So you're probably sick of hearing from me but I think you might enjoy this morning's adventure. So my daughter wanted these for her work snack this week. I didn't have time to make them in advance so I got up at 5am. I usually watch the video first, but I've made enough of your recipes, I thought I could wing it. And so I'd already combined all the dry ingredients when the video got to the part about whipping the eggs and allulose first 😆. So I whipping them up with all dry ingredients then added pumpkin etc. To add to the issue I was short on time so just baked in 9x13 pan and added 10 minutes to the time. It came out soft and spongie and beautiful and she loves it without filling or crumble or anything. You have done it again, another genius recipe that I couldn't mess up no matter all the mistakes I made. 😆 sending more love and appreciation to you. 💞

Alisha you have done it again! This recipe was delicious. I baked it in an 8X8 pan because I was lazy, and my 19 year old son enjoyed them. He is so picky but he loved it! I have a little pumpkin left and I am going to use your peanut butter blossom cookie recipe (which is so good) and switch out the peanut butter for pumpkin and make a pumpkin drop cookie with cream cheese glaze.

ANOTHER hit! I made these muffins plain, and they were delicious even like that! They were soft, fluffy, and had a touch of sweetness. I'm adding her cream cheese frosting on the muffins for my family. Every recipe I've made from Alycia has been a winner-and no heavy, gritty almond flour!

These are amazing! I have never been a coconut flour fan, but I am trying to stay away from almond...saw this recipe and decided I would give it a try. They are cooling and my husband decided he wanted to try one...still a bit warm...he says to me...These are keto? lolol I tried a bite and they are fantastic! Even with coconut flour!

So I recently made these and was very happy with the airy texture and flavor, EXCEPT the crumble topping had a sandy texture. I don't think I would use it again. I did add some pecans and that helped, plus reading your note about pressing them into the batter. Also this recipe should come with a WARNING! I used no less than 3 mixing bowls, a stand mixer, a hand mixer, and various other utensils! Good thing I have a dishwasher! It also is not for the beginner baker as the recipe is so involved. The outcome was delicious however!

I just found your TH-cam a couple days ago. I really like it. Are used to do a lot of cooking and really enjoyed it, then I started aikido style or low carb way of eating and that kind of ruined it the whole cooking thing. 😂😂 Are used to love watching cooking shows. The problem with watching keto videos as most people aren’t really Cooks and are just making recipes they found. Some of that’s good but there’s a big difference in keto cooking videos and regular cooking videos. You actually know what you’re doing, you’re not just some person on keto who read a recipe and made some stuff. Do you understand the process and really really with your chef experience and training you’re able to get the right textures and balances. Honestly after doing keto for a few months and trying a lot of the cooking I’ve gotten to the point where I kind of know what works and doesn’t and most keto recipes I can tell her just gonna be pretty horrible without even trying them. I still try a lot of them because I could be wrong but they usually are pretty terrible. 😂😂 I haven’t tried any of your recipes yet because I’m in the middle of renovating my kitchen but sour cream coffee cake even without that I really like your videos because I learn and it’s kind of like when I used to watch normal cooking videos and learn things and those techniques will be helpful all the way around.

And I really miss watching cooking shows, I watched a bunch of Jacque and Julia when it was on Amazon Prime, brought me back to old times. I'm glad you are enjoying my videos even though you aren't able to make anything right now!!! It was kind of a goal of mine to create more of a teaching/cooking show. I show many different techniques and recipes that can be used in combination with other recipes and such. If you can make a ganache you can make truffles or a frosting or pour it over a cake etc. I hope none of my recipes are terrible but I've tested a lot to make sure they aren't lol. I made these last weekend. They are delicious. I only changed one thing and that was because I didn't want to have extra egg yolks. So, I used 2 less egg whites in the muffins. Next time I will probably half the streusel topping only to cut out some calories. I had lots of topping left after I thought I had enough on the muffins. I know, who can have too much topping. It wasn't too much but like I said, to cut down on the calories a bit I will probably half it next time. I will also add a little lemon juice to the cream cheese to add some tang. I have the huge containers of spreadable cream cheese from Costco ( I didn't realize it was the spreadable kind)and it might not be as strong as the packages. Thank you for the recipe. The muffins have the best texture of a keto muffin that I have had.

I always use parchment muffin cup liners, on Amazon or I find them at Target. They work great and I can send home my muffins for my grandkids and they have no trouble removing the paper liners.

These look fantastic and so yummy! Can you tell me if they have a heavy pumpkin flavor? Many bakery pumpkin rolls are so spicy they seem unpleasant to me. I would rather do just half of the allspice and replace the other half with cinnamon.
I'm not a huge pumpkin fan and i dont think so. And I don't use much allspice or nutmeg in my recipe because I don't like that spice flavor. I make my own pumpkin spice blend and leave out the nutmeg.

Thanks, there isn't oats in the crumble, I use certified gluten free oat fiber. It is just the fiber from the outside of the oat. That being said you can probably sub it out for Egg white protein powder. Just don't dump all the butter in at once, add a little at a time until you get a crumble consistency.
I made these on the weekend, and even my non-keto neighbor really enjoyed them, especially the crumble topping. My cheesecake layer was thinner than yours and basically oozed to the side when topped with the pumpkin batter. Your recipe has 1 tbsp. of vanilla, but you added 1 tsp. in your video so mine was thinner. How much cinnamon did you add to your crumble? I missed that because it wasn't listed in the recipe, but still turned out great. It's been a few days now, and still moist without getting a soggy crumble. BTW, congratulation!!!

Yeah they stay really well, I still have mine and they are still yummy! Thank you, I hope being preoccupied with wedding planning doesn't cause too many more typos for the next 4 months.

If that is all that is in the blend, it will make the muffin too wet and brown too much because it is mostly allulose. Allulose is great for certain applications but can't be the sole sweetener in baked goods.
I used to make pumpkin chocolate chip muffins every holiday season (pre-keto). Do you think these would work minus the cream cheese filling and subbing chocolate chips (keto)?

You know, crispy, buttery, flaky but sturdy, mildly sweet, but salty, goes well with sweet or savory accompaniments. I have tried a couple of the butter cracker recipes out there in TH-cam land but they are made with almond flour which is awful. I really don’t much care for almond flour baked goods. I have made a really successful cracker from Gayle McCloud’s recipe on TH-cam but it’s a cheesy and very crisp garlicky cracker, and I am pining for something closer to a ritz rather than a triscuit, if you know what I mean? You probably have a bunch of other tests you would rather do than this one, but I would be so grateful if you could come up with a recipe for Keto Ritz. I know it’s a big request for a girl with a sweet tooth, so I understand if you want to pass, just thought I’d ask.

I had luck in the past, using blueberries that I dehydrated first in a dehydrator, and dropping them on top of the batter instead of mixing in. But I can't remember the recipe, it was so long ago.

Also you may want to add egg white powder to your macaroons it helps stabilize your egg whites.
I have them turning out just not very consistent and the texture after a day gets strange on them either soft and mushy or hard and crumbly.

Thanks, there isn't oats in the crumble, I use certified gluten free oat fiber. It is just the fiber from the outside of the oat. That being said you can probably sub it out for Egg white protein powder. Just don't dump all the butter in at once, add a little at a time until you get a crumble consistency.
I think I might try this on a sheet pan like your cream cheese danish recipe... 🤤 I am craving muffins though. but I always fcuk them up 😬

I made these on the weekend, and even my non-keto neighbor really enjoyed them, especially the crumble topping. My cheesecake layer was thinner than yours and basically oozed to the side when topped with the pumpkin batter. Your recipe has 1 tbsp. of vanilla, but you added 1 tsp. in your video so mine was thinner. How much cinnamon did you add to your crumble? I missed that because it wasn't listed in the recipe, but still turned out great. It's been a few days now, and still moist without getting a soggy crumble. BTW, congratulation!!!
Awesome, so glad everyone enjoyed them!! I'm sorry about the typos, they are fixed, thank you for letting me know. It was a 1/2 tsp. ground cinnamon in the crumble. Yeah they stay really well, I still have mine and they are still yummy! Thank you, I hope being preoccupied with wedding planning doesn't cause too many more typos for the next 4 months.
@@KetoUpgrade I had a pumpkin cream cheese muffin left from last weekend, and they are STILL moist and tasty (put into ziplock bag and just left on the counter). Had last one this morning. They keep so well!

You 0robanly could do coconut flour or egg white protein. I just wanted a no carb crumble.
I am late to this recipe! I have a bag of monk fruit and allulose blend. Do you think I could use this?
If that is all that is in the blend, it will make the muffin too wet and brown too much because it is mostly allulose. Allulose is great for certain applications but can't be the sole sweetener in baked goods.

I have been searching unsuccessfully to find a great keto recipe to substitute for a ritz style cracker. You know, crispy, buttery, flaky but sturdy, mildly sweet, but salty, goes well with sweet or savory accompaniments. I have tried a couple of the butter cracker recipes out there in TH-cam land but they are made with almond flour which is awful. I really don’t much care for almond flour baked goods. I have made a really successful cracker from Gayle McCloud’s recipe on TH-cam but it’s a cheesy and very crisp garlicky cracker, and I am pining for something closer to a ritz rather than a triscuit, if you know what I mean? You probably have a bunch of other tests you would rather do than this one, but I would be so grateful if you could come up with a recipe for Keto Ritz. I know it’s a big request for a girl with a sweet tooth, so I understand if you want to pass, just thought I’d ask.

Not yet, I can't figure out how to make them super moist without the add ins all sinking to the bottom.
I had luck in the past, using blueberries that I dehydrated first in a dehydrator, and dropping them on top of the batter instead of mixing in. But I can't remember the recipe, it was so long ago.
