chunks for stew meat. If you had a grinder you could make your own hamburg meat.

I have bought a chuck roast at the grocery store and cute it in half and cooked it like a ribeye and it was not tender. I had heard it tastes like ribeye so we were disappointed. Yours looks really good.
It’s probably because it was a lower grade-choice, etc. The costco meat is prime so it is really marbled with a lot of fat.
Chuck roast is different. Chuck eye steaks is the part that tastes like ribeye and you can cook like a steak. Chuck roast is the tougher part that you need to slow cook. A chuck roll, contains all of the chuck cuts that you break down. Thats why it didnt taste good.
Oh wow! That's a tremendous deal!! I watched a video tutorial about breaking down a chuck roll a while ago - I might have to dig that up and try this myself. Definitely consider treating yourself to a 'breaking knife'. I picked up a Victorinox 10 in breaking knife off of ebay (brand new) at a great discount and it makes SHORT work of a whole ribeye or strip loin too! I bet it would do great with a chuck roll too. You can also get them individually. You don’t have to get the box. I think I paid around $60 for a 17 lb roll, last time. You also get different cuts in a roll, one being a Denver steak, which is a beautiful cut of meat❤

We just paid $1800 for a half beef (210lb of meat and 50lb of organs/fat) from a local rancher who finishes on local grain for 90 days on his ranch (no CAFO). Expensive! Might try this chuck roll from Costco. Shouldn't have told us! :)
