This is delicious! I was cautious about the erythritol cooling effect for the monk fruit, so I dropped the sweetener by about half. That was my only modification and it still worked out great.
So I have made 3 of these rolls so far. And on the third one I finally had a roll fail. But I was able to make it into a stacked cake and the pumpkin mouse made a great frosting and no one asked if it was a failed roll at Thanksgiving. I did think it was a little funny that people got a slice of each and thought they tasted different... I just chuckled inside a bit.

Fun recipe! I once made a pumpkin roll and rolled the cake while it was warm, then let it stay rolled while it cooled. Once it had cooled, I loosely unrolled it (it still had some curl left to it) and frosted it, and then rolled it up again. Do you think that this keto version would hold up to doing that? I’m still a bit unfamiliar with how well the different flours hold up after baking.
I tried that, it's the way you make a regular one. It doesn't work with this, when you unroll it cracks and breaks all apart. It is very different than regular baking which is why my videos are longer and the way I do it is usually the right and only way it will come out perfectly.
Do you think using the Pumpkin Bakery emulsion would work to lower carb count but still get the pumpkin taste in the filling? I also have Pumpkin Spice Caramel Keto Chow that I might try making a filling with. Thanks for this....sounds wonderful.
Hi Alycia, just found you and have enjoyed what i have seen (pizzelles most recently - now i need an iron!) Today I was looking for a nut free keto pumpkin roll for a friend's birthday who is allergic to tree nuts but not coconut and found this! Yes! I have coconut flour. But i dont have whey isolate. I have a beef gelatin/protein powder and i have egg white protein powder (i also have bamboo fiber). Could you recommend a work around/substitution for the flour in place of the whey isolate? Thank you in advance!
I've had some success with beef protein isolate in place of the whey but I had to alter the recipe further to make it come out. I had to up the coconut flour and minus the beef because it tasted bad. Whey is the biggest bulk of dry ingredients in all my recipes. So if you want to make any of my recipes they all have whey protein and there is no 1:1 substitute. Almost all my recipes are nut free also.

Thank you! I may have mentioned things about my career here or there but not in great detail as of yet. I did a culinary program in high school and fell in love with pastry. But when I got out of pastry school there were not many pastry jobs in Buffalo NY. So I did what I had to with cooking jobs and just moved my way up, learning at every job. It's a tough job not for the weak or meek, long hours, nights, weekends and holidays. There are a few exceptions but I've never worked at any mon-fri culinary job. I could probably go on forever, lol. I'd tell him to do some research, maybe go work as a dishwasher at a restaurant to see how they run and work, talk to people. Hope that helps some.
I am going to make this using my little silicon 7 in cake pans. and do the cream cheese option with extra cinnamon. My mom and her friend have a pumpkin roll(non keto) making party every year. I might crash it and see if this passes. Do you not need need cream of tarter for the whites? O and also my mom pre rolls her cake wrapped in a towel while they get the filling ready so the cake has a "memory" of rolling easily. This looks amazing though! Yay for a non chocolate cake option!

I know about pre rolling it in a towel and tried it on my first test but when I unrolled it, it completely broke apart 🙁 I think the lack of gluten doesn't allow our keto baked goods to be as pliable as a normal sponge cake. Coconut flour is specific to brand 15g on my bag of coconut flour is 2 tablespoons. I would say go by whatever your coconut flour says is 2 tablespoons.

Yeah I think that could work. Also any kind of keto pumpkin powder would probably work, MCT, Collagen, Protein etc.
